2 tbsp. flat-leaf parsley, chopped
1 scallion, finely chopped
2 tbsp. finely grated Parmesan
1/4 c. walnuts, toasted and chopped
Sliced baguette or crackers, for serving

Steps:

  • In medium bowl, whisk together mayonnaise, lemon zest and juice, and 1/4 teaspoon each salt and pepper. Add artichokes and toss to coat.
  • Fold in spinach, mint, parsley, scallion, Parmesan, and walnuts. Serve with baguette slices or crackers.

1 can (14 oz.) artichokes
1 pkg Good Seasons Italian Dressing Mix
1 cup Miracle Whip (Light option works just fine)
1 cup Breakstone's or Knudsen Sour Cream
1 pkg Kraft Shredded Parmesan Cheese (1 and 1/2 cups), divided

Steps:

  • Defrost spinach and thoroughly drain. Bring cream cheese to room temperature. Chop artichokes.
  • Mix first 6 ingredients and 1/2 package shredded parmesan cheese. Top with remaining parmesan cheese.
  • Bake at 350 degrees F for 30 to 40 minutes.

3 tablespoons unsalted butter, melted
8 ounces cream cheese, room temperature
1/2 cup sour cream
10 ounces frozen spinach, thawed and squeezed dry
1/2 cup pitted green olives
One 14-ounce can quartered artichoke hearts, drained
1/2 cup grated mozzarella
1/2 cup grated Pecorino Romano
1 cup grated Parmesan
1 clove garlic, chopped
1/4 teaspoon grated nutmeg
Kosher salt and freshly ground black pepper
12 dough balls frozen dinner rolls, such as Rhodes, thawed

Steps:

  • Preheat the oven to 400 degrees F. Brush a shallow 2-quart baking dish (round or rectangular) with 1 tablespoon of the melted butter.
  • In a food processor, combine the cream cheese, sour cream, spinach, olives, artichoke hearts, mozzarella, Pecorino and 3/4 cup of the Parmesan. Then add the garlic, nutmeg, and salt and pepper to taste. Pulse to roughly chop.
  • Place dough balls around the edge of the prepared baking dish. Fill the center of the dish with the dip, spreading to even. Press any remaining dough balls into the top of the dip. Brush the dough with the remaining 2 tablespoons melted butter, and then sprinkle the dough and the dip with the remaining 1/4 cup Parmesan.
  • Bake until the dip is bubbling and the rolls are golden and cooked through, about 20 minutes.

1 (9 ounce) box frozen artichoke hearts, thawed and drained
1 (16 ounce) jar alfredo sauce
1 lb mozzarella cheese, shredded
1/4 teaspoon garlic powder
1 medium tomatoes, seeded and chopped

Steps:

  • Chop artichoke hearts and combine with spinach, sauce, and 2/3 of cheese in a microwave-safe baking dish.
  • Cook on high power about 4-6 minutes, (heated through well), depending on your microwave.
  • Stir mixture and add remaining cheese to top and cook about 2-3 minutes longer, until hot and bubbly.
  • Add chopped tomato to top and serve with celery, sliced crusty baguette, tortilla chips, or whatever you prefer.

I think it's pretty close, but not exactly like it tastes from the store. In any event, this is an easy, quick, and far cheaper way to make a very good spinach and artichoke dip. You'll love this.

1 (10 ounce) package frozen spinach, all moisture removed
1 (14 1/2 ounce) can artichoke hearts, drained
1/2 cup roasted red pepper, from a jar, drained
1 bunch green onion, white and green parts
3/4 cup Hellmann's light mayonnaise
3 tablespoons parmesan cheese, grated
2 jalapenos, chopped
1/2 lemon, juice of
1 pinch sea salt
pepper

Steps:

  • Add drained spinach, drained artichoke hearts, drained fire roasted red peppers, jalapeños, and green onions to a food processor and chop until desired texture. If you like your dips chunky, you can skip the processor and chop by hand.
  • In a large bowl, mix all ingredients together thoroughly.
  • How easy is that? Now, season with salt and pepper to desired taste and refregerate for at least an hour before serving.
  • Note: Feel free to play with the ingredient quantities. I like more spice, so I typically use 4 jalapeños. Adding more red peppers adds more color and flavor as well.

300g chopped frozen spinach, defrosted
250g soft cheese
150ml soured cream
100g mayonnaise
2 large garlic cloves, finely grated
75g vegetarian hard cheese, grated
100g grated mozzarella
100g grated vegetarian cheddar
2 x 280g jars artichokes, drained and roughly chopped
tortilla chips and crudités of your choice, to serve

Steps:

  • Heat the oven to 180C/160C fan/ gas 4. Lightly oil a small baking dish. Tip the defrosted spinach into a sieve set over the sink and press down with the back of a large spoon to remove as much liquid as possible. Set aside.
  • Whisk the soft cheese, soured cream and mayonnaise together in a medium bowl until well-combined. Add the garlic, most of the cheeses, all the spinach and the artichokes. Season with black pepper and fold everything together to combine.
  • Spoon the mixture into the baking dish and sprinkle over the remaining cheese. Will keep, covered in the fridge, for up to a day. Bake for 25-30 mins until bubbling and golden. If you like an extra-crisp top, flash under a hot grill for the final few minutes of cooking time. Leave to stand for 5 mins, then serve with tortilla chips and crudités.
