Orange Cake is so easy to make, we start with a box mix and use whole navel oranges to make it moist and amazing!

1 box vanilla cake mix
1 stick of butter (melted)
4 eggs
2 cups pureed whole navel oranges (about 2 medium oranges)
2 cans white icing
1 cup powdered sugar
1 cup powdered sugar
¼ cup pulp free orange juice
¼ teaspoon pure vanilla extract

Steps:

  • Combine cake mix, butter, eggs, and orange puree and combine with an electric mixer.
  • Pour into two greased 8 inch round baking pans and bake on center rack at 350F for about 30 minutes, until a toothpick comes out clean. Allow to cool completely.
  • For the icing, while cake is cooling, whisk together 1 can of icing and 1 cup of powdered sugar. Add to a piping bag.
  • For the glaze, in a small bowl add 1 cup of powdered sugar and vanilla extract. Then whisk in orange juice until you reach your desired consistency.
  • When cake is cooled, spread remaining can of icing between layers. Then pipe powdered sugar/icing mix on outside of cake. To pipe rosettes, start in the middle then move the tip in a counter-clockwise spiral around the center.
  • When the sides are covered, pipe a circle on the top of the cake, at the outermost edge, to keep the glaze from spilling over.
  • Pour glaze on top of cake, and garnish with a slice of orange.
  • Enjoy!

My cranberry orange cake is a celebration of bright seasonal flavors that's easy to make, moist, and so festive. It's great for gifting, snacking, and holiday mornings.

1 cup granulated sugar
zest of one orange, peeled in strips with a vegetable peeler (just the orange part, none of the bitter white pith)
1/2 cup unsalted butter, at room temperature
1 large egg
1 1/2 tsp vanilla extract
2 tsp baking powder
1 tsp salt
2 cups all purpose flour
1/2 cup buttermilk
2 cups cranberries
2 Tbsp sparkling sugar

Steps:

  • Preheat the oven to 350F and lightly spray a 9x9 inch baking pan. I like to line mine with a 2 sheets of parchment paper with long ends, so I can lift it out later for easy slicing.
  • First make the orange sugar. Put the sugar and orange zest in a food processor and process until the zest is completely incorporated. The sugar will be pale orange and moist.
  • Cream the orange sugar and butter together until light and fluffy, about 3 minutes. Scrape down the sides of the bowl as necessary. I use my stand mixer, but you can use electric beaters if you like.
  • Beat in the egg and vanilla, followed by the baking powder and salt, and keep scraping that bowl.
  • Lower your mixer speed and blend in 1/2 the flour, just until it's almost all blended, then add the buttermilk, and finally the rest of the flour. Just blend until the flour is incorporated, and then stop.
  • Gently fold in the cranberries, making sure to get them evenly distributed.
  • Spread the batter (it will be quite thick) evenly into your pan.
  • Sprinkle the sparkling sugar over the surface of the cake and then bake for about 40-45 minutes, or until risen, golden, and a toothpick inserted in the center comes out without wet batter on it. Try not to over bake the cake, and check on the early side, especially if your oven runs hot.
  • Let cool for 15-20 minutes in the pan, then, if you used parchment, you can remove the cake to cool completely, or slice while still slightly warm.
  • Store the leftover cake in the pan on the counter covered with foil.

Just found this recipe in my old recipe file. Grandma use to make this simple recipe to serve with tea in the afternoon. Only things on the old yellowed page are the ingredients, no directions, so I'm taking some liberty here. Think of it as an adventure . . . this is how our grandmothers use to cook!

1 cup sugar
1/2 cup butter (softened)
2 eggs
1 cup sour milk
2 cups flour
1 teaspoon baking soda
1 cup raisins
1 orange (cleaned, quartered and seeded)
1/4 cup orange juice
1/2 cup sugar

Steps:

  • Preheat oven to 350.
  • Grease and flour 8" square pan.
  • Sift together flour and baking soda (set aside).
  • In food processor grind orange and raisins (her recipe says grind the orange and raisins).
  • In separate bowl cream butter and sugar.
  • Beat in eggs.
  • Stir in Sour Milk.
  • Add orange/raisin mixture.
  • Stir in flour mixture.
  • (Depending on the amount of juice in the orange you may have to adjust the flour slightly to get the right batter consistency).
  • Pour into pan and bake for 30 minutes or until done (suggest checking after 25 minutes as grandma did not specify boking time).
  • While cake bakes dissolve 1/4 cup orange juice with 1/2 cup sugar (either on stove or in microwave).
  • Pour juice mixture over cake while hot (you may want to poke small holes in the cake).

Solid vegetable shortening and flour for greasing the pan
1 cup (2 sticks) unsalted butter, at room temperature
1 1/2 cups granulated sugar
4 large eggs, separated
1 large orange
Up to 1 cup carton orange juice
3 cups sifted The Old Mill Self-Rising Flour
1 cup confectioners' sugar, sifted
2 tablespoons orange juice
1/2 teaspoon reserved orange zest

Steps:

  • Place a rack in the center of the oven, and preheat the oven to 350 degrees F. Grease and flour a 10-inch tube pan with solid vegetable shortening and flour, and set aside.
  • Place the butter in a large bowl and beat with an electric mixer on low speed until soft. While the mixer is running, gradually add the sugar, and beat until the mixture is creamy, 1 to 2 minutes. Turn off the mixer and separate the eggs. Set aside the egg whites.
  • Add the egg yolks to the butter and sugar mixture, one at a time, and beat on medium-low until well combined before adding the next yolk. Scrape down the sides of the bowl with a rubber spatula. Set aside.
  • Zest the orange, and add 1 teaspoon of the zest to the butter and sugar mixture. Reserve 1/2 teaspoon or more zest for the glaze. Cut the orange in half, and juice the orange into a measuring cup. Add enough more carton orange juice to measure 1 cup. Alternatively add the sifted flour and orange juice to the mixing bowl, beating on low speed until combined and smooth, 1 minute. Set aside.
  • With clean beaters, beat the egg whites on high speed with an electric mixer until stiff peaks form, 2 to 3 minutes. Turn the beaten whites on top of the batter, and with the rubber spatula, fold the whites into the batter until the batter is smooth. Turn the batter into the prepared pan, and place the pan in the oven.
  • Bake until the top of the cake springs back when lightly pressed, about 38 to 42 minutes. Remove the pan from the oven, and place the pan on a wire rack to cool 15 minutes.
  • Meanwhile, prepare the glaze. Place the sifted confectioners' sugar in a small bowl. Whisk in the orange juice and zest until smooth. Set aside.
  • Run a knife around the edges of the cake pan. Give the pan a good shake to loosen it, then invert it once and then again so that it rests right-side up on the rack. Poke holes in the top of the cake with a long wooden skewer or chopstick. Carefully spoon the glaze over the top of the cake, letting it soak into the cake before adding more. Let the cake rest 1 hour, then slice and serve.
  • Want to Bake an Orange Layer Cake? Pour the batter into two 9-inch round cake pans, and bake at 350 degrees for 30 to 35 minutes. Frost with your favorite buttercream frosting.

1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
1 cup white sugar
⅓ cup orange juice
2 eggs
1 cup buttermilk
2 tablespoons cranberry-flavored liqueur
¾ cup vegetable oil
1 cup chopped dates
1 cup fresh cranberries
2 tablespoons grated orange zest
1 cup orange juice
¾ cup white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. Sift together the flour, baking soda, baking powder and salt; set aside.
  • In a large bowl, mix together 1 cup of white sugar, 1/3 cup of orange juice, eggs, buttermilk, cranberry liqueur, and vegetable oil using an electric mixer. Add the dry ingredients and mix just until moistened. Fold in the chopped dates, cranberries and orange zest. Pour the batter into the prepared pan and spread evenly.
  • Bake for 1 hour in the preheated oven, or until a knife inserted into the crown of the cake comes out clean. Let the cake cool in the pan set over a wire rack for 15 to 20 minutes.
  • Remove the cake from the pan and place on a serving plate. In a small saucepan, stir together 1 cup of orange juice and 3/4 cup of white sugar. Bring to a boil, stirring until the sugar has dissolved. Use a turkey baster or large spoon to drizzle the sauce over the cake. Poke the cake with a fork or skewer to help it absorb all of the sauce, or until the cake is thoroughly moistened.

Moist cinnamon cake enfolding sliced fresh apples makes a delicious dessert or wholesome snack cake. This recipe came from my mother, Ann. I have cut the sugar down to 1 cup, as most modern apples are sweet enough to not need the original 2 cups called for. I like to replace 1 cup of all purpose flour with 1 cup whole wheat flour.

4 cups sliced apples
2 cups all purpose flour
1 1/2 teaspoons baking soda

Steps:

  • Sprinkle sugar over apples in your largest mixing bowl. Sift dry ingredients together twice, then add to apples. Add remaining ingredients, and stir until well mixed. Batter will be very thick.
  • Spread into a greased 9" X 13" cake pan or pyrex dish.
  • Bake at 350 degrees F for 30 to 45 minutes, until cake springs bakc when touched lightly, and apples are tender when pierced with a skewer.
  • Cool and serve. Cover leftovers tightly with foil to retain moisture.

  • Make the cake: Position a rack in the center of the oven and preheat to 325ºF. Into a medium bowl, sift together the flour, sugar, baking powder, and salt and set aside.
