HARLEM MEATLOAF CHILI
Steps:
- Heat a large soup pot or dutch oven over medium heat. Add the Italian sausage and ground beef and break it up with a wooden spoon or metal spatula. Cook for about 5 minutes, or until browned on the outside. Stir in the bell pepper, onion, and jalapeno and cook for another 5 minutes or until no pink remains in the beef. Sprinkle with salt.
- Stir in the tomato sauce, diced tomatoes, Franks, garlic, chili, and cumin. Increase the heat to medium high and bring the mixture to a gentle boil. Reduce heat to low then allow everything to simmer together for 5-10 (or more if desired) minutes, stirring often. Taste. Add salt, pepper, or additional Franks red hot sauce for heat if desired.
- To serve, preheat the broiler. Place individual servings of the chili in oven safe bowls. Top each bowl with a slice of bread and hefty sprinkling of cheese. Place under the broiler for 3-5 minutes or until cheese is melted and bubbly. Serve immediately.
- Note: This chili tastes best the day after it's made, so feel free to make it in advance and store in the fridge until ready to serve.

- Preheat oven to 350 degrees F. In a large bowl, combine all ingredients. Shape into a loaf and place in a 13x9 baking dish. Brush an additional 2 Tbsp. of Worcestershire Sauce on top and sides if desired.
- Bake uncovered for about 1 hour, or until cooked through. Allow to rest for 5 to 10 minutes before serving.
- TIP: If desired, add 1/3 cup of finely chopped sweet bell peppers.
- TIP: Save the leftovers for lunch. Heat the meatloaf slices in a large skillet over medium heat for 1 to 2 minutes on each side. Serve on toasted rolls with additional Heinz 57®.
CHARLEY'S MEATLOAF NAPOLEON STYLE
Steps:
- Preheat the oven to 375 degrees F. In a mixing bowl, mix all ingredients until incorporated. Form into loaf and place in loaf pan and bake, uncovered, for 40 minutes until cooked through. Allow to cool and slice meatloaf into 1-inch slices. On a serving plate, layer Napoleon style in the following order: Sauteed Vegetables, Garlic Mashed Potatoes, a slice of meatloaf, a second layer of Garlic Mashed Potatoes, a second slice of meatloaf, and top with Fried Leeks.
- Thinly slice vegetables into 1/8-inch by 1/8-inch by 2-inch strips. Saute all vegetables in pan with olive oil and season, to taste.
- Place peeled and sliced potatoes in pot of water and boil until soft. Strain potatoes. Place potatoes in a mixing bowl add remaining ingredients and whip until texture is fine. Place garlic mashed potatoes in a pastry bag with a star tip.
- Cut leek into julienne strips and coat with cornstarch. In a saute pan, heat enough oil to cover leeks. Drop in leeks and fry until golden brown, about 1 to 2 minutes. Drain on paper towels.
MEATLOAF HARRELL
Savory, easy-to-make meatloaf. Great main course for cold nights or served as sandwiches! For a cheesy meatloaf, grate pepper jack or colby jack cheese over the top as soon as meatloaf is pulled from the oven. Mozzarella is also very tasty! Or mix all three!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place saltine crackers into a large, heavy plastic zipper bag, and gently crush into crumbs by rolling the bag with a rolling pin; alternately, place crackers into the work bowl of a food processor and pulse briefly just to break into crumbs. Two sleeves of crackers should make about 3 cups of crumbs. Reserve 3/4 cup of crumbs; place 2 1/4 cup of crumbs into a large mixing bowl.
- Mix the 2 1/4 cups of cracker crumbs in the mixing bowl with ground beef, Worcestershire sauce, steak sauce, mustard, black pepper, soda, rosemary, cayenne pepper, cinnamon, garlic powder, dill relish, sweet relish, egg, self-rising flour, tomato sauce, and onion until thoroughly combined. Form into a loaf, and place into a 9x12-inch baking dish. Top the loaf with the reserved cracker crumbs.
- Bake in the preheated oven until the loaf is browned, no longer pink inside, and the juices run clear, about 45 minutes to 1 hour, checking after 45 minutes. An instant-read meat thermometer, inserted into the thickest part of the loaf, should read at least 160 degrees F (70 degrees C).

- Preheat Oven 350.
- Mix all ingredients well with hands.
- Lightly Grease Pan or Casserole Dish 8x8 or 9X13.
- Press Mixture into your pan.
- Bake for about 25/ 30 minute.
- Take out and Spread Remaining H&D Pepper Relish on top.
- Place in over once more Baking till Done about 30 more minutes.
- I reduce heat some to prevent burning the sides.

Steps:
- Preheat oven to 450 degrees.
- Cook bacon in frying pan, remove, drain and chop.
- Leave drippings in pan and saute (but do not brown) onion and celery.
- Add pepper, onion powder, thyme, salt, mustard, paprika and garlic powder.
- Cook for 10 minutes.
- Remove pan from heat and add tomato juice and evaporated milk.
- Mix bread crumbs with eggs and add to meat.
- Add spice mixture and bacon to meat mixture and mix gently.
- Place mixture in two or three 8 x 4 inch individual loaf pans.
- Cook until done, about 40 to 50 minutes, or until internal temperature reaches 160 degrees on a meat thermometer.
