- In a large pot of boiling salted water, cook pasta until al dente. Reserve 1 cup pasta water; drain pasta, and return to pot. Set aside.
- While pasta is cooking, heat oil in a large nonstick skillet over medium-high. Add sausage; cook, breaking up with a wooden spoon, until browned and cooked through, 4 to 6 minutes. With a slotted spoon, transfer sausage to a plate; set aside (reserve skillet with rendered fat).
- To skillet, add onion, 2 tablespoons water, and as much cabbage as will fit; season with salt and pepper. Cover; cook until tender, tossing occasionally and adding more cabbage as space becomes available, 6 to 10 minutes.
- To pasta, add cabbage mixture and sausage. Toss with enough pasta water to create a sauce. Season with salt and pepper, and stir in vinegar.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.

- Preheat the oven to 350˚ F. Spread the walnuts on a baking sheet and bake until toasted, about 10 minutes. Finely chop.
- Bring a large pot of salted water to a boil. Meanwhile, heat 1 tablespoon butter in a large skillet over medium-high heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until well browned, 4 to 5 minutes. Remove the sausage to a bowl.
- Add 1 more tablespoon butter to the skillet. Add the onion and cabbage and cook, stirring, until the cabbage is wilted, about 5 minutes; season with salt and pepper. Add 1 cup hot water (from the pot) and cover the skillet. Reduce the heat to medium and simmer until the cabbage is tender, about 5 minutes. - Meanwhile, add the gnocchi to the boiling water and cook as the label directs. Using a slotted spoon, transfer the gnocchi directly to the skillet; add 1 cup cooking water and the remaining 1 tablespoon butter. Increase the heat to medium high and simmer until the sauce is thickened, 2 to 3 minutes, adding more cooking water as needed to loosen.

- Preheat a large heavy bottom skillet over medium heat and add a good lug of olive oil.
- Add the sliced onions and a pinch of sea salt. As the onion starts to soften and release its water content turn up the heat so the liquid evaporates and the onion starts to get some color.
- Pan fry the onions until nicely golden with crispy edges. Stir in the chili flakes if using. Add 1 tablespoon of the fennel seeds and toast with the onion until fragrant.
- Stir in the smoked paprika and tomato paste and cook for a few minutes until the sugars begin to caramelize.
- Add the shredded cabbage, season with a pinch of salt and black pepper then mix everything well, scraping any brown bits from the bottom.
- Stir in the liquid smoke if using and cook down the cabbage until wilted and softened and the sugars start to caramelize again on the bottom. You want little golden bits only so be careful not to burn it.
- Push the mixture to the side and add a light drop of olive oil to toast the remaining fennel seeds and infuse a new layer of flavor into your dish.
- Stir in the cannellini beans and toss to coat well. Cook only until warmed through. Adjust seasonings and serve with fresh parsley or dill, fresh bread or bruschetta.

- In a large mixing bowl put the onions, cabbage and garlic. Set aside.
- In a dutch oven, or other large vessel, put the olive oil. Slice the sausages (hot or mild) into bite-size pieces, adding more if you want more meat.

- Bring a large pot of heavily salted water to a boil. Add the pasta and cook, stirring occasionally, until al dente, about 7 minutes; drain.

- Bring a large pot of water to a boil and salt it. Add the cabbage, bring back to a boil and cook until just tender, about 3 minutes; use a slotted spoon or small strainer to fish it out. Drain, and let sit. (You can shock it in a bowl of ice water to keep it on the crisp side but I prefer it soft.) When the water returns to a boil, add the pasta and cook until tender but firm; start checking after 7 minutes. Drain, reserving at least 1 cup of the cooking liquid.
- Return the pot to medium heat (no need to rinse it) and add the oil. When it is hot, add the leeks, celery and a heavy pinch of salt and cook, stirring occasionally until soft, 3 to 5 minutes. Add the thyme and prosciutto and stir until fragrant, just a minute or 2.
- Add the cabbage, beans and pasta. Add 1 cup of the reserved pasta or bean cooking liquid and cook, stirring once in a while, until the flavors blend and everything is hot, about 5 minutes more. If the mixture dries out, add a little liquid; it should be saucy but not soupy.
- Sprinkle with the cheese and toss to combine. Taste and adjust the seasoning. Serve, passing more cheese at the table.

- Cook the tortellini as per package directions, drain reserving 3 tablespoons cooking liquid.
- Place the sausages in boiling water and cook until firm, remove and cool until cool enough to handle. Thinly slice the sausage.
- Over medium heat, melt the butter and add olive oil, cook sausages through until nicely browned; stir in onions, minced garlic and cabbage.
- Saute for 5 minutes or until cabbage is crisp tender; stir in drained cooked tortellini, fennel seeds, red pepper flakes and pimentos. Season with salt and lots of freshly ground black pepper to taste.

- Sauté with a little olive oil, the cabbage, bell pepper, onion and garlic in large dutch oven or wok over medium-high heat. Stir occasionally and when the cabbage mixture has cooked down to about half the volume, add tomatoes and chicken broth along with the sausage. Once it comes to a boil, add pasta and cook until pasta is al dente. If the mixture becomes dry to where it starts burning and the pasta isn't absorbing anymore water but is dry, turn down the heat a notch to medium add 2 cups water or more over time and cook until the pasta is al dente. You want the liquid to be absorbed by the pasta but not runny. (The amount of liquid is dependent on the amount of moisture in the cabbage) Serve with grated Parmesan Romano cheese.
PAPPARDELLE PASTA WITH ITALIAN SAUSAGE
This is a delicious comfort food recipe that's done in as little as 30 minutes. It's perfect for school nights!

- Heat the olive oil in a large (12-inch) skillet. Add the onion and saute over medium heat until translucent, 5 to 10 minutes.
- Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes.
- Stir in the tomatoes, parsley, salt, and pepper. Cover, and simmer on the lowest heat for 15 minutes.
- Pappardelle pasta is a distinctive wide-ribbon pasta. Since it's not commonly available, a quick and easy way to make it is to start with lasagne pasta strips. (Sshhh! Don't tell your secret.) Cook pasta according to directions. Before pasta is cooked to al-dente stage, add 1 Tbsp. extra virgin olive oil to the pot and stir.
- Drain pasta and cool slightly with cold running water. Drain and drizzle another 2 Tbsp. of extra virgin olive oil and toss. Set aside to cool. Once the pasta has cooled, fold each strip in half and cut to desired width.
- Heat large frying pan to medium heat. Drizzle 1 Tbsp. extra virgin olive oil and add chopped onions. Saute the onions on low-medium heat until softened.
- Turn heat back up to high and add sausages. Stir and sear sausages until golden. Add pesto sauce and stir. Turn heat back down to low-medium and add pasta/marinara sauce. Season with salt and pepper to taste. Add pappardelle (or cut lasagna strips) and toss to coat evenly for about 2 to 3 minutes.
- Turn heat off and add fresh oregano and fresh basil. Toss and plate. Top with freshly grated parmigiano reggiano and fresh cracked pepper.

- Preheat oven to 400 degrees.
- Slice cabbage into thin strips. Discard large stem pieces. Place in a 9x13-inch baking dish.
- Slice onion into thin strips and add to the baking dish. Mince garlic and add to the baking dish with the cabbage and onion. Lightly toss to combine.
- Cut butter into pats and spread evenly over the cabbage. Cut cream cheese into cubes and spread over cabbage.

- Once the cabbage is done baking, remove it from the oven and mix in the lemon juice and parmesan cheese. Top with the sausage pieces and gently mix them in with the cabbage. Place the baking dish back in the oven and bake for another 10 minutes to melt the cheese.
- While the cheese is melting, chop the fresh parsley. When done, remove the dish from the oven and garnish it with parsley. Enjoy!
