THE BEST GARLIC BREAD
We went very classic with this garlic bread recipe-lots of butter and lots of garlic loaded onto warm, soft and pillowy French bread. You could make a light meal by rounding it out with a crisp green salad. Or serve it our favorite way-alongside your favorite red-sauce pasta.

- Arrange a rack in the center of oven and preheat to 450 degrees F.
- Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
- Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
- Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

ROASTED GARLIC BREAD

- Set up a grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- To a small saucepan over the indirect-heat side of the grill, add the garlic cloves and olive oil. Close the lid of the grill and gently simmer until the garlic cloves are roasted and soft, 12 to 15 minutes. Remove from the heat and, using a fork, mash the cloves to form a coarse paste. Add the butter, garlic powder, salt and pepper. Mix well to combine.
- Lay the bread out on a sheet tray, cut-side up, and spoon all but 2 tablespoons of the garlic mixture over the bread. Add 1/2 cup grated Parmesan to each half. Place the sheet tray on the indirect-heat side of the grill, then close the lid and bake until crisp and the cheese has set, 3 to 5 minutes.
- Remove from the heat, then put the 2 halves of the bread together on a piece of foil. Spoon or brush the remaining garlic butter over the top. Wrap in the foil, then place on the indirect-heat side of the grill. Close the grill and bake until golden brown and the garlic butter has soaked into the bread, another 3 to 5 minutes. To serve, open the foil, cut into smaller pieces and place on a board or platter.
OUTRAGEOUS GARLIC BREAD

- Preheat the oven to 450 degrees F. (Make sure your oven is clean or it will smoke!)
- Melt the butter in a small saucepan over low heat. Add the garlic, stir to coat with the butter, and cook, covered, for 20 minutes, stirring occasionally, until the garlic is very tender. Transfer to a small bowl and set aside until cool enough to handle. Mash the garlic in the butter with a fork. Stir in the Parmesan, parsley, lemon zest, red pepper flakes, 1 1/2 teaspoons kosher salt, and 1/2 teaspoon black pepper.
- Slice the baguette in half lengthwise and place both halves, cut sides up, on a cutting board. Score each half diagonally (don't cut all the way through) in large serving-size pieces. Spoon all of the garlic mixture generously on the cut sides of the bread. Cut each half of the baguette in half crosswise along a score and place the 4 pieces on a sheet pan lined with parchment paper.
- Bake for 5 to 7 minutes, until the topping is bubbly and starting to brown and the bread is crisp. Transfer to a board, cut in serving pieces along the scores, sprinkle with fleur de sel, and serve warm.
GREEK CYPRUS OLIVE GARLIC BREAD WITH LEMON ZEST (ELIOPSOMI)
Customarily, the bread includes mint, but because that herb doesn't take well to a hot oven, here it is replaced with another of Cyprus's fabulous crops: lemon.

- Stir together the water and sugar in a small bowl. Sprinkle the yeast over the top and set aside until bubbly, 15 minutes.
- Place the 3 1/2 cups flour and salt in a large bowl and mix with a fork. Make a well in the center and add the 1/4 cup oil, the zest, garlic, olives, and yeast mixture. Stir together until fairly well mixed; then use your hands to knead the mixture into a crumbly ball.
- Transfer the dough to a lightly floured surface and knead until it is smooth and elastic and no longer sticky, 10 minutes. Lightly bush the dough with oil, cover it with a cloth, and set it aside in a warm place to rise until doubled in bulk, about 2 hours.
- Lightly grease a baking sheet with oil. Punch down the dough and knead it again for 1 minutes. Pat the dough into a ball and flatten it slightly to make a round about 6 inches in diameter. Place the dough round on the prepared baking sheet and set it aside in a warm place until doubled in bulk again, about 1 1/2 hours.
- When ready to bake the bread, preheat the oven to 425°F.
- Place the bread in the oven and bake until quite golden, 30 minutes. Brush the top and sides of the loaf liberally with oil and continue baking until browned and hollow sounding when tapped, 5 minutes more.
- Remove the bread from the oven and cool on the baking sheet until ready to serve.
- VARIATION: Olive Cheese Bread: Olive Garlic Bread easily turns into another Cypriot loaf, a cheese and olive bread. Omit (or leave in) the garlic and lemon zest and add 1 cup grated cheese, preferably Cypriot haloumi.
- THE NONTRADITIONAL CHOICE:.
- While it is easier to use Kalamata olives (they are readily available and can be bought pitted), traditionally Cypriotic olive breads use only oil-cured or oil-and-salt-brined olives, never those that are cured even partly in vinegar, as Kalamatas are. Cyprus produces both green and black olives, plump to wrinkled, cured in numerous ways. Using Kalamata olives for the olive flatbread, the taste of the bread, while slightly tarter than the traditional, is still excellent.

HOLIDAY GARLIC-LEMON GREEN BEANS WITH BREAD CRUMBS
This is one of my adopted recipes. Made these last week and all I can say is EXCELLENT. Easy to make and is just busting with flavor. I highly recommend making the bread crumbs as written. They are wonderful. My cooking time was a little different, but we like our beans a little more done than most. Thanks to the Original Author of this great recipe.

- Process bread in a food processor to produce even, fine crumbs.
- Heat 1 tablespoon butter in large non stick skillet over medium high heat, when melted, add bread crumbs and cook, stirring frequently until golden, about 3-5 minutes.
- Transfer to a medium bowl and stir in 1/4 teaspoon salt, 1/8 teaspoon pepper and cheese. Set aside.
- Wipe out skillet and add remaining 2 tablespoons butter, garlic and 1/4 teaspoon salt. Cook over medium heat, stirring until garlic is golden, 3 to 5 minutes.
- Stir in flour, red pepper flakes and thyme, then toss in green beans.
- Add chicken broth and increase heat to medium high, cover and cook until the beans are partly tender, about 4 minutes.
- Uncover and cook stirring occasionally until beans are tender and sauce has thicken slightly, about 4 minutes.
- Off heat, stir in lemon juice and adjust seasonings with salt and pepper to taste.
- Transfer to serving dish and sprinkle with bread crumbs.
BAKED BAGUETTE WITH LEMON-GARLIC BUTTER

- Mix butter, chopped parsley, garlic and grated lemon peel in small bowl to blend. Season lemon-garlic butter to taste with salt and pepper. Spread evenly over 1 side of each bread slice. Reassemble bread slices; wrap in foil. Place on baking sheet. (Can be made 8 hours ahead; chill.)
- Preheat oven to 300°F. Bake bread until heated through, about 20 minutes; serve bread warm.

GARLIC BREADCRUMBS

- Preheat the oven to 350°F.
- Place the bread slices on a baking sheet and bake until lightly toasted and dry, 10 to 12 minutes. While the bread toasts, place the olive oil and garlic in a sauté pan and set over low heat. Cook gently, allowing the garlic to infuse the oil.
- When the bread slices are toasted, place in a food processor and pulse until finely ground. Add the crumbs to the garlic oil and stir gently until coated. Season to taste with salt and cook for 2 to 3 minutes, or until the oil is absorbed. Remove the garlic cloves. The crumbs will keep in an airtight container at room temperature for about 2 weeks.
