THE BEST PAN-FRIED TOFU
I have had MANY people ask me how I pan fry my tofu and get it so crispy and firm. There are a few reasons why:-). First I either use a non-stick or cast iron pan, I don't overcrowd the surface, I drain my tofu REALLY well, use only extra firm Chinese style and MOST important of all, I leave it undisturbed while cooking and this allows the golden crust we all love on pan-fried tofu to develop! Please find detailed instructions below on how to make the best pan-fried tofu ever!

- Take your block of tofu and wrap it in several layers of paper towels.
- Gently press the tofu with your hands or against the counter top to release the liquid. This will take about a minute.
- Slice the tofu into pieces about 1/2 an inch thick.
- Set tofu aside.
- If you are using a non-stick pan heat it slightly on medium-high heat (about 30 seconds) before adding oil.
- If you are using a cast iron pan, please heat for about 1 minute to 1 1/2 minutes on medium-high heat. Cast iron is very thick and you want the pan to be heated evenly before adding the tofu.
- Add oil to heated pan.
- Gently spread oil over the entire surface of the pan.
- Set the tofu pieces in the pan, leaving ample room between them. They should sizzle when placed in the oil. Sprinkle the tops with salt and a little cayenne pepper.
- Now, the MOST IMPORTANT step is -- LEAVE THEM ALONE for about 6 or 7 minutes. Just gently shake them to make sure they don't stick to the pan. Do NOT turn them or agitate them in any other way. When you see a golden crust beginning to creep its way up the sides of the slices, turn them and spice the other side. Add more oil if the pan seems too dry.
- The second side will only take about 4 minutes to cook.
- When they are evenly browned take them out of the pan and place them on paper towels to drain.
- These are very simply seasoned and basic and can now be used any way you like. I like these with steamed broccoli and peanut sauce -- or in a sandwich with grilled peppers and mushrooms and aioli -- or just eaten with ketchup:-).

Fry tofu in a coating of smoked paprika, garlic and seasoning to make these crispy tofu bites. Eat as a snack or as a starter or side dish in a veggie feast

- Drain the tofu, wrap in 4-5 sheets of kitchen paper, put on a plate and put something heavy over the top, like a wooden chopping board, or a tray with a few tins on it. Leave for 20 mins to drain the excess moisture from the tofu.
- Mix the cornflour, garlic, paprika, salt and pepper in a small bowl. Unravel the tofu from the paper, cut in half through the centre, then cut into triangles, cubes or strips.
- Toss the tofu pieces in the spiced cornflour to coat all over. Heat the oil in a large non-stick frying pan over a medium-high heat. Fry the tofu for 2-4 mins on each side until golden, crunchy and browned at the edges. Smaller cubes will take 2 mins each side, larger triangles will take 4 mins. Cook in batches if you need to, adding a little more oil if the pan gets dry.
- Drain the cooked tofu on kitchen paper and season with a pinch more salt before serving.

- Cut the tofu horizontally into three equal slabs. Wrap each slab in a clean tea towel or paper towel and press the toful for 45 minutes. If time does not permit, wrap tofu and press gently to extract as much moisture as possible.
- For seasoning mix; place the nutritional yeast, salt, herbs, and spices in a wide, shallow mixing bowl. Stir well to combine.
- Stir the milk and lemon juice together in a small mixing bowl. Place the flour in mixing bowl.
- Cut each slab of tofu into 4 triangles, making a total of 12 in all. Working with one piece at a time, dredge the tofu in the flour. Shake off any excess. Now submerge the tofu in the "soured" milk. Coat the tofu in the seasoning mix.
- Coat a large skillet with vegetable oil and heat over medium high heat. When oil is hot, add the tofu pieces in a single layer. Cook until bottoms are well browned, then turn pieces over and cook until browned. Add more oil between batches and adjust the heat as necessary.
- As soon as tofu is removed from the skillet, place it on a plate lined with paper towels and blot off excess oil. Serve and enjoy!

- FIRST, MAKE THE YOLK: Get a large pot of water boiling and add your peeled and diced veggies. Boil for 15 minutes or until veggies are fork tender. Strain the veggies, reserving the water in a large bowl, and add them to a food processor. Add the remainder of the yolk ingredients to the food processor including 1/4 cup of the reserved water. Blend until smooth. Taste and adjust flavors as necessary.
- THEN, MAKE THE EGG WHITES: Drain your tofu and slice it into four 1/2-inch-thick rectangles*. Use the top of a wide-mouth mason jar or circular cookie cutter to cut the tofu into circles about the size of a fried egg. See notes for ideas on what to do with the scraps**.
- NEXT, STUFF THE EGGS: Load a [flavor injector|https://amzn.to/2ZV7E3P ] with the yolk mixture and carefully pierce the side of the tofu circle with it. You want the tip of the injector to reach just past the middle of the circle without piercing the other side. From here, what you’re trying to do is create a pocket for the yolk while keeping the injection site as small as possible. With that in mind, VERY carefully move the injector back and forth, making sure you keep it level. Tilt it to one side and repeat this back and forth motion, then tilt to the other and repeat again. Then, carefully inject the yolk into the tofu. Do this very slowly and stop as soon as you see a lump form in the tofu.
- NOW, COOK THE EGGS: Heat the coconut oil in a large cast iron skillet on medium heat and carefully add your eggs. Cook for about 5 minutes, until you see the sides start to brown. Then, sprinkle a generous amount of [kala namak|https://amzn.to/2OaN0qZ ], onion powder, and black pepper on top of each egg and carefully flip them. Cook for about 5 more minutes until that side's edges start to brown. Sprinkle the spices on this side and carefully flip again. Keep flipping until you have a nice egg-looking patty.

- Bubble tea (boba) I’m starting my Taiwan food guide with a drink. Acceptable? Let’s roll with it. The chewy tapioca pearls in bubble tea are so sweet and filling that it’s almost like a dessert.
- Coffin bread. Of all the food to try in Taiwan, there’s none weirder than coffin toast, also called coffin bread. Actually, it’s just the name that’s bizarre.
- Sausage in a rice bun. This Taiwanese dish is sometimes described in English as ‘little sausage in big sausage’ which actually hits the nail on the head.
- Pork pepper buns. One of my first meals in Taiwan was at Fuzhou Pepper Buns inside Taipei’s Raohe Night Market. The recipe for these meaty morsels has been perfected over several decades and the result is undeniably delicious.
- Stuffed chicken wings. How to make chicken wings more delicious than they already are? Give them an Asian makeover and stuff them with rice and spices!
- Peanut ice cream rolls. The Taiwanese certainly have a sweet tooth. As you’ll learn, plenty of the best Taiwanese foods are desserts including peanut ice cream rolls.
- Squid. Another of the best street foods in Taiwan is battered seafood. Every night market I visited had row upon row of squid stands, all serving my favourite seafood dish for practically pennies.
- Taiwanese fried chicken (TFC) Next in my Taiwan food guide, another dish that isn’t unique to Taiwan but is done so well. People tend to think of Korean fried chicken before they do Taiwanese fried chicken but having tried both, I can vouch for TFC being just as tasty.
- Xiao long bao (soup dumplings) While they might look like regular dumplings, xiao long bao are soup dumplings and probably Taiwan’s most famous food.
- Other dumplings. If you don’t fancy the queue for Din Tai Fung, it’s not a problem because there are dumplings all over Taiwan. You’ll find them at night markets, restaurants, street stalls and my favourite chain, Bafang Dumpling.
