1 large Spanish onion, sliced
2 Cornish hens
Cornbread Stuffing, recipe follows
Olive oil
Kosher salt
Freshly ground black pepper
4 tablespoons unsalted butter
1 cup yellow onion, chopped
2 1/2 cups cornbread
1 celery stalk, diced
1/4 cup chicken stock
2 tablespoons chopped flat-leaf parsley
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sliced onion in the bottom of a roasting pan. Remove the giblets from the hens, and rinse them inside and out. Remove any excess fat and leftover pinfeathers and pat the outsides dry. Place the hens on top of the sliced onion.
  • Pack the cavities of the hens with the cornbread stuffing.
  • Tie the legs together with kitchen string and tuck the wing tips under the body of the hens. Rub the hens with olive oil and sprinkle with salt and pepper.
  • Roast the hens for 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  • Melt the butter in a large saute pan. Add the onion and cook for 5 minutes over medium-low heat, until translucent. Break the cornbread into pieces and place the pieces in a large bowl. Add the onion mixture to the cornbread. Add the celery, chicken stock, parsley, salt and pepper, and mix together.
  • Yield: 2 servings

4 Cornish hens
1 tablespoon oil
3 tablespoons soy sauce
3 tablespoons teriyaki sauce
2 tablespoons honey
1 tablespoon lemon juice
1 dash ginger
1 dash pepper
2 garlic cloves, sliced

Steps:

  • Remove bags with liver and necks from hens, wash hens well pat dry.
  • Rub hens with oil.
  • Prepare marinade, place hens in either glass bowl or 2 plastic bags,pour marinade over hens.
  • Let hens marinate overnight in refrigerator turning hens or bags over occasionally.
  • Next day remove hens from marinade and place onto a roasting rack.
  • Roast hens at 400 F for 50 to 60 minutes, turning once during cooking time and baisting with matinade occasionally.
  • Check for doneness by piercing with a fork,
  • hens should be fork tender and juices should run clear.
  • Can serve whole hens or cut hebs in half lenghtwise to double.

4 slices bacon
1/2 cup carrot, finely chopped
1/3 cup celery, chopped
1/8 teaspoon dried savory, crushed or 1/2 teaspoon fresh savory
1/2 teaspoon thyme
1 dash pepper
1 1/2 cups dry breadcrumbs
1/4 teaspoon instant chicken bouillon granules or 1/4 teaspoon vegetable bouillon granules
2 tablespoons hot water
2 Cornish hens, washed and patted dry
salt
cooking oil, to brush
2 tablespoons dry red wine
1 tablespoon butter or 1 tablespoon margarine, melted
1 tablespoon orange juice

Steps:

  • Cook bacon until crisp.
  • Remove bacon from pan, crumble; set aside.
  • Drain pan of all but 2 tablespoons of the bacon grease, and saute carrots and celery in the reserved grease until tender (about 5 minutes).
  • Add bacon, savory, thyme, and pepper; mix in bread crumbs.
  • Dissolve bouillon in hot water, and drizzle over the bread mixture.
  • Toss lightly.
  • Season cavities of hens with salt, then lightly stuff with the bread mixture.
  • If birds have neck skin still attached, pull it to each bird's back and secure with a small skewer.
  • Tie legs to tail, and twist wing tips under back on each.
  • Place hens breast side up in a shallow roasting pan.
  • Brush with cooking oil and cover loosely with foil.
  • Roast at 375°F for 30 minutes.
  • Combine wine, butter, and orange juice.
  • Uncover birds and baste with wine mixture.
  • Roast uncovered for another hour (until done), basting twice with wine mixture.

4 Cornish hens
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup olive oil
1/3 cup finely chopped shallot
1/4 cup finely chopped parsley
2 tablespoons lemon juice
1 teaspoon tarragon, crushed
1/2 teaspoon poultry seasoning
1/2 teaspoon grated lemon peel
2 tablespoons butter or 2 tablespoons margarine, melted
2 teaspoons sugar
3 tablespoons vegetable oil
2 tablespoons red wine vinegar
1 tablespoon chopped parsley
1/2 teaspoon salt
1 garlic clove, minced
2 large tomatoes, sliced
1 small onion, sliced

Steps:

  • Place each hen breast-side up; with poultry shears, starting at body cavity, cut straight along one side of breast-bone to neck cavity. Spreading hen open, cut along one side of back-bone to make two halves. Cut along other side of bone to remove bone; discard backbones. Wash and pat dry. Place in shallow glass baking dish. Sprinkle with salt and pepper. Stir together next 7 ingredients. Drizzle mixture over hens, turning until evenly coated. Cover and marinate 1 hour at room temperature.
  • Preheat broiler. Drain hens from marinade. Place hens on rack of broiler pan, skin-side down. Broil 6" from heat source 8 minutes. Turn hens; brush with butter. Sprinkle each with 1/4 teaspoon of the sugar. Broil 8-10 minutes longer until golden brown. Turn off broilerb and leave hens in oven 5 minutes. Arrange on serving platter.
  • Tomato Salad: In a large bowl, blend together first 5 ingredients. Toss with vegetables.

I clipped this recipe out of a newspaper many years ago, altering it to fit my family's taste, i.e. mainly increasing the amount of both the pineapple and raisins. This is an easy, hearty entree with a nice old-fashioned flavor to fix for the holidays.

1 package (6 ounces) long grain and wild rice mix
1 can (8 ounces) unsweetened crushed pineapple
1/2 cup raisins
6 Cornish game hens (20 to 24 ounces each)
2 tablespoons butter, melted
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons honey

Steps:

  • Prepare rice mix according to package directions. Drain pineapple, reserving juice; set aside. Stir pineapple and raisins into rice., Just before baking, loosely stuff each hen with 3/4 cup rice mixture; tie legs together with kitchen string. Place hens, breast side up, on a rack in a shallow roasting pan. Brush with butter; sprinkle with salt and pepper., Bake, uncovered, at 350° for 1-3/4 to 2 hours or until a thermometer reads 180° for hens and 165° for stuffing. , In a small saucepan, bring honey and reserved pineapple juice to a boil. Remove from the heat. Baste over hens. Bake 15 minutes longer or until golden brown.
