1/4 cup oil (I'm using olive)
2 cloves garlic, sliced
1 onion, cut into large dice (I'm using yellow)
4 sweet potatoes, cut into large dice
2 tablespoons ground turmeric
1 tablespoon ground coriander
1 tablespoon coarse black pepper
One 28-ounce can tomato product, such as sauce, diced, crushed, etc. (I'm using crushed)
One 15-ounce can beans, rinsed (I'm using black)
1 can unsweetened milk (I'm using coconut milk)
1 cup liquid (I'm using vegetable stock)
1 cup nuts (I'm using walnuts)
Salt
1 lime, cut into wedges
Fresh cilantro, if you have it, for serving
Couple shakes favorite hot sauce, optional

Steps:

  • Heat a large saucepan over medium heat and add the oil. When hot, add the garlic and onions and cook until beginning to soften, about 2 minutes. Add the potatoes, turmeric, coriander and pepper and cook for 2 minutes. Add the crushed tomatoes, beans, coconut milk, vegetable stock and nuts and bring to a simmer. Cook until the potatoes are tender and the liquid thickens, 20 to 30 minutes. Taste and season with salt if needed.
  • Serve the stew in bowls with lime wedges for squeezing. Garnish with cilantro and hot sauce if using.

3 quarts water
8 large potatoes, peeled and sliced
4 large carrots, diced
2 stalks celery, chopped
2 small onions, chopped
⅓ cup butter
2 tablespoons all-purpose flour
1 ½ teaspoons salt
1 teaspoon ground black pepper
¼ teaspoon paprika
2 cups heavy cream

Steps:

  • In a large saucepan over medium heat, heat the water and stir in the potatoes, carrots and celery. Cook 15 minutes, or until tender but firm. Remove from heat. Drain and set aside, reserving liquid.
  • Place the onions and butter in the large saucepan. Over medium heat, slowly cook and stir 10 minutes, or until the onions are tender. Mix in the flour, salt, pepper, paprika and heavy cream. Mix in the potato mixture. Continue cooking and stirring, adding the reserved liquid a tablespoon at a time, until the mixture has reached a desired consistency.

1 cup Simply Potatoes Diced Potatoes with Onion
1 1/2 lbs cubed lean beef
8 ounces chopped baby carrots
32 ounces low-sodium low-fat beef broth
1 (6 ounce) can tomato paste (add more for thicker base)

Steps:

  • The first step to making this delicious stew is to chop the carrots into bite-sized pieces. The next step is browning the bit-sized cubed beef until cooked all the way through in a skillet on medium heat; don't drain any of the grease, you will use this to brown the Simply Potatoes. After the meat is brown, you will then place it in a container to the side, then put the Simply Potatoes Diced with onions in the skillet and cook until brown, on medium heat. Then you will put the Potatoes into another container to the side (or if you read ahead and got a big enough container, they can both go in).
  • The next step is place your soup pot on the stove and turn the heat on high and add the beef broth and tomato paste to your pot (you can add more tomato paste if you like your base to be thicker), and heat until boiling. Once your mixture is boiling, turn down to simmer and add the carrots, beef, and potatoes and onions. The final step is to heat on simmer until carrots are cooked all the way through (approximately four hours), or for quicker meals, heat on medium (approximately one hour).

2 cups chopped carrots
½ cup texturized vegetable protein (TVP)
¼ cup uncooked long-grain rice
1 onion, sliced
2 (15 ounce) cans sliced potatoes, drained
1 cup salsa
⅛ cup dry sherry
⅛ cup Italian-style salad dressing
2 cups water
1 teaspoon cornstarch
¼ cup dry bread crumbs
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • In a large bowl toss together carrots, TVP, rice and onion. Transfer to a deep, round casserole dish. Press mixture down evenly. Layer potatoes on top of carrot mixture.
  • In a medium bowl combine salsa, sherry, salad dressing, water and cornstarch. Slowly pour over potatoes.
  • Bake, covered, in preheated oven for 1 hour. Remove cover and sprinkle with bread crumbs and Parmesan cheese.
  • Heat oven to 400 degrees F (200 degrees C) and bake, uncovered, for 1 1/2 hours. Cool slightly before serving.

5 garlic cloves
3 tablespoons dark sesame oil
3 tablespoons tamari, shoyu or 3 tablespoons soy sauce

Steps:

  • Chop ginger and garlic coarsely.
  • Heat a cast iron skillet.
  • Add sesame oil.
  • Let the oil heat and then add garlic and ginger.
  • Once the garlic had caramelized, add scallops.
  • Sprinkle with tamari and cook for 5 minutes.
  • Squeeze a whole lime into the skillet and cook for one more minute.
  • Serve immediately.

  • First, start caramelizing the onions: heat 2 tablespoons oil in a large skillet over medium heat for 1-2 minutes. Place the onions in the skillet and let cook, without stirring, for 5-8 minutes, until the bottom sides have started to brown. 1 teaspoon olive oil
½ medium red onion, chopped
4 cloves garlic, minced
2 cups vegetable broth, or more as needed
2 medium tomatoes, diced, or more to taste
1 medium red bell pepper, seeded and cubed
½ medium sweet potato, peeled and cubed
2 tablespoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
¼ teaspoon ground cinnamon
¼ teaspoon red pepper flakes
1 cup frozen corn
½ cup chopped fresh cilantro

Steps:

  • Place beans in a large bowl with 10 cups water. Soak at room temperature for 8 hours, or overnight.
  • Drain and rinse beans and transfer to a large pot. Cover with 10 cups fresh water and bring to a boil. Reduce to a simmer and cook, stirring occasionally, until they reach desired tenderness, about 45 minutes. Drain and set aside.
  • Heat oil in a large pot over medium heat; stir in onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in 2 cups broth, tomatoes, bell pepper, and sweet potato. Season with chili powder, salt, cumin, oregano, cinnamon, and red pepper flakes. Increase heat to medium-high and bring to a boil.
