Healthy Deep Dark Chocolate Muffins image

This is my recipe for a dark, deep, moist, intensely chocolate muffin. And it is actually healthy and high in fiber! I recommend using whole wheat pastry flour in this recipe, Bob's Red Mill make a great one. The pastry flour makes all of the difference in the world as well as the instant espresso which intensifies the chocolate flavor by leaps and bounds, enjoy!

Number Of Ingredients 12

1 3/4 cups whole wheat pastry flour
1 cup unsweetened cocoa
3/4 cup Splenda granular
1/2 cup brewed coffee, hot strong
2 teaspoons baking soda
1/2 teaspoon salt
1 cup low-fat buttermilk, shaken
1 cup unsweetened applesauce
1 egg
2 egg whites
1 teaspoon vanilla
1/3 cup canola oil

Steps:

  • Coat a 12 cup muffin pan with cooking spray.
  • In a mixing bowl, add the flour, cocoa powder, hot strong brewed coffee,splenda (or stevia), baking soda, and salt; stir to combine.
  • In another bowl, add the buttermilk, applesauce, eggs, oil and vanilla; whisk until blended.
  • Add the liquid ingredients to the dry ingredients. Mix just until well combined, do not overmix.
  • Pour batter evenly into muffin cups.
  • Bake at 375 degrees for 20-25 minutes or until pick comes out clean.

From mom's "Deep Dark Chocolate Cake" recipe... No white, all-purpose flour in the house, so I used the whole wheat! :)

IN MIXING BOWL PLACE:
* 1 3/4 cups Whole Wheat Flour
* 3/4 cup Cocoa Powder, unsweetened
* 1 1/2 tsp. Baking Soda
* 2 large Eggs
* 1/2 cup Canola Oil
* 2 cups Granulated Sugar
* 1 1/2 tsp. Baking Powder
* 1 tsp. Salt
* 1 cup Milk, 1%
* 1 tbsp. Vanilla Extract

Steps:

  • Mix all together in a large mixing bowl for two minutes, then add one cup boiling water.
  • Divide batter amongst 12 'jumbo muffin cups' (two pans of six cups) which have been greased or sprayed with non-stick spray.
  • Bake at 350 F for about 20 minues, or until done.
  • Invert onto wire rack to cool, and store in an air-tight container after cooling for a while.
  • Enjoy! Good with milk poured over top (better for you), or served with ice cream (worse for you - LOL!) :)

1 large sweet potato (or 2 small sweet potatoes)
Nonstick cooking spray
1 1/2 cups pastry flour
1 cup whole-wheat flour
2 1/2 teaspoons baking powder
1/2 teaspoon ground allspice
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
2 large eggs
1/2 cup (1 stick) unsalted butter, melted
1/2 cup whole milk
1/4 cup canola oil
1/4 cup plain full-fat Greek yogurt
1 cup bittersweet chocolate chips
1/4 cup rolled oats

Steps:

  • Poke holes in the sweet potato with a fork or skewer and microwave until soft, about 15 minutes. Let cool completely in the fridge. Scoop 1 cup of the sweet potato flesh into a large bowl and whip with a fork until evenly mashed. Reserve any extra sweet potato for another use.
  • Preheat the oven to 375 degrees F. Line a muffin tin with 12 liners and spray with nonstick cooking spray.
  • Whisk together the pastry flour, whole-wheat flour, baking powder, allspice, salt, baking soda and cinnamon in a large bowl.
  • Add the eggs to the sweet potato and whisk to combine. Whisk in the melted butter, milk, oil and yogurt.
  • Pour the wet mixture into the dry ingredients and gently fold together until just mixed. Fold in the chocolate chips.
  • Evenly divide the batter between the prepared muffin cups and sprinkle the tops with the oats. Bake until golden and a toothpick inserted into the center of each muffin comes out clean, about 35 minutes. Allow to cool slightly on a rack.

  • If you want a layer cake, use two 9-inch pans.
  • In large bowl, stir together sugar, flour, cocoa, baking soda, baking powder and salt.
  • Add eggs, buttermilk, coffee (if making with instant, use 2 tsp to make 1 cup), oil and vanilla; beat on medium speed of electric mixer 2 minutes. Batter will be thin.
  • Pour into prepared pan.
  • Bake until cake tester inserted in centre comes out clean (30-35 minutes for round pans, 35-40 minutes for rectangular pans).
  • Cool 10 minutes; (if using 9-inch round cake pans, remove from pan) and cool on wire racks.
  • Cool completely, then frost with your favourite vanilla icing.

6 tablespoons margarine, softened
2 2/3 cups powdered sugar

Steps:

  • Heat oven to 350°F Grease and flour two 9-inch round pans or one 13x9x2-inch baking pan.
  • Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of electric mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
  • Bake 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. (Cake may be left in rectangular pan, if desired.) Frost with ONE-BOWL BUTTERCREAM FROSTING. 8 to 10 servings.
