1 1/2 cups loose-pack frozen hash brown potatoes, thawed (or frozen country-style hash brown potatoes with skin, thawed)
1 cup sliced fresh mushrooms
1/2 cup shredded carrot
1/2 cup shredded zucchini
1/4 cup chopped onion
4 eggs (or 1 cup refrigerated egg product such as Egg Beaters)
1/4 cup nonfat milk
1 (12 inch) Boboli pizza crusts
1/2 cup shredded mozzarella cheese
1/2 cup chopped tomato

Steps:

  • Spray a large skillet with cooking spray; preheat skillet over medium heat.
  • Add in potatoes, mushrooms, carrot, zucchini, and onion (season with salt and pepper); cook/stir 3 minutes or until vegetables are tender.
  • In a bowl, stir together eggs and milk; pour over vegetables.
  • Cook, without stirring, until the mixture begins to set on the bottom and around the edge.
  • Using a spatula or large spoon, lift and fold the partially cooked egg mixture so the uncooked portion flows underneath.
  • Continue cooking and folding about 4 minutes or until egg mixture is cooked through but sill glossy and moist; remove from heat.
  • Assemble pizza: place pizza crust on a 12-inch pizza pan; sprinkle with half of the cheese; top with egg mixture, tomato, and remaining cheese.
  • Bake in a preheated 375° oven for 8-10 minutes or until cheese is melted.

2 1/2 cups flour (I'm using bread flour but you could use all-purpose)
1 tablespoon kosher salt
1 teaspoon instant yeast or 1/2 ounce fresh yeast
Extra-virgin olive oil, for the baking sheets
One 28-ounce can crushed tomatoes (San Marzano if possible)
6 tablespoons extra-virgin olive oil
10 leaves fresh basil
3 cloves garlic
Kosher salt
12 ounces mozzarella (fresh if possible), sliced or shredded
Cracked black pepper
Chile flakes, for sprinkling, optional
Grated Parmesan, for sprinkling
12 leaves fresh basil

Steps:

  • For the dough: Combine the flour, salt and yeast in the bowl of a stand mixer fitted with a dough hook attachment. Stir to combine, then add 1 cup water. Mix on low speed until the dough comes together into a rough ball. Continue mixing at medium-low speed until the dough forms a smooth, silky ball, about 10 minutes. Form the dough into a tight ball, set in the bottom of the mixer bowl, cover tightly with plastic wrap and set aside in a warm place until the dough has roughly doubled in size, about an hour.
  • Position an oven rack in the center of the oven and preheat to 450 degrees F.
  • Cut the dough in half; you should have enough for two 9-by-13-inch baking sheets. You can make both pizzas now, or hold the dough in the refrigerator for up to 3 days.
  • Lightly oil one or two 9-by-13-inch baking sheets. Add the dough and press down on it to spread it toward the edges. You won't be able to get it all the way to the edges, so spread it as much as you can without tearing. If the dough isn't stretching well, cover and let rest at room temperature for 30 minutes, then stretch again.
  • For the sauce: Put the tomatoes, olive oil, basil, garlic and some salt in a blender and puree until smooth.
  • For the topping: Spread the sauce all the way to the corners of the dough. Top the sauce with the mozzarella and sprinkle with black pepper and chile flakes if using. Bake until the dough is crisp and the cheese is melted, 10 to 12 minutes. Top with the basil and some Parmesan and serve.

1 medium russet potato, peeled
3 cups bread flour
3 ½ teaspoons dark brown sugar
2 teaspoons kosher salt
1 (.25 ounce) package rapid-rise yeast
½ cup extra-virgin olive oil, divided
1 ⅓ cups water
1 serving olive oil cooking spray
¼ cup extra-virgin olive oil
6 medium garlic, crushed
1 (28 ounce) can whole peeled San Marzano tomatoes
2 tablespoons tomato paste
2 tablespoons onion powder
2 teaspoons dried oregano
½ teaspoon red pepper flakes
1 tablespoon white sugar
4 sprigs fresh basil
1 pinch kosher salt and cracked black pepper to taste
10 ounces grated Parmigiano-Reggiano cheese, divided
2 cups shredded mozzarella cheese

Steps:

  • Place potato into a large pot and cover with cold water; bring to a boil. Reduce heat to medium-low and simmer until soft, about 20 minutes. Drain. Mash the potato and let cool to room temperature, 15 to 20 minutes.
  • Combine flour, brown sugar, salt, yeast, and 2 tablespoons oil in the bowl of an electric stand mixer. Add water and mix on low speed until it comes together and no dry flour remains. Add the potato and increase speed to medium until dough is stretchy.
  • Coat the bottom of a square, lipped baking sheet with the rest of the oil. Place the dough on the baking sheet and spread it out, edge to edge. Use cooking spray to coat plastic wrap. Cover the dough and let rest at room temperature for 2 hours.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Heat 1/4 cup olive oil in a cold, 8-inch skillet over medium heat. Add garlic and cook for 2 to 3 minutes. Reduce heat to low and flip the garlic until is lightly browned. Add tomatoes, tomato paste, onion powder, oregano, and red pepper flakes and combine for about 2 minutes; add sugar and cook for 2 minutes. Stir in basil. Season sauce with salt and pepper.
  • Remove the plastic wrap and adjust the pizza dough if necessary, ensuring it fills the pan from corner to corner. Spread 1 cup of sauce over the crust using a spoon, leaving a 1-inch border. Coat the top with 1/2 of the Parmigiano-Reggiano cheese.
  • Bake in the preheated oven for 5 minutes. Remove from the oven and add mozzarella cheese evenly over the entire pizza. Add more tomato sauce randomly over the pizza and add remaining Parmigiano-Reggiano cheese. Return to the oven and bake until crust is well browned and cheese is melted and lightly browned in spots, about 10 minutes. Cool at room temperature for 5 minutes before cutting.

1 c or more of flour

Steps:

  • 1. Pre-heat oil in frying pan, enough to have 1 inch of oil for frying.
  • 2. Drop dough by tablespoons into hot oil, fry until brown, turn and fry on the other side.
  • 3. Serve with maple syrup or honey.

12 ounces turkey sausage
1 cup frozen hash brown potatoes, thawed
1 cup shredded cheese
1/4 cup nonfat milk
1/2 teaspoon salt
1/8 teaspoon pepper
8 ounces egg substitute
2 tablespoons fresh grated parmesan cheese

Steps:

  • Preheat oven to 375 degrees.
  • Separate dough and press to form a round crust on a 12" pizza pan.
  • Crimp edges with fingers to form a rim.
  • Cook sausage in skillet over medium heat until borwn; crubmle and drain.
  • Top prepared dough with sausage, potates and cheese.
  • Combine milk, salt, pepper andegg substitute, stirring iwth a whisk.
  • Pour over sausage; sprinkle with Parmesan cheese.
  • Bake 25 minute or until crust is brown.

1/4 cup sliced mushrooms
1 pizza crust, prebaked 6-inch
1/2 cup bell pepper, red and green, sliced

Steps:

  • Place pizza shell on medium-heat flat grill or grooved grill for 3 minutes on each side.
  • Sauté sausage and mushroom together. Remove from pan and keep warm.
  • While pizza shell is heating, place peppers in pan and cook for 1 minute. Add eggs and scramble together. Cook until eggs are almost set.
  • Arrange cooked egg/pepper mixture on pizza shell; garnish with mushrooms and sausage. Sprinkle with cheese and place under broiler for 1 minute.

2 1/4 cups warm water (110 degrees)
1 1/2 teaspoons active dry yeast (not rapid-rise)
6 cups unbleached all-purpose flour, plus more for dusting
1 tablespoon plus 1 1/2 teaspoons kosher salt
2 tablespoons sugar
3 tablespoons extra-virgin olive oil, plus more for bowl

Steps:

  • Combine water and yeast in a bowl; let stand until foamy, about 5 minutes. Add flour, salt, sugar, and oil, stirring until a ragged dough forms. Transfer to a lightly floured work surface and knead with floured hands until elastic and tacky but no longer sticky, about 5 minutes. Transfer to a medium bowl brushed with oil, turning dough to evenly coat. Cover with plastic wrap and let stand in a warm, draft-free place until doubled in volume, 1 1/2 to 2 1/2 hours; or refrigerate until doubled in volume, at least 12 hours and up to 3 days (return to room temperature before using, 1 to 2 hours).

I used to make this when I worked for a gas station/pizza place so I could sell it by the slice to the early morning rush. I would end up selling more for breakfast than lunch at times!

pizza dough
2 -3 eggs (depending on your taste)
1/4 cup milk
6 ounces shredded yellow cheddar cheese
6 ounces shredded mozzarella cheese
3 ounces deli ham, sliced into 2 inch strips
3 ounces cooked bacon, crumbled
5 breakfast sausage links, chunked
1/4 minced onion (optional)
chopped chives (for garnish)

Steps:

  • This recipe is a lot quicker if you precook your Bacon and Sausage the night before and store them in your refrigerator as I do -- the prep time will be based on this.
  • Preheat your oven to 400°F
  • For the Pizza Dough, if you can find it frozen, uncooked, and preshaped. it's a huge time saver. If not, just prepare it as you would normally on a large pizza pan (I make the crust about 1/4 thick). Excluding the 1 1/2 of the outer crust, make little indentations with your fingertips in the dough. This helps the egg settle and cook more evenly.
  • Beat the eggs with the milk, and pour over the center of the crust. Use your fingers, or a pastry brush to evenly disperse the egg.
  • Evenly cover the egg with the strips of ham.
  • Scatter the sausages, and if you want to have them, add the onion. Salt and pepper it lightly.
  • Add a blanket of the Mozzarella cheese, then the Cheddar.
  • Sprinkle the crumbled bacon.
  • Put this wonderful pie in the oven on the center rack and check it after 15 minutes. It's hard for me to give an approximate cooking time as I used a ride through oven for 7 minutes at 475°F at my work. If it looks done, then it is. The egg layer is thin enough to cook in 10 minutes or so, so it's really just about the crust and how you like it.
  • Once you've deemed it to be done, take it out of your oven and garnish it with some chopped chives. Slice, and enjoy! It's great on the go, and is wonderful hot or cold. I'm hoping this recipe will make your household as happy as it made my customers :).
