Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 35m

Number Of Ingredients 7

Coarse salt and ground pepper
8 ounces spaghetti
1 teaspoon olive oil
1 pound sweet Italian sausage, casings removed
1 large red onion, halved and thinly sliced
1 head Savoy or green cabbage (about 2 pounds), halved, cored, and thinly sliced
1 tablespoon white-wine vinegar

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente. Reserve 1 cup pasta water; drain pasta, and return to pot. Set aside.
  • While pasta is cooking, heat oil in a large nonstick skillet over medium-high. Add sausage; cook, breaking up with a wooden spoon, until browned and cooked through, 4 to 6 minutes. With a slotted spoon, transfer sausage to a plate; set aside (reserve skillet with rendered fat).
  • To skillet, add onion, 2 tablespoons water, and as much cabbage as will fit; season with salt and pepper. Cover; cook until tender, tossing occasionally and adding more cabbage as space becomes available, 6 to 10 minutes.
  • To pasta, add cabbage mixture and sausage. Toss with enough pasta water to create a sauce. Season with salt and pepper, and stir in vinegar.

GNOCCHI WITH SAUSAGE AND CABBAGE

Gnocchi with Sausage and Cabbage image

Hearty gnocchi and Italian sausage make this a satisfying dish on a cold day. The unsung hero, however, is the humble green cabbage, which gets cooked until it's soft and sweet.

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 10

1/3 cup walnuts
Kosher salt
3 tablespoons unsalted butter
8 ounces mild Italian sausage, casings removed
1 small onion, chopped
1/2 small head green cabbage, cut into bite-size pieces (6 cups)
Freshly ground pepper
1 17.5-ounce package potato gnocchi
1/3 cup grated Parmesan cheese
1/4 cup fresh parsley, roughly chopped

Steps:

  • Preheat the oven to 350˚ F. Spread the walnuts on a baking sheet and bake until toasted, about 10 minutes. Finely chop.
  • Bring a large pot of salted water to a boil. Meanwhile, heat 1 tablespoon butter in a large skillet over medium-high heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until well browned, 4 to 5 minutes. Remove the sausage to a bowl.
  • Add 1 more tablespoon butter to the skillet. Add the onion and cabbage and cook, stirring, until the cabbage is wilted, about 5 minutes; season with salt and pepper. Add 1 cup hot water (from the pot) and cover the skillet. Reduce the heat to medium and simmer until the cabbage is tender, about 5 minutes. Uncover, increase the heat to medium high and cook until the skillet is dry, 2 to 3 minutes. Stir in the sausage to reheat, about 1 minute. Keep warm on low heat.
  • Meanwhile, add the gnocchi to the boiling water and cook as the label directs. Using a slotted spoon, transfer the gnocchi directly to the skillet; add 1 cup cooking water and the remaining 1 tablespoon butter. Increase the heat to medium high and simmer until the sauce is thickened, 2 to 3 minutes, adding more cooking water as needed to loosen.
  • Divide the gnocchi among bowls. Top with the chopped walnuts, Parmesan and parsley.

ITALIAN CABBAGE

Italian Cabbage image

Italian cabbage with sweet and smoky notes from fennel, tomato, onion and smoked paprika. Add some buttery cannellini beans or some plant based sausage to make a meal of things, It's the perfect meatless weeknight dinner, easy, super flavorful and nutritious.

Provided by Florentina

Categories     Entree

Time 45m

Number Of Ingredients 10

1/2 green cabbage (thinly sliced or shredded)
1 large onion (thinly sliced)
1.5 tbsp tomato paste
1.5 tbsp fennel seed
2 tsp smoked paprika
1 tsp liquid smoke (or to taste)
sea salt + black pepper to taste
15 oz can canellini beans (drain and rinsed)
1 pinch red pepper flakes (optional to taste)
olive oil

Steps:

  • Preheat a large heavy bottom skillet over medium heat and add a good lug of olive oil.
  • Add the sliced onions and a pinch of sea salt. As the onion starts to soften and release its water content turn up the heat so the liquid evaporates and the onion starts to get some color.
  • Pan fry the onions until nicely golden with crispy edges. Stir in the chili flakes if using. Add 1 tablespoon of the fennel seeds and toast with the onion until fragrant.
  • Stir in the smoked paprika and tomato paste and cook for a few minutes until the sugars begin to caramelize.
  • Add the shredded cabbage, season with a pinch of salt and black pepper then mix everything well, scraping any brown bits from the bottom.
  • Stir in the liquid smoke if using and cook down the cabbage until wilted and softened and the sugars start to caramelize again on the bottom. You want little golden bits only so be careful not to burn it.
  • Push the mixture to the side and add a light drop of olive oil to toast the remaining fennel seeds and infuse a new layer of flavor into your dish.
  • Stir in the cannellini beans and toss to coat well. Cook only until warmed through. Adjust seasonings and serve with fresh parsley or dill, fresh bread or bruschetta.

PASTA WITH SAUSAGE, CARAMELIZED CABBAGE AND GOAT CHEESE

Pasta With Sausage, Caramelized Cabbage and Goat Cheese image

Pasta with cabbage is a common combination across much of Central and Eastern Europe. In this quick weeknight meal, an entire head of cabbage is cooked in the fat left behind by sweet Italian sausage. Goat cheese adds tang and helps create a cream sauce that ties everything together. Feel free to use this recipe as a guideline to come up with your own variation: Try it with your favorite shape of pasta, swap out the thyme for dill, parsley or another herb, or substitute the goat cheese for Parmesan.

Provided by Aaron Hutcherson

Categories     dinner, weekday, pastas, main course

Time 45m

Yield 6 servings

Number Of Ingredients 9

Kosher salt and black pepper
8 ounces dry rotini or other shaped pasta
4 tablespoons extra-virgin olive oil
8 ounces sweet Italian sausage, casings removed
1 small head savoy cabbage (about 1 1/2 pounds), quartered, cored and thinly sliced
1 medium yellow onion, thinly sliced
1 teaspoon fresh thyme leaves
1 cup heavy cream
4 ounces goat cheese

Steps:

  • Bring a large pot of heavily salted water to a boil. Add the pasta and cook, stirring occasionally, until al dente, about 7 minutes; drain.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet or Dutch oven over medium. Add the sausage and cook, breaking apart with a wooden spoon, until fully cooked and crumbled, about 5 minutes. Using a slotted spoon, transfer the sausage to a plate, leaving the fat in the pan.
  • Add the cabbage, onion, thyme, 1 teaspoon salt, 1/2 teaspoon pepper and the remaining 2 tablespoons olive oil to the skillet. Cover and cook, stirring regularly, until the cabbage has completely wilted and starts to brown, about 15 minutes.
  • Reduce the heat to low and stir in the heavy cream, goat cheese and reserved sausage until evenly combined. Stir in the pasta, season to taste with salt and pepper and serve.

WHITE BEANS WITH CABBAGE, PASTA, AND PROSCIUTTO

White Beans with Cabbage, Pasta, and Prosciutto image

I used to think you needed chicken stock for richness, but water creates a potent cooking liquid when the ingredients have plenty of flavor.

Provided by Food Network

Categories     main-dish

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 10

Salt and pepper
1/2 large cabbage, preferably savoy, chopped (about 3 cups)
8 ounces small pasta like cavatelli or orecchiette
2 tablespoons olive oil
2 medium leeks, chopped and rinsed well (about 2 cups)
1 celery stalk, chopped
2 to 4 sprigs fresh thyme
2 ounces prosciutto, chopped (about 1/4 cup)
Three 15.5-ounce cans white beans, such as cannellini, drained
1/2 cup grated Parmesan or Pecorino-Romano cheese, plus more for serving

Steps:

  • Bring a large pot of water to a boil and salt it. Add the cabbage, bring back to a boil and cook until just tender, about 3 minutes; use a slotted spoon or small strainer to fish it out. Drain, and let sit. (You can shock it in a bowl of ice water to keep it on the crisp side but I prefer it soft.) When the water returns to a boil, add the pasta and cook until tender but firm; start checking after 7 minutes. Drain, reserving at least 1 cup of the cooking liquid.
  • Return the pot to medium heat (no need to rinse it) and add the oil. When it is hot, add the leeks, celery and a heavy pinch of salt and cook, stirring occasionally until soft, 3 to 5 minutes. Add the thyme and prosciutto and stir until fragrant, just a minute or 2.
  • Add the cabbage, beans and pasta. Add 1 cup of the reserved pasta or bean cooking liquid and cook, stirring once in a while, until the flavors blend and everything is hot, about 5 minutes more. If the mixture dries out, add a little liquid; it should be saucy but not soupy.
  • Sprinkle with the cheese and toss to combine. Taste and adjust the seasoning. Serve, passing more cheese at the table.

ITALIAN PASTA WITH CABBAGE AND SAUSAGE

ITALIAN PASTA WITH CABBAGE AND SAUSAGE image

Categories     Pasta     Sauté     Quick & Easy

Yield 6 People

Number Of Ingredients 8

1 small cabbage, shredded
1 red bell pepper, chopped
1 small onion chopped
2 cloves garlic, minced
2 - 15 Oz. cans chicken broth
1 - 15 Oz. can tomatoes with basil and oregano (you could use regular tomatoes and add 1/2 tsp. each dried basil and oregano)
1 pound package pre-cooked Mozzarella and garlic chicken
1 - 13.25 Oz. box whole wheat penne

Steps:

  • Sauté with a little olive oil, the cabbage, bell pepper, onion and garlic in large dutch oven or wok over medium-high heat. Stir occasionally and when the cabbage mixture has cooked down to about half the volume, add tomatoes and chicken broth along with the sausage. Once it comes to a boil, add pasta and cook until pasta is al dente. If the mixture becomes dry to where it starts burning and the pasta isn't absorbing anymore water but is dry, turn down the heat a notch to medium add 2 cups water or more over time and cook until the pasta is al dente. You want the liquid to be absorbed by the pasta but not runny. (The amount of liquid is dependent on the amount of moisture in the cabbage) Serve with grated Parmesan Romano cheese.

PAPPARDELLE PASTA WITH ITALIAN SAUSAGE

Pappardelle Pasta with Italian Sausage image

This is a delicious comfort food recipe that's done in as little as 30 minutes. It's perfect for school nights!

Provided by Donna Berrns

Categories     Main Dish

Yield 4 people

Number Of Ingredients 18

4 links Harvest Meats Italian Sausage (sliced, 1/4" thick)
650 ml pasta/marinara sauce (store-bought, or see recipe below)
1 medium yellow onion (chopped)
2 Tbsp. pesto
500 grams pappardelle or lasagne pasta
1 sprig fresh oregano
4 stems fresh basil
100 grams parmigiano reggiano (grated)
4 Tbsp. extra virgin olive oil
salt & pepper (to taste)
1 can (796 ml) crushed tomatoes
1 Tbsp. extra virgin olive oil
1 medium yellow onion (chopped)
1 1/2 tsp. garlic (minced)
1/2 cup good red wine, such as Chianti
1 Tbsp. fresh flat-leaf parsley (chopped)
1 1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper

Steps:

  • Heat the olive oil in a large (12-inch) skillet. Add the onion and saute over medium heat until translucent, 5 to 10 minutes.
  • Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes.
  • Stir in the tomatoes, parsley, salt, and pepper. Cover, and simmer on the lowest heat for 15 minutes.
  • Pappardelle pasta is a distinctive wide-ribbon pasta. Since it's not commonly available, a quick and easy way to make it is to start with lasagne pasta strips. (Sshhh! Don't tell your secret.) Cook pasta according to directions. Before pasta is cooked to al-dente stage, add 1 Tbsp. extra virgin olive oil to the pot and stir.
  • Drain pasta and cool slightly with cold running water. Drain and drizzle another 2 Tbsp. of extra virgin olive oil and toss. Set aside to cool. Once the pasta has cooled, fold each strip in half and cut to desired width.
  • Heat large frying pan to medium heat. Drizzle 1 Tbsp. extra virgin olive oil and add chopped onions. Saute the onions on low-medium heat until softened.
  • Turn heat back up to high and add sausages. Stir and sear sausages until golden. Add pesto sauce and stir. Turn heat back down to low-medium and add pasta/marinara sauce. Season with salt and pepper to taste. Add pappardelle (or cut lasagna strips) and toss to coat evenly for about 2 to 3 minutes.
  • Turn heat off and add fresh oregano and fresh basil. Toss and plate. Top with freshly grated parmigiano reggiano and fresh cracked pepper.

Keto Fettuccine Alfredo w/ Sausage & Cabbage image

Sliced cabbage "noodles" roasted with onions, garlic, and a keto alfredo sauce made with cream cheese, sour cream, butter, and heavy whipping cream, then topped with sausage.

Provided by Emily (Hip Sidekick)

Yield 8 servings

Number Of Ingredients 14

1 medium head of cabbage
1 medium yellow onion
4 garlic cloves, minced
1/4 cup salted butter (half a stick) + 2 tablespoons, divided
2 - 8oz. blocks full-fat cream cheese
1/2 cup full-fat sour cream
1/4 cup heavy whipping cream
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic powder
Lemon juice from 1 large lemon
1 cup parmesan cheese, shaved or shredded
1 pound Italian sausage links
2 tablespoons parsley, chopped, to garnish

Steps:

  • Preheat oven to 400 degrees.
  • Slice cabbage into thin strips. Discard large stem pieces. Place in a 9x13-inch baking dish.
  • Slice onion into thin strips and add to the baking dish. Mince garlic and add to the baking dish with the cabbage and onion. Lightly toss to combine.
  • Cut butter into pats and spread evenly over the cabbage. Cut cream cheese into cubes and spread over cabbage.
  • Dollop sour cream evenly over the cabbage. Pour the heavy whipping cream over the cabbage mixture.
  • Sprinkle the salt, pepper, and garlic powder over the cabbage mixture.
  • Bake cabbage for 35 to 40 minutes, until just starting to brown.
  • While the cabbage is baking, cook the sausage links. Melt 2 tablespoons butter in a skillet over medium heat. Place sausages in skillet and brown all sides until fully cooked, about 15 to 20 minutes. Remove from heat and let rest for a few minutes, then slice each sausage link into 6 pieces.
  • Once the cabbage is done baking, remove it from the oven and mix in the lemon juice and parmesan cheese. Top with the sausage pieces and gently mix them in with the cabbage. Place the baking dish back in the oven and bake for another 10 minutes to melt the cheese.
  • While the cheese is melting, chop the fresh parsley. When done, remove the dish from the oven and garnish it with parsley. Enjoy!
