Turmeric Roasted Cauliflower is roasted in the oven to bring out the sweetness of the cauliflower mixed with the warm, rich spices of turmeric, cumin, coriander and paprika. This makes a wonderful side dish or add it to a rice bowl or a pita sandwich.

Number Of Ingredients 11

1 large head cauliflower, cut into 1 inch florets {about 1 1/2 to 2 pounds}
3 garlic cloves, minced
3 Tablespoons olive oil
1 teaspoon turmeric
1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon coriander
1/4 teaspoon red pepper flakes
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
Garnish with freshly chopped cilantro

Steps:

  • Preheat the oven to 450 degrees F.
  • Cut the cauliflower into 1-inch florets and place them in a large mixing bowl with the minced garlic.
  • In a small mixing bowl combine the olive oil, turmeric, cumin, paprika, coriander, crushed red pepper, salt and pepper and stir. Drizzle the olive oil mixture over the cauliflower and toss to coat.
  • On a large baking sheet evenly spread the cauliflower.
  • Roast in the oven for 25-30 minutes or until the cauliflower is tender and starting to brown on the ends.
  • Serve warm with cilantro.

Cooking spray
6 tablespoons olive oil
2 teaspoons garlic powder
1 teaspoon ground turmeric
1/2 teaspoon garam masala
1/2 teaspoon kosher salt (up to 1 teaspoon if preferred)
1 large head or 2 small heads cauliflower, cut into florets (~2 1/2 pounds)

Steps:

  • Preheat oven to 425 degrees F. Line one or two baking sheets with aluminum foil, spray with cooking spray, and set aside.
  • In a large mixing bowl, whisk together olive oil, garlic powder, turmeric, garam masala, and salt.
  • Add cauliflower florets to bowl and toss until florets are well coated with olive oil and spice mixture.
  • Spread coated cauliflower on prepared baking sheet (or two if needed), transfer to oven, and roast for 10 minutes. Remove baking sheet(s), stir cauliflower, rotate the pan(s), and roast another 10 minutes until tender and caramelized.

3 tablespoons vegetable oil
1 tablespoon black mustard seeds
1 jalapeno, finely diced
1 tablespoon grated fresh ginger
1 teaspoon turmeric
1 head cauliflower, cut into florets
Salt

Steps:

  • Preheat oven to 425 degrees F.
  • Whisk together the oil, mustard seeds, jalapeno, ginger, and turmeric in a small bowl.
  • Place cauliflower in a medium baking dish and toss with the flavored oil and season with salt. Roast until lightly golden brown and just tender, 20 to 25 minutes. Serve hot.

2 tablespoons minced garlic
3 tablespoons olive oil
1 large head cauliflower, separated into florets
⅓ cup grated Parmesan cheese
salt and black pepper to taste
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Grease a large casserole dish.
  • Place the olive oil and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared casserole dish, and season with salt and pepper to taste.
  • Bake for 25 minutes, stirring halfway through. Top with Parmesan cheese and parsley, and broil for 3 to 5 minutes, until golden brown.
