GOLDEN ONION SOUP
Good as gold! Caramelized onions pair perfectly with crunchy croutons in this oven-baked soup.

Steps:
- Heat oven to 400°F. In 13x9-inch pan, melt 1/4 cup butter in oven. Toss bread cubes in butter until evenly coated. Sprinkle with cheese. Bake uncovered 10 to 15 minutes, stirring occasionally, until golden brown and crisp.
- Reduce oven temperature to 325°F. In 4-quart ovenproof Dutch oven, melt 1/4 cup butter over medium heat. Stir in brown sugar and Worcestershire sauce. Toss onions in butter mixture.
- Bake uncovered about 2 hours 30 minutes, stirring every hour, until onions are deep golden brown. Remove from oven; stir in broth and water. Heat to boiling on top of stove. Serve with croutons.

FRENCH ONION DIP

- In a large saute pan over low heat, add oil and butter. When butter is melted, add onions and saute stirring occasionally until golden brown and caramelized, about 35 minutes. Add shallots and some salt and saute for 15 minutes more until onions and shallots are dark brown. Remove from heat and let cool for 5 to 6 minutes, then chop into 1/4-inch pieces. Set aside to cool to room temperature.
- Meanwhile, in a medium bowl, combine sour cream, mayonnaise, celery salt, Worcestershire, salt and pepper. Fold in onion mixture. Chill at least 1 hour or overnight, prior to serving.

- Melt the butter in a fry pan over medium heat.
- Add the onions, salt, pepper, onion powder and cayenne pepper. Cook for 5 minutes, stirring. Then reduce the heat to medium low and cook for 20 to 25 minutes, stirring occasionally. The onions should be sweet and golden. Remove from stove and allow to cool.
- Place the cream cheese, sour cream and mayo in a bowl, mix until smooth (use microwave in 10 sec bursts if needed to assist)
- Add the caramelised onions. Mix until just combined. Refrigerate at least 2 hours to allow flavours to develope, overnight is better!
- Serve at room temperature, garnished with chopped chives if desired. Best served with crinkle cut plain potato chips!

- Heat the oil in a large skillet over medium heat; add the onions and 1/4 teaspoon of kosher salt. Cook and stir until the onions are caramelized to a nice golden brown, about 20 minutes. Remove the onions from the heat and cool.
- Mix together the sour cream, mayonnaise, garlic powder, white pepper, and remaining kosher salt. Stir in the onions when they are cool. Cover and refrigerate the dip for at least 2 hours before serving.

- In a large non-stick skillet (or cast iron pan) melt the butter and olive oil over medium heat. Add the sliced onions and cook for about five minutes stirring as necessary. Then add in the thyme, sugar, and half of the salt.
- Stir to combine and cook until the onions are soft and golden brown. This will take about 20 minutes. Remove the onions from the heat; add in the balsamic vinegar. Stir to combine. Set aside to cool slightly.
- Preheat your oven to 400 degrees F.
- In a large bowl, stir together the cream cheese, parmesan cheese, gruyere cheese, sour cream, mayonnaise, half-and-half, garlic, black pepper, and remaining salt. After the onions have cooled slightly, stir them into the cheese mixture to combine.
- Spray a medium cooking dish with cooking spray and then fill it with your cheese and onion mixture.
- Bake for about 25-30 minutes or until golden and bubbly.
- Serve hot with sliced, toasted baguettes.

French onion soup meets tangy sour cream in this homemade version of America's favorite chip dip. According to American culinary legend, an unknown Los Angeles chef devised onion dip back in the fifties by mixing Lipton soup mix with sour cream. Maybe, maybe not. What we know is that the folks at Lipton's picked up the ball and ran with it to the point that more of their dehydrated onion soup mix was going into the dip bowl than the soup bowl. I have nothing against using manufactured mixes, but look, after the zombie apocalypse strikes, and the megamart shelves are stripped bare...what do we do then? Those of us with this recipe in our go-bags will survive to dip another day. Food for thought people, food for thought. This dip is even better when made a day ahead. Just make sure that you cover it well with plastic wrap because fats (like sour cream) take in flavors and aromas hanging around the refrigerator like crazy old grandmas collect leftover gift wrapping.This recipe first appeared in Season 6 of Good Eats.

- Using a mandoline or sharp knife, thinly slice the onions and place in a large pot. Sprinkle with the baking soda, salt, and dark brown sugar, and gently toss with tongs. Cover the pot and let the onions rest for 10 minutes.
- After 10 minutes, uncover the pot, and place over high heat. Drizzle in the olive oil and cook, stirring often, until the onions are reduced by 75 percent and are a light gold color. Reduce heat to medium and continue cooking for approximately 15 minutes, stirring often.
- Deglaze the pan with a few shakes of sherry vinegar and water. Reduce heat to low and continue stirring, scraping all the brown bits off the bottom of the pot. The onions should be dark golden brown and reduced to about 1 1/2 cups in volume. Remove from heat and let cool.
- Once cool, put 1/2 cup of the caramelized onions in a medium mixing bowl. Add the sour cream, mayonnaise, garlic powder, and white pepper, and stir to combine.
- Cover tightly with plastic wrap and refrigerate for at least 1 hour before serving. Overnight would be even better.
ONION DIP PORK CHOPS
I raided the pantry for something to make quick and easy...and I came up with this. It has sour cream and onion soup mix which is why I call it onion dip pork chops. It was a huge hit.

- Brown Pork Chops on both sides in oil.

When my mom and I were cleaning out one of her kitchen cabinets we found boxes of recipes clipped from newspapers, magazines, booklets, etc. This one came from a booklet called "The Little Book of Holiday Appetizers", put out by Oxmoor House in 2002.

- Chop the onions. Leave the cream cheese out to soften while preparing the onions.
- Melt the butter in a large nonstick skillet. Add the onions and cook over medium-high heat, stirring constantly, until tender.
- Add chicken broth and bring to a boil. Cook over medium-high heat for 20-25 minutes, stirring often, until onion is golden. Remove from heat and let cool.
- Beat the cream cheese until creamy. Add mayo and beat until smooth. Stir in the onion mixture and the pistachios.
- Cover and chill until ready to serve, at least 2 hours. Serve with assorted fresh veggies or melba rounds.
