This Gordon Ramsay Fresh Pasta Dough recipe is so simple and easy. Pasta may have its origins in Italy, but now it's enjoyed by people worldwide.

2 cups 00 (double zero) flour
½ tsp. Salt
1 tsp. extra virgin olive oil
4 whole eggs at room temperature
2 egg yolks

Steps:

  • Put the ingredients in the food processor and mix until you get a cohesive mixture that's soft and just a little sticky - about 45 sec.
  • Knead the dough by hand, make a uniform ball and tightly wrap it in a plastic film for 30 to 4 hours.
  • Divide the dough into equal portions and feed it through the pasta machine rollers twice (with rollers in their most extended position).
  • Seal the dough's tapered ends together by pressing and feeding it again through the rollers, still set in the most extended position (remember to keep the seal at the top).
  • Reduce the roller width by one setting and pass the dough through the machine twice. Keep reducing the roller width and passing the dough twice through each setting until you get an almost transparent consistency.

4 3/4 cups all purpose flour
1/4 tsp salt
4 medium eggs
6 egg yolks
1 tbsp olive oil

Steps:

  • To make the pasta, put the flour, salt, eggs, egg yolks and olive oil into a food processor and whiz until the mixture comes together to form coarse crumbs. Tip this mixture into a bowl and gather it into a ball with your hands. Turn the pasta dough onto a lightly floured surface and knead well until the pasta dough is smooth and soft, but not sticky. Wrap in plastic-wrap and let it rest for at least 30 minutes. Take a piece of dough about the size of a kiwifruit, keeping the rest well wrapped to prevent it from drying out. Flatten the piece of dough to a rectangle, about ¼ inch (5mm) thick. With the pasta machine set to its thickest setting, feed the dough through two or three times. Adjust the setting by one notch and repeat. Continue in this way, narrowing the setting by one notch each time. The dough will get progressively smoother and gain more of an elastic consistency. When you reach the thinnest setting, the pasta is ready to be cut, filled, and shaped as required. Repeat with the remaining dough.

200 g minced beef
200 g ground pork
1/2 bunch flat leaf parsley
1 splash white wine
2 tablespoons grated parmesan cheese
2 garlic cloves, chopped
3 tablespoons fine breadcrumbs
milk, enough to cover breadcrumbs
plain flour
2 (14 ounce) cans chopped tomatoes
2 shallots, finely diced
3 garlic cloves, halved
1/2 red chili, finely sliced
2 tablespoons pitted green olives, drained
1 small bunch basil
1 tablespoon chopped fresh oregano
sea salt & freshly ground black pepper
olive oil

Steps:

  • Heat the oven to 180°C.
  • Soak the breadcrumbs in the milk.
  • Lightly fry the shallots, garlic and chilli for 2-3 minutes until soft. Deglaze the pan with a splash of white wine. Add the tomatoes along with the basil, oregano and finally the olives. Simmer to reduce (this should take 5-10 mins).
  • While the tomato sauce is cooking, make up the meatballs: Into the mince add the parsley, parmesan, garlic and add soaked breadcrumbs, mix well. Season with a little salt and pepper.
  • Shape into walnut sized balls and lightly coat the meatballs in the flour and fry in hot olive oil until golden. Add the meatballs to the tomato sauce and bake in the oven for 10 minutes.
  • Serve with basmati rice.

14 ounces farfalle pasta
3 tablespoons olive oil
8 slices streaky bacon, chopped
1 garlic clove, finely chopped
1 cup heavy cream
5 ounces peas, thawed if frozen
2 1/2 ounces parmesan cheese, freshly grated, plus extra to sprinkle
1 small handful sage leaf, and flat-leaf parsley leaves

Steps:

  • Bring a pot of salted water to the boil. Tip in the farfalle and cook according to packet instructions until the pasta is al dente.
  • Heat the oil in another pan and add the bacon. Fry over high heat for 3 - 4 minutes until the bacon is golden brown.
  • Add the garlic and fry for a minute. Pour in the cream and bring to the boil. Let simmer for 5 minutes until reduced and thickened slightly.
  • Tip in the peas, bring back to a simmer and cook for another 3- 4 minutes. Stir the grated parmesan into the sauce, then taste and adjust the seasoning.
  • When the pasta is ready, drain it in a colander and immediately tip into the sauce.
  • Add the herbs, then toss the pasta until well coated with the creamy sauce.
  • Divide among warm plates and sprinkle over a little more parmesan to serve.
