CHOCOLATE GRAND MARNIER TORTE
This dessert tastes like chocolate truffle candy, so serve it in thin slices. Serve it with the accompanying raspberry sauce and whipped cream, or simply top it with whipped cream and fresh raspberries. This recipe comes from "365 Great Chocolate Desserts" by Natalie Haughton. Prep time does not include chill time.

Steps:
- Preheat oven to 350°F.
- In a small bowl, toss the chocolate chips and a few spoons of Grand Marnier until chips are moistened and shiny. Add the 1 ½ teaspoon flour and toss until evenly coated.
- In a medium bowl, lightly combine the eggs, ¼ cup sour cream, and vanilla.
- In a large mixing bowl combine the dry ingredients and orange zest and mix on low speed a moment to blend. Add the butter and remaining ¾ cup sour cream. Mix on low speed until the dry ingredients are moistened. Increase to medium high speed for 1 ½ minutes to aerate and develop structure. Scrape down sides. Gradually add egg mixture in 3 batches, beating for 20 seconds after each addition to incorporate the ingredients. Scrape down the sides, and fold in the chocolate chips.
- Scrape the batter into a well buttered bundt pan. Bake 55 to 65 minutes or until the cake tests done with a toothpick.
- Shortly before the cake is done, prepare the syrup: Heat the sugar, orange juice, and Grand Marnier until the sugar is dissolved. DO NOT BOIL. As soon as the cake comes out of the oven, place the pan on a rack, poke the top all over with a wire tester, and brush on ½ the syrup. Cool in the pan for 10 minutes, then invert onto a serving plate. Brush with the remaining syrup and cool completely before wrapping airtight.
- This cake can be made several days ahead and refrigerated, wrapped well. I like to glaze it with a Chocolate Cream Ganache before serving.

Steps:
- Step 1 Cut four 12×4-inch long strips of parchment paper. Wrap one parchment strip around a small 2/3-cup ramekins or shuffle dish and secure it with tape. Note: This will allow the soufflé custard to stay in place while it freezes. Repeat with the remaining ramekins and set aside.
- Step 2 Fill a double boiler with about 3-4 inches of water. Place over medium heat and bring to a boil.
- Step 3 When the water is boiling add the sugar, Grand Marnier, egg yolks, water, orange juice and zest to the top of the double boiler. Note, is you do not have a double boiler, use a small and medium saucepan that fit together well enough to mimic a double boiler. Ideally, if you do not want the water to touch the top pot.
- Step 4 Whisk the egg mixture continuously until the mixture begins to thicken and turns a nice bright yellow color, about 8-10 minutes or until it reaches 140 degrees F. Be careful not to overcook or "scramble" the egg mixture. Reduce the heat slightly if you are concerned. Remove from the heat and pour the custard into the bowl of a kitchen mixer fitted with a whisk attachment, and beat on low until cool, about 3 minutes.
- Step 5 Pour the custard base into a large mixing bowl and set aside.
- Step 6 Clean the mixer bowl and add the heavy cream. Beat on high until stiff peaks have formed. Mix in the confectioners sugar.
- Step 7 Using a large rubber spatula, gently fold the whipped cream into the custard being careful not to over mix and deflate the cream.
- Step 8 Using a spoon, divide the soufflé mixture into the prepared ramekins. Using the back of a spoon, even the tops of as best as possible.
- Step 9 Place the soufflés in the freezer and chill for at least 4 hours or overnight.
- Step 10 To serve, remove the parchment paper and top with an orange peel for garnish.

- Bourbon and Grand Marnier Cocktail. Sometimes, keeping it super simple is the best way to go, and perfect simplicity is what you get with simple bourbon and Grand Marnier cocktails.
- The Beautiful Cocktail. When a cocktail is so simple, sometimes it is just “beautiful,” and that’s exactly why The Beautiful Cocktail is called that. The Beautiful cocktail is also sometimes called a French Connection Number 2.
- B52 Cocktail (or B52 Shot) Perhaps one of the more sophisticated Grand Marnier recipes, a B52 is a layered cocktail that is to impress. To make this sophisticated and impressive layered cocktail, you need Baileys Irish Cream, Kahlua (or other coffee liqueur), and Grand Marnier.
- Cadillac Margarita. No list of Grand Marnier drink recipes would be complete without the famous Cadillac margarita recipe (Grand margarita). A Cadillac margarita uses top-shelf tequila, Cointreau, and fresh lime juice.
- Perfect Storm Cocktail. When you add Grand Marnier to the beloved Dark and Stormy cocktail, you have the Perfect Storm cocktail. Besides being a really cool name, this is a truly wonderful cocktail.
- Cadillac Sidecar. The classic Sidecar contains cognac or brandy, orange liqueur such as Triple Sec or Cointreau, and fresh lemon juice. All of these ingredients are shaken with ice cubes in a cocktail shaker and served in a glass with a sugar rim.
- Grand Marnier & Prosecco. To make a Grand Marnier and Prosecco, you need those two beverages, and you also need Aperol and orange juice. Prosecco is slightly less expensive than champagne, so it makes a great choice for experimenting with a champagne cocktail.
- D’Artagnan. The famous D’Artagnan cocktail is named for a swashbuckling Gascon man who later became a Musketeer. The D’Artagnan features one of the most famous products from France’s Gascony region, Armagnac brandy.
- The Esquire. Esquire Magazine held a special competition in the summer of 2007. Their aim? To create a cocktail that was perfect enough to be called “The Esquire Cocktail.”
- El Presidente Cocktail. If you want a boozy cocktail with a Cuban flair, the El Presidente is a great Grand Marnier mixed cocktail recipe to try. Basically, the El Presidente is a rum spin on the classic Manhattan cocktail.

15 BEST GRAND MARNIER SUBSTITUTE - SUBSTITUTE FOODS
From substitutefoods.com
- Cointreau: Cointreau is another popular orange liqueur, and it can be used as a substitute for grand Marnier in a pinch. Make sure you do not get the triple sec instead!
- Campari: Don’t let the bright red color throw you, Campari is actually quite good in baking as a substitute for Grand Marnier! Get More Substitutes: 10 Best Substitutes For Water Chestnut.
- Cognac: You could also try substituting Cognac for Grand Marnier. This will give your cake an entirely new flavor, but might still work well in some cakes!
- Coconut Rum: Coconut rum can be used as a substitute for grand marnier in baking in recipes. I have never tried this myself because it just sounds weird to me, but if anyone tries it and has success with it please let me know!
- Coffee Liqueurs: If you want to keep the liqueur part of the Grand Marnier, but don’t want the orange flavor, then check out different coffee liqueurs.
- Amaretto: Another common baking ingredient is Amaretto. It has a nice almond flavor that pairs well with cake, especially if you add some sliced almonds to the top for decoration!
- Bourbon: If you are looking for something with nice floral notes, then try bourbon instead of Grand Marnier. Bourbon comes from Kentucky and is known for having the distinct flavor of vanilla beans.
- Almond Extract: You do not necessarily need to use grand Marnier for flavoring in baking. Almond extract can be used instead, and it is a common substitute ingredient anyway.
- Citrus Juice: If you want a nice citrus taste without the alcohol, then check out some of the flavored juices in the grocery store. OJ is great for cakes because people already think of it as an essential ingredient.
- Brandy: If your recipe calls for a brandy then you should be able to substitute it with Grand Marnier liqueur. Get More Substitutes: 11 Best Substitutes For Broccoli.
