VERY EASY HASH BROWN

Very Easy Hash Brown image

A very easy and tasty hash brown recipe. You can also add some bacon, onions, herbs, etc. to it. Experiment yourself!! You will need a large clean towel to remove the juice from the potatoes, and this step is very important, otherwise it won't come out crispy. Also, be generous on the amount of oil when you cook the hash brown, oil makes it crispier.

Provided by Icy2097

Categories     Breakfast

Time 15m

Yield 1 big hash brown, 1 serving(s)

Number Of Ingredients 3

1 large potato
1 pinch salt
1 pinch pepper

Steps:

  • Peel the skin of potatoes if they are dirty, otherwise you can also leave them on.
  • Fine julienne cut the potatoes ( I used the julienne cut on my hand slicer).
  • Try to squeeze all the juice from the potatoes with a towel.
  • Flavor with salt and pepper according to taste.
  • Heat oil on a skillet pan (non-stick is a good choice). Be generous on the oil, it will make your hash brown very crispy.
  • On medium-high heat, pour the potatoes on the pan and try to make it flat and round. Do not stir it.
  • Turn it over when golden brown and it's done when both sides are golden and crispy.

Categories     Breakfast

Time 1h25m

Number Of Ingredients 13

1 (30-ounce) package frozen shredded hashbrowns
1/2 cup melted butter (1 stick)
salt and pepper
1 & 1/2 cups shredded Monterey Jack cheese (packed )
1 & 1/2 cups shredded Cheddar cheese (packed )
1 & 1/2 cups black forest ham* (cut into bite-size pieces)
8 large eggs
1 & 1/3 cups evaporated milk OR cream
1 teaspoon seasoned salt (I like Lawry's)
1/2 teaspoon kosher salt (use 1/4 if all you have is table salt)
1/2 teaspoon pepper
1/4 teaspoon dry mustard powder (optional)
1/4 teaspoon onion powder (optional)

Steps:

  • Preheat your oven to 400 degrees F.
  • Spray a 9x13 inch pan with nonstick spray, or grease with butter.
  • Dump the bag of frozen hashbrowns into the pan. (There is no need to thaw first.)
  • Melt a stick of butter in a small bowl, and pour evenly over the potatoes. Sprinkle the potatoes with salt and pepper. Use a spoon to gently toss it all together, then spread it out so that it's even.
  • Bake at 400 degrees for 25-30 minutes, until the potatoes are tender and lightly browned on top. You can even nab a forkful to make sure they are done if you like.
  • Remove the casserole and reduce the oven temperature to 350.
  • Layer 1 and 1/2 cups each Monterey Jack and Cheddar cheese over the top of the potatoes (make sure you pack in your cheese! Don't skimp now!) Add the ham. You can either leave it layered or use a spoon to gently toss the cheese and potatoes and ham together. Either way is fine. (I like to toss for a more even distribution.)
  • In a large bowl or stand mixer, whisk together 8 eggs, 1 and 1/3 cups evaporated milk OR cream, 1 teaspoon seasoned salt, 1/2 teaspoon kosher salt (use less if all you have is table salt!), 1/2 teaspoon pepper, 1/4 teaspoon dry mustard, and 1/4 teaspoon onion powder. Beat well.
  • Pour the egg mixture evenly over the top of the casserole, making sure everything gets wet.
  • Bake at 350 degrees for about 40 minutes. It is done when bubbly. The edges should be starting to brown and the center should not wiggle when you shake the pan.
  • If the center of the casserole looks very wobbly but the top is starting to brown too much, cover with foil for the last few minutes of baking.

  • Choose The Main Meat. Leftover cooked meat or poultry are natural beginnings for hash. If you can shred it, you can hash it. Corned beef, carnitas, brisket, duck confit, roast chicken, and turkey are all perfect for hash.
  • Add One Type of Allium and One Kind of Potato. Onion, leek, pearl onion, or shallot: take your pick of allium and dice it. (You don't even need a whole onion—this is the perfect time to use up that half onion leftover from another meal.)
  • Add Other Vegetables. Meat and potatoes may be the foundation of hash, but don't miss the opportunity to add some extra veggies. This is where those leftover sautéed mushrooms you have sitting in the fridge come in, or that single ear of grilled corn on the cob leftover from the weekend's cookout, or that big bunch of kale you need to make a dent in.
  • Put an Egg On It. Sometimes I cook my eggs right in the hash. Sometimes I like to cook them on the side. (I prefer a soft-boiled 5-minute egg.) Do whichever you prefer, but know that if you cook them right in the hash, you'll have one less pot to wash.
  • Garnish and Serve. A flurry of chopped fresh herbs is my favorite way to finish a skillet of hash. A sprinkling of cheese works too. Then again, so does some salt and pepper.

  • Perfect Home Fries. Use a waxy potato variety like red potatoes or round red potatoes for the best crispy home fries. If they're in season, small new potatoes would also work great.
  • Homemade Hash Browns. Once you try making your own crispy shredded hash browns, you'll say, "Ore Ida who?" Either a box grater or the grate attachment of a food processor would work.
  • Sweet Potato Hash. Sweet potatoes give this hearty breakfast hash a different twist that takes just 45 minutes to come together entirely. Red bell pepper gives it color and extra nutrients, while smoked sausage makes it substantial enough to hold you over well into the afternoon.
  • Skillet Potatoes with Peppers. Add some red bell pepper, garlic, onion, and a hint of paprika to red skinned potatoes for zesty home fries. Any waxy or medium starchy potatoes would also work, as long as they have enough heft to stay together when skillet frying.
  • Hash Brown Casserole. Creamy, cheesy, and chock full of shredded hash browns, this hearty casserole makes an excellent brunch side dish for a large gathering or potluck.
  • Grilled Hash Brown Potatoes. These foil packet hash brown potatoes work great for camping, tailgating, or any outdoor get-together. Squeeze out as much water as you can before assembling the packets, or else they'll steam instead of browning.
  • Slow Cooker Hash Browns. For a late brunch, potluck lunch or breakfast-for-dinner, these creamy slow cooker hash browns make a wonderful make-ahead dish.
  • Potato and Ham Hash. Because they include both diced ham and potatoes, this simple Southern potato hash can also serve as a main dish if you pair it with some scrambled eggs or top it with an over-easy egg.
  • Hash Browns with Onion. Adding a little sweet onion to your hash browns gives them a slightly sweeter flavor that complements your breakfast or brunch perfectly.
  • Hash Brown Latkes. Squeeze as much water out of your shredded potatoes as you can before forming and frying these fried potato latkes for the crispiest edges.

  • Heat the oil in a large cast iron skillet or pan over medium heat. Fry the potatoes in the hot oil and cook while stirring occasionally, until golden and crispy (about 20 minutes). To speed up cooking time, cover pan with a lid, checking the potatoes every 4-5 minutes or so to stir them (this takes about 15 minutes).
  • Preheat oven to 400°F | 200°C. Arrange the potatoes in a single layer in a cast iron skillet or oven proof pan (or baking sheet). Spray with a light coating of cooking oil spray and bake for about 30 minutes, mixing them around halfway through cook time, until they are crisp and golden.

  • Once bacon is half way cooked, add the diced poblano pepper, yellow onion, and sweet potato. Mix together then cover to help steam the sweet potato and cook it quicker.
  • After about 6-8 minutes of cooking, add in the mushrooms and chicken sausage along with the garlic powder, smoked paprika, and salt and pepper. Mix well, cover again and let cook for about 7-9 minutes, being sure to mix around to keep from sticking to the bottom of the pan.

  • Oatmeal With Peanut Butter and Banana. We love this oatmeal with peanut butter and banana recipe for its good-for-you ingredients. It makes a healthy morning meal you can have ready in minutes.
  • Egg Sandwich With Pastrami and Swiss. The combination of pastrami and Swiss has long been confined to the realm of the lunchtime deli counter, but we think it works beautifully with soft scrambled eggs—especially because pastrami trounces both sausage and bacon in the calorie department.
  • Breakfast Burrito. By swapping out worthless white tortillas for whole wheat, swapping fatty pork sausage for the lean chicken variety, and adding fiber-rich beans and some fresh avocado, we've slashed the calories in half while increasing the overall nutrition (and deliciousness).
  • Raspberry-Peach Swirled Smoothie. Besides the frozen raspberries and peaches, we combine a banana, orange juice, and Greek yogurt—along with some honey and ginger, too—to create a satisfying sweet way to kickstart your day with one of our healthiest easy breakfast ideas.
  • Omelet. We spoke with a New York City chef to learn how to cook (and flip) the perfect omelet at home. Here's what we learned when cooking up this easy breakfast idea.
  • Peanut Butter Overnight Oats. This peanut butter overnight oats recipe is bound to become one of your go-to easy breakfast ideas! Simply prep it the night before and you're good to go in the morning.
  • Sunrise Sandwich With Turkey, Cheddar, and Guacamole. Not all handheld breakfast bites are so virtuous, because many of them are flooded with excess carbs and fat.
  • 10-Minute Baked Eggs With Mushroom and Spinach. The little ceramic vessels are perfect for housing eggs, meat, cheese, and vegetables and then tossing in the oven.
  • Breakfast Pizza. Start with the ultimate breakfast bread—the fiber-dense whole-wheat English muffin—as your base and salsa as your sauce, then add eggs, ham, and cheese for flavor, substance, and plenty of protein.
  • Greek Yogurt With Pineapple, Kiwi, Mango, and Ginger Syrup. This refreshing concoction pairs tropical fruit with a spicy-sweet blast of ginger syrup for a sweet treat that'll taste like you're on vacation—even if you're just on your couch.

  • Brown the sausage in a large skillet, set over medium-high heat for about 5 minutes, using a spatula to break up any large pieces.
  • While your sausage cooks, dice your bell peppers and mince your garlic. When sausage is brown, add the bell peppers along with 1/2 tsp of kosher salt and black pepper as well as dried oregano. Stir and cook until peppers begin to soften and take on a little color – about five minutes. Add the garlic and cook for 30 more seconds. Transfer everything to a plate and set aside.
  • While your peppers cook, chop your potatoes into 1/2 inch cubes. Transfer them to a microwave safe bowl, drizzle one tablespoon of olive oil over them, and season with 1 teaspoon kosher salt and a few grinds of black pepper. Cover with plastic wrap (or a microwave safe plate) and nuke on high for four minutes.
  • Add one tablespoon of the remaining oil to your pan. Carefully pull the plastic wrap off of your bowl of potatoes (it will be very steamy and hot!). Then dump the potatoes into your skillet. Use a spatula to press them gently into one even layer and let cook, undisturbed for 3 minutes. Flip potatoes once they begin to brown on one side, pat down into an even layer again, and cook for another 3 minutes.
