This recipe has been in my family for years. Served with creamed peas and boiled new (red) potatoes, it makes a yummy meal even the kids love!

1 (14.75 ounce) can salmon, drained and flaked
1 ½ cups crushed saltine crackers
1 egg, slightly beaten
½ cup diced green bell pepper
½ cup diced onion
¼ cup milk
½ teaspoon Worcestershire sauce
1 dash hot pepper sauce
black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
  • In a large bowl, stir together salmon, crackers, egg, bell pepper, and onion. Mix in milk, Worcestershire sauce, and hot pepper. Season with black pepper. Mix well with your hands, and spread into baking dish.
  • Bake in a preheated oven until the top is golden brown and a toothpick inserted into the center comes out clean, about 45 minutes. Cut into squares to serve.

Steps:

  • In large bowl, remove bones form salmon and mash (including juice with fork. Crush crackers to fine crumbs; add to salmon. Mix well. In bowl, beat eggs; mix in milk, butter, dill, hot pepper sauce and pepper to taste. Blend into salmon mixture. Transfer to greased and wax paper lined loaf pan. Bake in 350℉ (180℃) oven for 30 to 35 min or until centre is firm to touch. Let cool for 5 min. Loosen edges with knife, invert onto serving platter. Garnish with lemon.

2 large eggs (beaten)
1/2 cup light cream (or evaporated milk)

Steps:

  • Gather all the ingredients.
  • Grease an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan . Preheat the oven to 350 F.
  • Flake the salmon and combine it with breadcrumbs in a medium-sized bowl.
  • In a separate small bowl, whisk the eggs with cream (or milk) and melted butter .

1 can (14-3/4 ounces) salmon, drained, bones and skin removed
1 small onion, finely chopped
1/2 cup soft bread crumbs
1/4 cup butter, melted
3 large eggs, separated
2 teaspoons lemon juice
1 teaspoon minced fresh parsley
1/2 teaspoon salt
1/8 teaspoon pepper
OLIVE CREAM SAUCE:
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/2 cups whole milk
1/4 cup chopped pimiento-stuffed olives

Steps:

  • In a large bowl, combine the salmon, onion, bread crumbs and butter. Stir in the egg yolks, lemon juice, parsley, salt and pepper. , In a small bowl, beat the egg whites on high speed until stiff peaks form. Fold into salmon mixture. , Transfer to a greased 8x4-in. loaf pan. Place in a larger baking pan. Add 1 in. of hot water to larger pan. Bake at 350° until a knife inserted in the center comes out clean, 40-45 minutes. Let stand for 10 minutes before slicing., Meanwhile, in a small saucepan, melt the butter. Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

2 salmon fillets (about 8 to 10 ounces each)
Kosher salt and freshly ground black pepper
1/3 cup orange marmalade
1-inch piece fresh ginger, grated (see Cook's Note)
3 tablespoons soy sauce
2 tablespoons olive oil
Juice of 1 orange (about 1/3 cup)

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
  • Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon. Bake until the salmon is cooked through, 10 to 15 minutes. If you like, turn the oven to broil for the last 3 or so minutes of cooking to brown the top of the fillets.
  • Serve the salmon immediately or cool and refrigerate to use in salads or sandwiches.

1 can(s) (1 pound) red salmon
1 c cracker crumbs or ritz cracker crumbs or bread crumbs
2 eggs, slightly beaten
1/2 c chopped onion, sauteed
1/2 tsp mustard
salt and pepper to taste
1/4 c chopped green pepper (optional)
1 can(s) (10 ounce) cream of celery or cream of mushroom soup

Steps:

  • 1. Drain salmon; save 1/4 cup liquid. Remove skin and bones from salmon, flake.
  • 2. Thoroughly mix salmon with salmon liquid and other ingredients; pack into a greased loaf pan.(9X5X3) Mixture is soft before baking.
  • 3. Bake at 375 degrees for 1 hour or until browned. Cool loaf in pan for 10 minutes; loosen sides of pan and turn out on platter.

1 tall can of salmon or 2 small cans
3 Tablespoon butter (melted)
3 eggs (beaten)
soda crackers (enough to make 1 cup of crushed cracker crumbs)
1 cup milk
Salt and pepper to taste

Steps:

  • Pre-heat the oven to 350° F.
  • Add the soda crackers to the ziploc bag.
  • Use the rolling pin to crush the soda crackers to make crumbs.
  • Remove any skin from the salmon.
  • Mix the salmon and all of the other ingredients in the mixing bowl.
  • Pack the mixture into a buttered loaf tin.
  • Bake for 30 minutes, or until the loaf is set.

1/2 c milk or cream
1/2 tsp salt
dash(es) pepper
1 c bread crumbs
3 Tbsp butter or margarine, melted

1/4 c onion, chopped
1/4 tsp dill, dried

Steps:

  • 1. Combine all ingredients, using 1/2 of the bread crumbs. Shape into a loaf in a buttered loaf pan. Sprinkle with remaining bread crumbs. If your family doesn't like dill , it can be eliminated.

1 14.5 oz . can salmon (Or fresh salmon...see blog post instructions)
1/2 onion finely chopped
1 large celery rib (, finely chopped)
2 tbsp butter
25 saltine crackers (, (1 cup crumbs))
1/4 cup half and half (Substitute whole milk)
2 eggs
1 tbsp lemon juice
2 tsp dried dill weed
2 tsp worcestershire sauce
2 tsp sriracha sauce
2 tsp anchovy paste (, optional but it adds a lot of umami to enhance the flavor)
1/2 tsp salt
1/2 tsp pepper
Crisco or cooking spray

Steps:

  • Preheat oven to 350°.
  • Open the salmon can, pour the liquid into a small bowl and place the salmon onto a large plate. Separate the salmon to locate the larger backbone pieces and larger bones. Remove them along with the dark colored skin on the salmon.
  • Place the salmon into a large mixing bowl. Use a pastry cutter or fork to break up the salmon into very small pieces.
  • Crumble the saltine crackers by hand or in a food processor or in a gallon ziplock bag using a rolling pin and place in the small bowl with the juice from the canned salmon and add the half and half to fully soak the crumbs.
  • Saute the onion and celery in a skillet with the butter until slightly softened 3 minutes and add to the salmon.
  • Add the soaked cracker crumbs to the salmon and toss with a spoon or spatula until combined well.
  • Crack the eggs into the small bowl you used for the crumbs and beat together with a fork and add to the salmon mixture.
  • Add the remaining ingredients and mix well.
  • Grease a 4" by 8" loaf pan with Crisco, (recommended), or spray well with cooking oil.
  • Add1/3 of the salmon into the pan and pack it well into the corners
  • Add the remaining salmon and pack it well.
  • Place in the oven for 45 mins and the internal temperature is 160°F.
  • Remove from the oven, rest for 5 minutes, then turn over onto a serving platter.
  • Serve with dill white sauce.

This recipe focuses on that, using lots of lemon zest to enhance the fresh flavor of salmon. Served on grilled pita brushed with garlic butter and topped with a crunchy Asian-inspired broccoli and carrot slaw, I hope it becomes one your favorite fish sandwiches.

2 tablespoons vegetable oil
2 teaspoons lemon zest (about 4 lemons)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 pounds center-cut skinless salmon fillet, cut into 1 1/2-inch cubes
1/3 cup mayonnaise
2 tablespoons orange juice
1 tablespoon unseasoned rice vinegar
1 tablespoon gochujang
2 teaspoons toasted sesame oil
1 teaspoon kosher salt
1 1/2 cups julienned carrots (from about 1 large carrot)
1 1/2 cups thinly sliced broccoli florets (from about 5 ounces)
3 scallions, thinly sliced on the bias
1 tablespoon toasted sesame seeds
4 tablespoons unsalted butter
2 garlic cloves, grated or minced
4 to 6 pitas
1 lemon, cut into wedges, for serving

Steps:

  • For the salmon: Combine the oil, lemon zest, salt and pepper in a large bowl. Add the salmon cubes and toss to coat. Marinate at room temperature for 15 to 20 minutes.
  • To make the slaw: Whisk the mayonnaise, orange juice, vinegar, gochujang, sesame oil and salt together in a medium bowl. Add the carrots, broccoli, scallions and sesame seeds and toss to combine. Set aside while you grill the salmon, or refrigerate the slaw for up to 3 hours before serving.
  • Preheat a grill pan over medium heat. Divide the salmon between 4 to 6 metal skewers (or wooden skewers soaked in water for 1 hour). Place the skewers on the pan and grill, turning to get grill marks on all four sides, until the salmon is cooked to the desired doneness, about 6 minutes for medium-rare salmon. Transfer to a plate and let rest a few minutes.
  • For the pitas: Place the butter and garlic in a small microwave-safe bowl and microwave until the butter is melted and the garlic becomes very fragrant, about 30 seconds. Brush the pitas with the garlic butter and place on the grill pan until lightly toasted and warmed through, about 1 minute per side.
  • Place a pita on a plate, top with the broccoli slaw and then the grilled salmon from 1 skewer. Serve immediately with lemon wedges.

Set aside. Combine salmon, sautéed vegetables, eggs, bulgur wheat, cheese and thyme. Pour mixture into an 8″ x 4 1/2″ x 2 1/2″ loaf pan. Bake for 40 minutes. Remove from oven and cool 10 minutes. Turn onto serving plate and serve with the sour cream dill sauce. Garnish with parsley and lemon as desired.
