GOOD OL' CHEESE BURGER

Good ol' cheese burger image

This s soooo juicy. When buying hamber meat 80/20 is best higher counts make burger tough. If you make it on the grill what it so that the flame does not burn the out side. Rule of thumb, make the patty thinner in the center. Try to flip the burger after juice forms on the top. I said cook time is 30 min but you need to grill...

MOLTEN CHEESE-STUFFED BURGERS

Molten cheese-stuffed burgers image

Take burgers to the next level by stuffing them with cheddar and mozzarella for a gooey centre, and topping them with a dollop of herby burger sauce

Provided by Esther Clark

Categories     Dinner, Main course, Supper

Time 1h20m

Number Of Ingredients 19

1½ tbsp olive oil
1 onion , very finely chopped
70g smoked pancetta , finely chopped
1 garlic clove , crushed
4 thyme sprigs, leaves picked
500g lean beef mince (no more than 10% fat)
50g fresh breadcrumbs
1 egg yolk
60g mature cheddar , grated
60g grated mozzarella
120g mayonnaise
2½ tsp English mustard
½ small bunch of parsley , finely chopped
½ small bunch of basil
50g baby gherkins , finely chopped
4 seeded burger buns , split
2-3 Little Gem lettuces , leaves separated
2 ripe tomatoes , sliced
crispy fried onions

Steps:

  • Heat the oil in a frying pan over a medium heat and fry the onion with a good pinch of salt for 15 mins until soft and translucent. Add the pancetta and cook for 5 mins more, then add the garlic and thyme, and cook for 2 mins. Remove from the heat and leave to cool for 15 mins.
  • Tip the mince into a large bowl. Massage with your hands for 5 mins to tenderise the meat, then add the cooled onion mix, the breadcrumbs and egg yolk. Season generously. Divide evenly into four, weighing for accuracy, if you like. Mix the cheddar and mozzarella together. Form the beef portions into patties, patting each into a 10cm round. Divide the cheese mixture into four, and, in your hands, form each portion into a firm ball, then press into a roughly 4cm disc. Working one at a time, put a cheese disc into the centre of a beef patty, then bring the meat around the cheese to cover. Lightly pat with the palm of your hand to flatten slightly, then chill, covered, for at least 30 mins or up to 48 hrs.
  • Make the sauce by whizzing the mayonnaise, mustard and herbs together in a small food processor. Stir through the gherkins, then cover and chill until ready to use.
  • Light the barbecue. When the flames have died down, grill the burgers on each side for 4-5 mins until charred (if you don't have a barbecue, see tip, below). Wrap individually in foil and leave on the barbecue for 5-7 mins so the cheese centre melts.
  • Grill the buns, cut-side down, for 1-2 mins until toasted. Spread all the cut sides with the sauce, then fill with the beef patties, lettuce, tomatoes and crispy onions.

THE BIG DOUBLE CHEESEBURGER & SECRET SAUCE

The big double cheeseburger & secret sauce image

Forget the takeaway and make homemade cheeseburgers - double decker versions. With gherkins, crisp lettuce and a secret sauce, they take some beating

Provided by Barney Desmazery

Categories     Dinner

Time 40m

Number Of Ingredients 15

1 small onion, finely chopped
4 sesame-topped burger buns
300g steak mince
1 tbsp sunflower oil
small wedge of iceberg lettuce, finely shredded
2 slices of mild cheddar or burger cheese
1 gherkin sliced lengthways
oven fries, to serve
100g mayonnaise
1 tbsp American mustard
large pinch garlic granules
large pinch onion granules
¼ tsp smoked paprika
1 tbsp white wine vinegar
1 tsp pickle relish or finely chopped gherkin

Steps:

  • Tip the onions into a small bowl and pour over boiling water from the kettle until just covered. Leave to cool. Put all the sauce ingredients in another small bowl, then add 1 tbsp of the cooled onion water and mix until everything is evenly combined. Set aside.
  • Halve two of the burger buns, then cut a thick slice from the middles of the other two buns. Toast or grill the middle slices on both sides and the other buns only on the cut sides, then set aside. Heat the oven to 100C/80C fan/gas 2.
  • Divide the mince into four loose piles and season. Heat ¼ tbsp of the oil in a heavy frying pan or skillet over a high heat and put one of the piles of beef in the pan. Working quickly, cover with a square of baking parchment and carefully use a second pan to press the beef patties down - be careful of the heat and rising steam as you do this. Keep the patties pressed down for about 10 seconds, then remove the weight and the paper, and leave the burger to cook for 2 mins more. Turn the patties and press down using a spatula, cooking for another 1 min. Transfer to a tray and keep warm in the oven while you cook the other burgers in the same way.
  • When all the patties are cooked, it's time to assemble the burgers. Spread some sauce over the bun bases, scatter with onions, then add lettuce, followed by a cheese slice, then a patty, a few gherkin slices and a middle slice of toasted bun. Spread over more sauce, then add more onions, lettuce, another patty and the bun tops. Serve with the oven fries and extra sauce on the side, if you like.

8 BEST CHEESES FOR BURGERS - FOOD & WINE
8-best-cheeses-for-burgers-food-wine image

From foodandwine.com
Estimated Reading Time 3 mins
  • American Cheese. Melty American cheese is a match made in heaven with burgers. Pair it with Hatch chile salsa in a "queso-like moment" in these spicy Hatch Chile Smash Burgers.
  • Brie. Ultra-gooey, creamy Brie can take your burger to the next level. Try it melted on top of these Bacon Burgers on Brioche Buns.
  • Cheddar. Another classic burger topping, cheddar cheese is one of the starring ingredients in these BLT Burgers with Tarragon Russian Dressing. (Tip: if you want to pair it with wine, we suggest a firm Cabernet.)
  • Monterey Jack. One of the best cheeses for melting, Monterey Jack is perfect for a super-gooey cheese sauce like the one on Bobby Flay's Nacho Burgers. Thanks to its robust but relatively mild taste, Monterey Jack can also stand up to bold flavors like those in Michael Symon's 50/50 Burgers made with hot Italian sausage and ground chuck.
  • Pepper Jack. Michael Symon's Atomic Chile Jack Cheeseburgers combine pepper jack cheese with ghost chile powder, and it all gets rounded out with mayonnaise, sliced red onion, pickled jalapeños, and cilantro for fixings.
  • Provolone. Top these Italian-Sausage Burgers—made with your choice of sweet or hot Italian sausages, or even a combination of the two—with provolone, sun-dried-tomato pesto, and silky spinach flavored with anchovy paste and garlic.
  • Smoked Gouda. Smoked Gouda and smoky barbecue sauce are a perfect match—try the pairing on these patty melt-style burgers.
  • Stilton. Pungent, salty Stilton is perfect for big, bold burgers like these Umami Burgers from Adam Fleischman, topped with a port reduction and (optional) Umami dust.
