1-1/2 cups graham cracker crumbs
3/4 cup packed brown sugar
3/4 cup chopped pecans
1-1/2 teaspoons ground cinnamon
2/3 cup butter, melted
1 package yellow cake mix (regular size)
1/2 cup confectioners' sugar
1 tablespoon milk

Steps:

  • In a small bowl, combine the cracker crumbs, brown sugar, pecans and cinnamon. Stir in butter; set aside. Prepare cake mix according to package directions. , Pour half of the batter into a greased 13x9-in. baking pan. Sprinkle with half of the graham cracker mixture. Carefully spoon the remaining batter on top. Sprinkle with the remaining graham cracker mixture., Bake at 350° for 40-45 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack. Combine confectioners' sugar and milk; drizzle over coffee cake.

1 (5 ounce) package graham crackers (9 full ones)
1 cup packed brown sugar
11 tablespoons melted butter
1 1/2 cups pecans
2 teaspoons cinnamon
1 (18 1/4 ounce) box white cake mix or 1 (18 1/4 ounce) box French vanilla cake mix
1 (3 1/8 ounce) box French vanilla instant pudding
3 large eggs
1/4 cup vegetable oil
1 cup water
powdered sugar
milk

Steps:

  • Streusal: Put your graham crackers in a Ziploc bag, close it and roll with rolling pin until crushed, put in large bowl.
  • Add other dry ingredients.
  • Melt butter pour over and mix thoroughly; set aside.
  • Cake: Beat together until thoroughly mixed.
  • Pour half into a greased 13 x 9 baking pan.
  • Sprinkle with half of the streusel mixture.
  • Carefully spread the remaining batter on top of the streusel and then top with remaining streusel.
  • If using an aluminum pan bake for 45 minutes at 350°.
  • If using a dark pan bake for 30-35 minutes at 350°.
  • I've tried this several different ways and it actually bakes better with less brown edges in the aluminum pan for a longer time.
  • Insert toothpick for final test.
  • This is the only coffee cake I've ever made that tastes as good the second day or freezes well and can be served when thawed. Of course you lose the smell that a hot coffee cake right out of the oven provides.
  • I usually drizzle icing on top made from powered sugar and milk.

Sweet Potato Casserole with Graham Cracker Streusel image

This maple-kissed casserole gets extra cheers for its nutty streusel topping. A light sprinkle of toasted marshmallows adds a touch of caramelized sweetness and a little kid-friendly fun.

Number Of Ingredients 12

3 pounds orange-fleshed sweet potatoes (about 4 large or 5 medium)
5 (4 3/4x2 1/4") graham crackers (about 2 3/4 ounces)
1 cup pecans, coarsely chopped
1 3/4 teaspoons kosher salt, divided
6 tablespoons unsalted butter, softened, divided
1/4 cup plus 2 tablespoons whole milk
1/4 cup pure maple syrup
2 teaspoons unsweetened cocoa powder
1 1/2 teaspoons vanilla extract
1/2 teaspoon freshly ground black pepper
1 cup mini marshmallows
An 8-inch cast-iron skillet or 2-quart baking dish

Steps:

  • Preheat oven to 425ºF. Arrange potatoes on a foil-lined rimmed baking sheet, then prick all over with a fork. Bake until the tip of a paring knife inserts easily into center of largest potato, 50-65 minutes, depending on size of potatoes. Let sit until cool enough to handle.
  • Reduce oven temperature to 350ºF. Remove and discard potato skins. Transfer flesh to a large bowl and let cool completely. (You should have 4-4 1/2 cups.)
  • Place graham crackers in a resealable plastic bag. Coarsely crush with your hands into 1/2"-1" pieces. Transfer graham crackers to a medium bowl. Add pecans and 1/4 tsp. salt. Mix in 4 Tbsp. butter to combine.
  • Add milk, maple syrup, cocoa powder, vanilla, pepper, and remaining 2 Tbsp. butter and 1 1/2 tsp. salt to bowl with potato. Mash with a potato masher or fork until smooth.
  • Transfer potato mixture to skillet or baking dish. Sprinkle graham cracker mixture over. Bake casserole until streusel is lightly golden, 20-25 minutes. Sprinkle marshmallows over, then continue to bake until marshmallows are lightly golden, 10-15 minutes more. Let sit 10-15 minutes. Serve warm.
  • Potatoes can be baked and peeled 5 days ahead. Transfer to an airtight container and chill. Potato filling can be made 3 days ahead. Transfer to an airtight container and chill. Bring to room temperature before using.

Steps:

  • Mix crumbs, pecans, brown sugar, cinnamon and butter; set aside.
  • Blend cake mix, water, oil and eggs on medium speed for about 3 minutes.
  • Pour half of batter into a greased and floured 9 X 13 pan.
  • Sprinkle with half of the reserved crumb mixture.
  • Spread remaining batter evenly over crumb mixture.
  • Sprinkle batter with remaining crumb mixture.
  • Bake at 350 degrees for 45 to 50 minutes.
  • Cool.
  • Mix powdered sugar and water and drizzle glaze over cake.
  • Serve.

2 cups graham cracker crumbs (about 28 squares)
3/4 cup nuts, chopped
3/4 cup brown sugar, packed
1 1/3 teaspoons cinnamon (I don't know about you, but mine doesn't have a "third"measure spoon!)
3/4 cup butter, melted (or margarine)
1 (8 ounce) box devil's food cake mix
1 cup water
1/3 cup vegetable oil
3 eggs

Steps:

  • Preheat oven to 350°F.
  • Generously grease a 9x13" pan.
  • Mix crumbs, sugar, cinnamon, nuts and butter; set aside.
  • Prepare cake mix according to box directions.
  • Pour about 2 1/3 Celsius batter into pan; sprinkle with 2 Celsius crumb mixture.
  • Pour remaining batter into pan; sprinkle with remaining crumbs.
  • Bake until cake springs back when touched lightly in the middle, about 45-50 minutes.
  • Cool before serving.

This recipe makes more than you will need for the Rhubarb-Flan Tarts on page 40, but you can use it for any fruit cobbler or crisp or crumble. I love those kinds of desserts.

Yield makes about 3 cups

Number Of Ingredients 7

7 tablespoons (99g) unsalted butter, softened
Scant 1/2 cup (94g) sugar
1/2 teaspoon grated lemon zest
Generous 1/4 teaspoon (1.5g) coarse salt
3/4 cup (94g) all-purpose flour
1 cup less 1 tablespoon (94g) graham cracker crumbs
1/4 teaspoon (1g) baking powder

Steps:

  • Put the butter, sugar, lemon zest, and salt in the bowl of a standing mixer fitted with the paddle. Beat at medium speed until creamy.
  • Whisk the flour, graham cracker crumbs, and baking powder together. Add to the butter mixture and beat at medium-low speed just until crumbly, scraping the bowl a couple of times.
  • Transfer to an airtight container and store in the freezer until you're ready to use it or for up to 2 months.

1 (3 ounce) box French vanilla instant pudding
4 eggs
1/4 cup vegetable oil or 1/4 cup canola oil
1 cup water

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch glass baking dish.
  • For the streusel; place the graham crackers in a plastic bag, seal and then roll with a rolling pin until crushed (do not crush until fine) place the crumbs in a bowl.
  • Add in the brown sugar, 1/2 cup plus 3 tablespoon melted butter and cinnamon; mix until blended, then add in the pecans or walnuts; set aside.
  • For the cake; in a large bowl beat all cake ingredients together until blended.
  • Pour HALF the cake batter into prepared buttered baking dish.
  • Sprinkle with HALF of the streusel mix evenly over the top of the batter.
  • Then carefully spread the remaining cake batter over streusel.
  • Then top with remaining streusel.
  • Bake for about 40-45 minutes or until the cake tests done.
  • If desired, drizzle glaze over the top of the cake after baking.
