1 1/2 lbs lean lamb, boneless shoulder cut into 1/2 inch strips
1/4 teaspoon garlic powder (or 1 clove fresh garlic, minced)
2 tablespoons butter or 2 tablespoons margarine
1 medium onion, chopped
1 cup water
1 1/2 cups water
1/2 teaspoon salt
1 cup uncooked instant brown rice
1/4 cup water
3 tablespoons soy sauce
2 tablespoons cornstarch
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium green pepper, cut into rings
1 (11 ounce) can mandarin orange segments, drained

Steps:

  • Cook and stir lamb strips and garlic powder in margarine in a 10-inch skillet, until lamb is brown, about 6 minutes.
  • Stir in onion and 1 cup water; heat to boiling.
  • Reduce heat; cover and simmer 15 minutes.
  • Heat 1 1/2 cups water and 1/2 tsp salt to boiling in 1 1/2-qt.
  • saucepan.
  • Stir in rice; reduce heat.
  • Cover and steam 15 minutes.
  • Mix 1/4 cup water, soy sauce, cornstarch, 1/2 tsp.
  • salt and pepper.
  • Stir into lamb mixture.
  • Add green pepper rings, reserving 2 or 3 rings for garnish.
  • Cook, stirring constantly until mixture thickens and boils.
  • Boil and stir 1 minute.
  • Fold in orange segments.
  • Serve over rice and garnish with reserved green pepper rings.
  • NOTE: Because of the saltiness of soy sauce, you may decrease or omit the salt in the sauce mixture.

1 tablespoon peanut oil
3 tablespoons unsalted butter
6 ounces tenderloin steak, cut into thin strips
1/2 cup julienned mixed vegetables, such as carrots, asparagus
1 ounce enoki mushrooms
1/2 cup quartered shiitake mushroom caps
1 tablespoon chopped scallions
1 tablespoon chopped ginger
1 tablespoon chopped garlic
Salt and freshly ground black pepper
1/3 cup plum wine
1/2 teaspoon ground cinnamon
2/3 cup beef stock
2 cups cooked Chinese egg noodles
2 tablespoons rice wine
8 to 10 endive leaves
2 tablespoon chopped green onion

Steps:

  • In a large skillet or wok, heat the peanut oil and 1 tablespoon butter. Over high heat, add the tenderloin strips and lightly sear on all sides. Remove the meat from the pan and set aside. Add the vegetables, enoki and shiitake mushrooms, scallion, ginger, and garlic and cook for 3 minutes. Season with salt and pepper, to taste.
  • Deglaze the pan with plum wine, add the cinnamon and reduce by half. Add the beef stock and continue to reduce until slightly thickened. Whisk in the remaining 2 tablespoons butter. Add the cooked noodles, the reserved meat, and the rice wine, and just heat through. Correct seasoning, to taste.
  • Place the endive around the edges of a large platter. Spoon the steak, noodles, and sauce in the center of the endive and garnish with chopped scallions. Serve immediately.

Steps:

  • Marinate lamb steaks in soy sauce seasoned with chopped garlic and grated ginger. Let the meat stand in this mixture for 5 to 6 hours and turn it often. Grill as for lamb steaks , brushing with the marinade during cooking. Omit salt and pepper.

1 4-5-pound boneless lamb shoulder
Kosher salt, freshly ground pepper
6 garlic cloves, thinly sliced
2 mandarin oranges or tangerines, unpeeled, thinly sliced into rounds
1 cup Taggiasca or other fruity, brine-cured black olives, pitted, coarsely chopped
2 tablespoons chopped fresh savory or rosemary
1 teaspoon crushed red pepper flakes
1 1/2 cups beef stock or low-sodium chicken broth
1 1/2 cups dry red wine
1 cup tomato purée

Steps:

  • Holding knife parallel to work surface, cut lamb lengthwise, following seam where bone was removed and stopping about 1/2" before you get all the way through. Open lamb like a book and season all over with salt and pepper. Close, wrap tightly in plastic, and chill at least 8 hours.
  • Preheat oven to 400°F. Open lamb and arrange garlic on bottom half, leaving a 1" border. Top with orange slices and olives. Sprinkle with savory and red pepper flakes. Close lamb and tie at 1" intervals with kitchen twine.
  • Place lamb on a wire rack set inside a large rimmed baking sheet. Roast until nicely browned, 30-40 minutes. Remove lamb from oven.
  • Reduce oven temperature to 300°F. Carefully transfer lamb to a large heavy ovenproof pot and add stock, wine, and tomato purée. Cover and braise lamb, basting with braising liquid every 30 minutes, until golden brown and fork-tender, 2 1/2-3 hours. Season with salt and pepper, if needed.
  • Transfer lamb to a cutting board and let rest at least 30 minutes before slicing. Serve with braising liquid.
  • DO AHEAD: Lamb can be seasoned 1 day ahead; keep chilled. Lamb can be braised 2 days ahead; cover and chill.

Steps:

  • Prepare barbecue (high heat). Whisk hoisin sauce, soy sauce, Sherry, chili oil, rice vinegar, and finely chopped garlic to blend in shallow dish; mix in 1/3 cup thinly sliced green onions. Add lamb and turn to coat. Let marinate 20 minutes.
  • Brush grill rack with oil. Grill lamb to desired doneness, about 3 minutes per side for medium-rare. Place 2 lamb chops on each plate. Sprinkle lamb with remaining green onions and serve.

  • Put chopped mixture in a bowl and add 2 tbl of canola oil, ½ tsp salt and ½ tsp pepper and blend.
  • Lamb Chop Preparation: Use 1 tsp salt and 1 tsp pepper to coat both sides of the lamb chops. Put chops in a shallow pie plate. Remove ¼ cup of the onion/orange mixture and coat the lamb chops. Let them marinade as you finish making the sauce.
