GRANDMA'S CHOCOLATE DROP COOKIES
Calling all chocolate lovers and novice bakers: This one's for you. These chocolate drop cookies are straight from grandma's recipe box, but they definitely don't require her wealth of baking expertise to make yourself. Drop cookies, made from soft dough and dropped onto a baking sheet in balls, are a simple, old-fashioned treat that are prime for personalization. If you like nuts, add them in. Prefer mint chocolate chips to semi-sweet chips? Feel free to substitute. No matter what you add, you're sure to end up with a soft, cake-like cookie that packs on the chocolate flavor. Plus, once you pile on the chocolate icing, it's nearly impossible to have just one.To drop the cookies on your baking sheet, try using a tablespoon cookie scoop. Not only will it help keep your fingers clean, but it will also make sure your cookies come out even.

- Make the Cookies: Mix shortening, sugar, and egg thoroughly. Stir in buttermilk and vanilla. Sift in dry ingredients and stir. Stir in chocolate chips and nuts if desired. Drop cookies onto prepared baking sheets using a tablespoon cookie scoop. Space cookies 2 inches apart. Bake for 8-10 minutes at 375°.
- Make the Frosting: Cream together cream cheese and butter. Add vanilla and cocoa. Beat until smooth. Add powdered sugar, and mix until smooth. Add milk, adding more if needed for desired consistency. Spread frosting over cookies once completely cooled.
GRANDMA'S CHOCOLATE DROP COOKIES

- Preheat oven to 350 degrees F. Lightly grease a cookie sheet; set aside. In a small microwave-safe bowl, combine shortening and chocolate. Microwave on 100 percent power (high) for 30 to 60 seconds or until shortening is just melted and chocolate is softened; stir until smooth. Set aside.
- In a large bowl, beat egg and brown sugar with an electric mixer on medium speed until light and fluffy. Add vanilla and melted chocolate mixture; beat well.
- In a medium bowl, stir together flour, baking soda, and salt. Alternately beat flour mixture and milk into chocolate mixture just until combined. If desired, stir in nuts. Drop dough by rounded teaspoons 2 inches apart on prepared cookie sheet. Bake in the preheated oven about 10 minutes or until edges are firm. Transfer cookies to a wire rack; let cool.
- If desired, spread about 1 tablespoon Creamy Filling on the flat sides of half of the cookies. Top with the remaining cookies, flat sides down. Makes 44 cookies or 22 sandwich cookies. Creamy Filling
- In a medium bowl, combine shortening, granulated sugar, milk, water, vanilla, and salt. Beat with an electric mixer on medium speed for 5 to 7 minutes or until light and fluffy. Add powdered sugar and beat for 5 minutes, scraping bowl occasionally. Makes about 1 1/2 cups. You can also frost these cookies with purchased or homemade vanilla or chocolate frosting. Or for ice cream sandwiches, use softened ice cream in place of the Creamy Filling, individually wrap sandwiches with plastic wrap, and freeze for 2 hours or until firm. Layer filled or unfilled cookies between sheets of waxed paper in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months. To serve, thaw cookies if frozen. If desired, prepare filling as directed and assemble sandwich cookies as directed in Step 4.

Steps:
- Preheat the oven to 400°F.
- First, mix the following together thoroughly in a blender: shortening, eggs, sugar and molasses.
- ** I find its easier to measure the molasses when hot, so I stick the bottle in the microwave for a few seconds, and heat up my metal measuring spoon on the stove (careful).
- Second, in a separate bowl, sift together the following: flour, soda, salt and cinnammon.
- After these are sifted, slowly add them to the mixer with the ingredients from the first step.
- Mix until fairly smooth, no lumps.
- Fold in the oats and raisins.
- This is pretty tough on the mixer, so unless you have a good one, you may want to do this by hand.
- To bake, drop rounded teaspoonfuls (or whatever size cookies you want) on a lightly greased baking sheet, approx 2" apart.
- I like to press the center of the cookie down a bit, so it cooks evenly.
- Cook for approximately 8 minutes.
- Notes: The cookies should be very soft, and even look un-cooked when you take them out of the oven.
- -Don't worry, let them cool, and you'll be rewarded with an amazing, chewy, tasty cookie.
- -Of course, if you prefer hard cookies, cook approx 2 minutes longer, but I recommend the chewy version.

- In the bowl of an electric mixer fitted with the paddle attachment, beat sugar and butter on medium speed until mixture is light and fluffy, about 2 minutes.
