PECAN PRALINE POPCORN TREATS

Steps:
- Oil a 9-inch square baking pan.
- Heat sugar in a dry 4-to 5-quart wide heavy pot over medium heat, stirring with a fork to heat sugar evenly, until it starts to melt. Stop stirring and cook, swirling pot occasionally so sugar melts evenly, until it is a deep golden caramel. Reduce heat to low. Stir in butter, pecans, vinegar, and 1/4 teaspoon salt. When butter is almost melted, add popcorn and stir to coat.
- Quickly press mixture into baking pan with a spatula. Cool completely. Cut or break into pieces.

- Line a 15x10x1-in. baking pan with heavy-duty foil. Break the graham crackers at indentations; place in a single layer in pan. , In a small saucepan, combine butter and brown sugar. Bring to a rolling boil over medium heat; boil for 2 minutes. Remove from the heat; add nuts. Pour over crackers. , Bake at 350° for 10 minutes or until lightly browned. Let stand for 2-3 minutes. Remove to a wire rack to cool.

- Line a large jellyroll pan with aluminum foil; then lightly spray it with cooking spray. Arrange graham crackers in a single layer in the pan close together, trimming if needed to fill the pan completely. Preheat oven to 325°F. In a 2-qt. saucepan over medium heat, bring the butter, sugar, brown sugar, and pecans to a boil; then boil for exactly 3 minutes. Remove from heat and stir in the vanilla, if using. Working quickly (the mixture will begin to set up fast), spread the mixture evenly over the graham crackers, redistributing pecans as needed. (I used the tip of a knife to do this.) Immediately, place in the preheated oven and bake for exactly 8 minutes. Cool completely on a wire rack before breaking into irregular pieces. Store in an airtight container.

- Preheat oven to 325°.
- Combine the first 3 ingredients in a large bowl. Spread mixture onto a jelly-roll pan lined with foil and coated with cooking spray.
- Combine brown sugar, corn syrup, and butter in a medium saucepan. Bring to a boil over medium heat, stirring constantly. Cover and cook 1 minute. Uncover and cook, without stirring, until the candy thermometer registers 290° (about 5 minutes).
- Drizzle the brown sugar mixture over popcorn mixture; toss to coat. Bake at 325° for 30 minutes, stirring once. Cool completely on a wire rack in pan, and break into large pieces.

This is so reminiscent of pralines - and soooo easy.

- Preheat oven to 300 degrees.
- Melt butter, sugar and pecans in a pot with a pouring lip. When completely melted cook for 3 minutes.
- Lay out graham crackers on a half sheet pan. It will not hold both sleeves of crackers, so do what I do and eat the rest. Try to fill the pan as much as possible, breaking the crackers from 4 to 1.
- Pour pecan mixture over crackers as evenly as possible. (It won't be even, but it'll be good).
- Bake at 300 degrees for 12 minutes. Cool, break apart and eat immediately or store in tins or bags. If using tins, I put tissue paper in first, just to offset the crackers from the sides of the tins. Enjoy!
