Have you tried a German Pancake? They are basically the world's easiest to make giant popovers. Serve with Orange Sauce for the ultimate weekend brunch.

3 eggs
¼ teaspoon kosher salt
⅓ cup milk
⅓ cup all-purpose flour
2 tablespoons butter
¼ teaspoon cinnamon

Steps:

  • Preheat the oven to 400°F. Whisk together milk, flour, and salt until smooth. Add the eggs and beat well.
  • Melt the butter in a pie plate in the hot oven. When it is bubbling hot, using hot pads, tilt to cover the bottom and sides of the pie plate. Quickly pour in the egg mixture and sprinkle with cinnamon.
  • Bake for 15 minutes. The sides of the pancake will rise high over the rim of the pie plate. Remove from the oven and serve immediately. Sprinkle with powdered sugar and/or serve with Orange Sauce.

Simple & Sweet German Pancakes are so quick and easy to prepare. They're sure to become a new favorite in your home!

2 whole eggs
3 egg whites (or can use 6 Tbsp of liquid egg whites)
1 cup milk
1 cup flour
1 tsp vanilla extract
1/4 tsp salt (rounded)
1 Tbsp brown sugar (packed)
3 Tbsp butter (salted and cubed)

Steps:

  • Preheat oven to 425°
  • Add the whole eggs, egg whites, milk, flour, vanilla, salt and brown sugar to a blender. Blend the batter on low for 1 minute and then scrape down the sides in case any flour is sticking to the sides. Continue to blend on low for another 2 minutes.
  • Put the butter into a 9x13 baking dish (I used glass) and place into the preheated oven while the batter rests for 5 minutes. The butter should start to boil but watch that it doesn't burn.
  • When the rest time is done, take the dish out of the oven and swirl the butter to make sure it spreads all over.
  • Give the batter a quick stir or pulse then carefully pour the batter into the dish and bake for 20 minutes. Turn the oven down to 300° and cook for an additional 5 minutes. While cooking, the pancake edges will puff up about 2 inches above the rim and then deflate when it is taken out of the oven.
  • As soon as it comes out of the oven, swirl the dish once more to distribute any melted butter left on top evenly over the pancake.
  • Serve with strawberries and powdered sugar or syrup.

Gramma's German Pancakes With Honey Butter image

Gather the children when you pull these out of the oven--lots of oohs & aahs at the puffy cakes! My mother-in-law featured these on her restaurant breakfast menu, and usually makes them at least once when we're visiting. Serve with Honey Butter (below) or some warm fruit compote.

Number Of Ingredients 9

1/2 cup butter, divided
3 eggs
1 tablespoon sugar
1/2 cup flour
1/2 cup milk
1 cup honey, warmed (not watery)
1/2 cup butter, melted
8 tablespoons cream (or milk)
1 tablespoon vanilla

Steps:

  • Preheat oven to 375°F; put oven rack in middle position.
  • While oven is heating up, divide butter in half (1/4 cup each). Melt one of the halves. The other half, divide again, and place pieces in two large cast-iron or stone-ware frying pans. Place pans in oven while it preheats.
  • In a blender, mix melted butter, eggs, sugar, flour and milk.
  • Remove pans from oven, swirl butter around slightly up the side of the pans.
  • Pour half of the flour-milk mixture into the first pan, the remainder in the second pan.
  • Quickly return pans to the oven. Bake until fluffy, golden brown and crispy, about 45 minutes. The puffiness goes down as it cools. Serve immediately with Honey Butter (follows).
  • PREPARE HONEY BUTTER: While the pancakes are baking, rinse out blender; pour in warmed honey and start blender on medium-high.
  • Slowly drizzle in half of the 1/2 cup melted butter; mix for 10 seconds, then add remaining butter. Mix for 3 minutes (if you can stand the racket!).
  • Add cream and vanilla; blend/pulse just enough to mix it in .
  • This makes 1 1/2 cups and is best served warm.
  • Store leftover honey butter in fridge. Reheat for just a few seconds in the microwave--do NOT boil!

1 cup flour
2 tablespoons sugar
1/4 teaspoon salt
2 1/4 cups milk
3 eggs

Steps:

  • Mix dry ingredients together.
  • Slowly pour and mix the milk into the dry ingredients. It will be like heavy cream.
  • Beat the eggs and add to the mixture.
  • Heat a heavy pan on medium high. Spray with oil. Ladle in 1/3 cup of crepe mix into pan and swirl to coat entire bottom of pan. Let heat about 30 seconds. Turn down heat (or remove). Use a flexible metal spatula to lift edges and then the whole pancake. Flip it over and cook until lightly browned, about a minute.
  • Turn out onto a plate. (*The first pancake is often a mess but after that they come out better).
  • Spread about 1 tablespoon of a tart jam or jelly on the pancake. Shake powdered sugar over all. Roll up and add another shake of powdered sugar. Enjoy.

6 large eggs
1 cup 2% milk
1 cup all-purpose flour
1/2 teaspoon salt
2 tablespoons butter, melted
BUTTERMILK SYRUP:
1/2 cup butter, cubed
1-1/2 cups sugar
3/4 cup buttermilk
2 tablespoons corn syrup
1 teaspoon baking soda
2 teaspoons vanilla extract
Confectioners' sugar
Fresh blueberries, optional

Steps:

  • Preheat oven to 400°. Place first 4 ingredients in a blender; process just until smooth., Pour melted butter into a 13x9-in. baking dish; tilt dish to coat. Add batter; bake, uncovered, until puffed and golden brown, about 20 minutes., Meanwhile, place butter, sugar, buttermilk, corn syrup and baking soda in a small saucepan; bring to a boil. Cook, uncovered, 7 minutes. Remove from heat; stir in vanilla., Remove pancake from oven. Dust with confectioners' sugar; serve immediately with syrup and, if desired, fresh blueberries.

This is my version of a great recipe that I found in my Mom's recipe book. It actually came from my grandmother Momo around WW2. My only real change was substituting applesauce for the oil. Feel free to try either way.

2 cups whole wheat flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup brown sugar
2 eggs
1 cup milk, or as needed
½ cup applesauce
1 tablespoon vanilla extract
1 teaspoon vegetable oil

Steps:

  • Whisk whole wheat flour, baking powder, baking soda, and salt in a bowl. Mix in brown sugar, breaking it up into pea-sized pieces. Beat eggs in a separate bowl and stir milk, applesauce, and vanilla extract into eggs. Make a well in the dry ingredients and pour in the milk mixture; stir until just combined. If batter is too thick, add more milk.
  • Grease a skillet or griddle with vegetable oil and place over medium-high heat. Scoop 2 tablespoons of batter onto the hot skillet and cook pancake until browned on the bottom and bubbles appear in the top, 2 to 3 minutes. Flip the pancake and cook until browned, 2 or 3 more minutes. Repeat with remaining batter.
