CARAMELIZED ONION & GOAT CHEESE PITA PIZZA

Steps:
- Preheat the oven to 400F.
- Place the pita bread on a baking sheet lined with parchment paper.
- Coat the pita bread with tomato sauce, and set aside
- In a pan, heat olive oil and cook the sugar under medium heat for 1-2 minutes or until the sugar starts bubbling
- Add the onion rounds and mushrooms to the pan, and cook for 3-4 minutes or until golden brown
- Remove and top the pita bread with the mushroom onion sauté
- Crumble the goat cheese on the pita, and pop in the oven at 400F for 10 minutes
- Remove and top with drizzled balsamic vinegar and fresh basil leaves
PITA PIZZAS

- Core the tomatoes and halve them crosswise, then squeeze the juices and seeds into a large bowl. Whisk in 1 tablespoon olive oil and season with salt and pepper. Add the arugula but don't toss; set aside. Dice the tomatoes and toss in a separate bowl with the olives and rosemary.
- Preheat a grill to medium high. Brush the onion rounds with olive oil and season with salt. Grill until soft, 3 to 4 minutes per side. Transfer to a plate and separate the rings. Reduce the grill heat to medium.
- Brush both sides of the pitas with olive oil and grill until marked, 2 to 3 minutes per side. Top with some of the tomato-olive mixture, ricotta, mozzarella and onion. Cover and grill until the cheese melts, 2 to 3 minutes.
- Toss the arugula with the dressing and pile on top of the pitas. Season with salt and the red pepper flakes and drizzle with olive oil.

Great little pizzas. Use this basic recipe and add, remove, modify with your favorite ingredients. Great for low-fat diets when you're craving some 'zaah!

Quick and easy way to make a yummy pizza. Use real Italian mozzarella, not the American style. I usually use my leftover homemade pasta sauce with this one.

Steps:
- Slice onions and saute in 1 tbsp olive oil over medium heat until soft. Add brown sugar and cook another 5 minutes. Set onions aside. Add sausage to skillet and cook until browned; a few minutes.
- Preheat oven to 425.
- Place pita on baking sheet. Brush pita with remaining tablespoon olive oil.
- Spoon sauce onto pita.
- Sprinkle with Italian sausage and mozzarella.
- Cook 15-20 minutes.
PIZZA WITH CARAMELIZED ONIONS AND CRISPY BACON

- Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
- In a medium size saute pan, add olive oil and heat over medium heat. When the oil is hot, add the bacon and cook until the bacon is very crispy and all of the fat is rendered. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Remove all but 2 tablespoons of the bacon fat from the pan and discard. Place the pan over high heat. Add the onions to the hot bacon fat and cook until the onions are well browned, about 8 to 10 minutes, stirring often. Remove to a paper towel lined plate.
- In a small bowl, combine the mascarpone and farmer's cheeses. Season with nutmeg and black pepper. Reserve.
- On a lightly floured surface, stretch or roll the dough as thinly as possible, about 14 to 15-inch circle. Evenly spread the mascarpone mixture over the dough. Sprinkle with the mozzarella and Parmesan cheeses, bacon, thyme, and sauteed onion. Bake until the pizza crust is nicely browned, about 8 to 10 minutes.
- Remove pizza from the oven, transfer to a cutting board, cut into slices and serve immediately.
- In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
- In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
- Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
EGYPTIAN ONION PITA BREAD
After trying & studying several recipes for Egyptian breads I developed this version which is a combination of a few key elements of all the recipes, plus my spin as well. We thought these breads were a little dense for our taste so I don't think I'm done tweaking it quite yet. If you try it and have any suggestions please feel free to note them in your review. :)

- Dissolve the yeast in 1 cup warm water.
- Sift together the flour and salt and mix the yeast and water.
- Work the mixture into a dough and knead for several minutes.
- Cover the dough with a damp cloth and let rise in a warm place for 3 hours.
- Preheat oven to 350°.
- Divide the dough into 6 equal portions and roll into balls.
- With either your hand or a rolling pin, pat and press each ball of dough into a 5-inch circle about 1/2-inch thick.
- Place on an ungreased baking sheet and bake for 10 minutes, or until the pita are light golden brown.

ONION, ANCHOVY, AND OLIVE PIZZAS
The following recipe was inspired by pissaladière, the Niçoise tart that features a similar topping.

- In a large bowl stir together water and yeast and let stand until foamy, about 5 minutes. Stir in flour and salt and blend until mixture forms a dough, adding additional tablespoon water if too dry. On a lightly floured surface knead dough about 10 minutes, or until smooth and elastic. (Alternatively, dough may be made in a standing electric mixer. In bowl of mixer make dough as described above. With dough hook knead dough about 5 minutes, or until smooth and elastic.)
- Put dough in a very lightly oiled deep bowl, turning to coat, and let rise, covered loosely, in a warm place 1 1/2 hours, or until doubled in bulk. Punch down dough and divide into 4 equal pieces. Dough keeps, each piece put in a small, sealable plastic bag and sealed, pressing out excess air, chilled overnight or frozen 2 weeks. If dough is frozen, thaw overnight in refrigerator before using. Makes enough dough for four 12-by 6-inch oval pizzas.
- In a large saucepan simmer onions in water and oil, covered, over moderate heat until tender, about 15 minutes, and season with salt. Cook onions, uncovered, stirring occasionally and adding additional water, 1 tablespoon at a time, if onions begin to stick to bottom of pan, until liquid is almost evaporated and onions are golden brown. Onions may be made 1 day ahead and chilled, covered.
- Preheat oven to 500°F.
- On a work surface sprinkled with 1 teaspoon cornmeal roll out 1 piece of dough into a 12- by 6-inch oval and transfer to a baking sheet. Repeat with remaining cornmeal and dough, ending up with 2 ovals on each of 2 baking sheets.
- Spread onions evenly on dough ovals, leaving a 1/2-inch border around edge of each pizza. Top onions with tomatoes and sprinkle with anchovies, olives, and thyme.
- Bake pizzas in lower and middle thirds of oven 15 minutes, or until crusts are crisp and pale golden.
CARAMELIZED ONION PIZZA
Quick and easy little pizzas for lunch or a light dinner. I love caramelized onions, so this is one of my favorite pizzas to make at home.

Steps:
- In a medium saucepan cook the onions and garlic in hot olive oil over medium heat.
- Cook, covered for 10-15 min or until the onion is very tender, stirring occasionally.
- Set the onions aside.
- Heat grill to medium heat.
- Toast one side of each bread round directly over the heat for 1-2 minute.
- Remove from the grill.
- Top the toasted side of each bread round with the onion mixture, sliced tomatoes, mozzarella cheese, and Romano cheese.
- Return bread rounds to the grill, over indirect heat.
- Cover the girll and cook for 5-10 min or until the cheese is melted and toppings are heated through.
- Remove from the grill and top with basil before serving.

- Mix onion, olive oil, salt and chili powder in bowl.
- Cut pocket pita all the way from the center hole and stuff onion evenly.
- Heat the griddle on high. Brush oil on both sides of pita and grill it on both the sides until crispy or 2 minutes on each side.
