Homemade Grand Marnier image

From Classic Liqueurs, by Cheryl Long and Heather Kibbey: Grand Orange-Cognac Liqueur. I modified it to make it a little more chef friendly.

1/3 cup orange zest
1/2 cup granulated sugar
2 cups cognac or 2 cups brandy
1/2 teaspoon glycerine, for texture (optional)

Steps:

  • Place zest and sugar in a small bowl. Mash together with the back of a wooden spoon or a muddle. Continue until sugar is absorbed into zest.
  • Place in a container with a tight seal, preferably glass. Add cognac, stir and seal.
  • Allow to age in a cool, dark place 2 to 3 months. Shake monthly.
  • After initial aging, strain and filter. Stir with a wooden spoon to combine. Cap and age 3 months more before serving.
  • Note: Seville oranges produce the authentic taste but any type of orange peel/zest may be used with good results.

3 large eggs, separated
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup sour cream
1 tablespoon orange zest, from 1 orange
1/2 cup chopped pecans
1/4 cup orange juice
1/3 cup Grand Marnier liqueur, or orange juice
1 cup pecan halves

Steps:

  • Gather the ingredients.
  • Cream butter with 1 cup of the sugar until light and fluffy.
  • Beat in egg yolks.
  • Sift together the dry ingredients; add to the first mixture alternately with sour cream, beating until smooth.
  • Stir in orange zest and chopped pecans.
  • Beat egg whites until stiff; fold into batter.
  • Pour batter into a buttered 9-inch tube pan and bake at 350 F for 45 to 50 minutes.
  • Combine remaining 1/2 cup sugar with orange juice and Grand Marnier; pour over hot cake.
  • Decorate top with pecan halves. Cool on rack before removing from pan.
  • Enjoy.

5 eggs
10 ounces semi-sweet chocolate baking squares or 10 ounces bittersweet chocolate squares, cut up
2 ounces unsweetened chocolate squares, cut up
8 ounces butter
1/4 cup Grand Marnier or 1/4 cup other orange-flavored liqueur
2 (12 ounce) bags frozen unsweetened raspberries, thawed
3/4 cup powdered sugar
2 tablespoons raspberry liqueur or 2 tablespoons other your favorite liqueur, of your choice
whipped cream, to garnish

Steps:

  • Preheat oven to 400 degrees.
  • Butter the bottom of an 8-inch springform pan and line it with wax paper; set aside.
  • In a small bowl, cover uncracked eggs with very hot water (not boiling); let stand 5 minutes.
  • Meanwhile, in a 2-quart glass bowl, heat semisweet and unsweetened chocolate and butter in a microwave on high 2 1/2 to 3 minutes, stirring twice, until melted and smooth; set aside to let cool slightly.
  • In a large bowl, beat eggs with an electric mixer on high speed, until thick and light yellow, about 5 minutes.
  • Add chocolate mixture and Grand Marnier and beat until well blended.
  • Turn into the prepared springform pan.
  • Bake 15-18 minutes, or until almost set.
  • Let cake cool 1 hour, then cover with foil and refrigerate several hours or until firm.
  • Remove cake from refrigerator at least one hour before serving.
  • Run a sharp knife around sides of cake and remove sides of springform pan.
  • Cut into slices, taking care not to cut/include wax paper with serving.
  • Serve in a pool of Raspberry Sauce and top with whipped cream.
  • Raspberry Sauce: In a food processor, combine thawed raspberries and powdered sugar; process until smooth; add Grand Marnier and process to blend well.
  • To remove seeds, press puree through a wire strainer placed over a non-reactive (glass or plastic) bowl; using a rubber spatula, scrape inderside of strainer and discard seeds.
  • Serve sauce immediately or cover and refrigerate up to 2 days; mix before serving.

1/2 cup bittersweet chocolate, chopped into 1/4 inch pieces
2 -3 tablespoons Grand Marnier
1 1/2 teaspoons cake flour
3 large eggs
1 cup sour cream
1 1/2 teaspoons vanilla
2 1/2 cups sifted cake flour
1 cup sugar
1/2 cup unblanched sliced almonds, toasted and finely ground
1 tablespoon unblanched sliced almonds, toasted and finely ground
1 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons grated orange zest
1 cup unsalted butter, softened
1/2 cup sugar
1/4 cup fresh orange juice
1/3 cup Grand Marnier

Steps:

  • Preheat oven to 350°F.
  • In a small bowl, toss the chocolate chips and a few spoons of Grand Marnier until chips are moistened and shiny. Add the 1 ½ teaspoon flour and toss until evenly coated.
  • In a medium bowl, lightly combine the eggs, ¼ cup sour cream, and vanilla.
  • In a large mixing bowl combine the dry ingredients and orange zest and mix on low speed a moment to blend. Add the butter and remaining ¾ cup sour cream. Mix on low speed until the dry ingredients are moistened. Increase to medium high speed for 1 ½ minutes to aerate and develop structure. Scrape down sides. Gradually add egg mixture in 3 batches, beating for 20 seconds after each addition to incorporate the ingredients. Scrape down the sides, and fold in the chocolate chips.
  • Scrape the batter into a well buttered bundt pan. Bake 55 to 65 minutes or until the cake tests done with a toothpick.
  • Shortly before the cake is done, prepare the syrup: Heat the sugar, orange juice, and Grand Marnier until the sugar is dissolved. DO NOT BOIL. As soon as the cake comes out of the oven, place the pan on a rack, poke the top all over with a wire tester, and brush on ½ the syrup. Cool in the pan for 10 minutes, then invert onto a serving plate. Brush with the remaining syrup and cool completely before wrapping airtight.
  • This cake can be made several days ahead and refrigerated, wrapped well. I like to glaze it with a Chocolate Cream Ganache before serving.

  • Butter and flour an angle food cake pan.
  • Bake at 350 degrees for 55 minutes.
  • Spoon topping over baked cake while still in hot pan.

6 large eggs, separated
2 tablespoons Grand Marnier or other orange liqueur
1 tablespoon finely grated orange peel
2 teaspoons vanilla extract
1/2 cup all purpose flour
1/4 teaspoon salt
Icing:
7 ounces bittersweet chocolate, chopped
7 tablespoons unsalted butter, cut into 1-inch cubes, room temperature
2/3 cup whipping cream

Steps:

  • For cake:
  • Preheat oven to 350°F. Butter 10-inch-diameter springform pan; line bottom with parchment paper round. Stir chocolate in metal bowl set over saucepan of simmering water until melted and smooth. Cool slightly. Using electric mixer, beat sugar and butter in large bowl 2 minutes. Beat in egg yolks, Grand Marnier, orange peel, and vanilla. Stir in lukewarm chocolate. Add flour and salt; stir to blend. Using clean dry beaters, beat egg whites in another large bowl until peaks form. Fold whites into chocolate mixture in 3 additions. Transfer batter to prepared springform pan.
  • Bake cake until top is dry and cracked and tester inserted into center comes out with a few moist crumbs attached, about 45 minutes. Cool cake in pan on rack (top will fall slightly). DO AHEAD: Can be made 1 day ahead. Cool completely; cover and let stand at room temperature.
  • For icing:
  • Place chocolate and butter in medium metal bowl. Bring cream to boil in small saucepan. Pour hot cream over chocolate mixture; stir until mixture is melted and smooth.
  • Run thin knife around inside of cake pan; remove pan sides. Invert cake onto 10-inch removable tart pan bottom or cardboard round. Place on rack set in rimmed baking sheet. Remove cake pan bottom and parchment. Pour icing over cake and spread to cover top and sides (any icing that drips onto baking sheet can be reused). Chill until glaze sets, about 30 minutes. DO AHEAD: Can be made 1 day ahead. Cover with cake dome and chill. Let stand at room temperature 1 hour before serving.
  • Cut into wedges and serve.

1/2 cup sugar
1/4 cup Grand Marnier
6 egg yolks
2 tablespoons water
2 teaspoons freshly squeezed orange juice
1 teaspoon orange zest
1 1/2 cups heavy cream
1 tablespoon confectioners sugar
orange peel for garnish (optional)

Steps:

  • Step 1 Cut four 12×4-inch long strips of parchment paper. Wrap one parchment strip around a small 2/3-cup ramekins or shuffle dish and secure it with tape. Note: This will allow the soufflé custard to stay in place while it freezes. Repeat with the remaining ramekins and set aside.
  • Step 2 Fill a double boiler with about 3-4 inches of water. Place over medium heat and bring to a boil.
  • Step 3 When the water is boiling add the sugar, Grand Marnier, egg yolks, water, orange juice and zest to the top of the double boiler. Note, is you do not have a double boiler, use a small and medium saucepan that fit together well enough to mimic a double boiler. Ideally, if you do not want the water to touch the top pot.
  • Step 4 Whisk the egg mixture continuously until the mixture begins to thicken and turns a nice bright yellow color, about 8-10 minutes or until it reaches 140 degrees F. Be careful not to overcook or "scramble" the egg mixture. Reduce the heat slightly if you are concerned. Remove from the heat and pour the custard into the bowl of a kitchen mixer fitted with a whisk attachment, and beat on low until cool, about 3 minutes.
  • Step 5 Pour the custard base into a large mixing bowl and set aside.
  • Step 6 Clean the mixer bowl and add the heavy cream. Beat on high until stiff peaks have formed. Mix in the confectioners sugar.
  • Step 7 Using a large rubber spatula, gently fold the whipped cream into the custard being careful not to over mix and deflate the cream.
  • Step 8 Using a spoon, divide the soufflé mixture into the prepared ramekins. Using the back of a spoon, even the tops of as best as possible.
  • Step 9 Place the soufflés in the freezer and chill for at least 4 hours or overnight.
  • Step 10 To serve, remove the parchment paper and top with an orange peel for garnish.
