SLIM SIX-LAYER DIP

1 tablespoon extra-virgin olive oil
2 cloves garlic, roughly chopped
2 15-ounce cans red kidney beans, drained and rinsed
2 teaspoons chili paste or your favorite hot sauce
1 cup shredded low-fat cheddar cheese
1 cup shredded sharp cheddar cheese
2 ripe avocados, preferably Hass
Kosher salt
2 teaspoons fresh lemon juice
5 scallions, white and green parts, thinly sliced
3/4 cup fresh cilantro
1 jalapeno, stemmed and thinly sliced
1 1/2 cups plain nonfat yogurt, preferably Greek
2 cups finely shredded romaine lettuce
3 ripe medium tomatoes, diced

Steps:

  • Heat the oil in a skillet over medium heat. Add the garlic, beans and chili paste and heat until fragrant, about 3 minutes. Using a potato masher or fork, mash the beans. Remove from the heat, add 2 tablespoons water and mash until somewhat smooth. Spread in a 2-quart glass casserole dish.
  • Scatter the cheese over the beans. Halve and pit the avocados; scoop out the flesh into a bowl and mash with 1 teaspoon salt and the lemon juice. Spread the avocado over the cheese.
  • Reserve some scallions, cilantro and jalapeno for garnish. Pulse the yogurt with the remaining scallions, cilantro and jalapeno in a blender or food processor. Spread over the avocado. Top with the lettuce. Season the tomatoes with another teaspoon salt and scatter over the lettuce. Top with the reserved scallions, cilantro and jalapeno.

1 ¾ cups guacamole
1 ½ cups sour cream
1 (8 ounce) package shredded Cheddar cheese
2 tomatoes, diced

Steps:

  • Heat refried beans in a microwave-safe bowl in a microwave oven until hot, stirring frequently, about 3 minutes. Spread beans onto the bottom of a serving platter; refrigerate until the beans are cooled completely, about 10 minutes.
  • Spread guacamole in a layer atop the beans. Spread sour cream atop the guacamole. Sprinkle cheese over the sour cream; top with tomatoes.
  • Cover platter with plastic wrap and refrigerate until cold, about 30 minutes.

2 tablespoons lemon juice
1/2 tablespoon garlic salt

1 jar (16 ounces) thick and chunky salsa, drained
2 medium tomatoes, seeded and chopped

Steps:

  • In a large bowl, mash the avocados with lemon juice, garlic salt and hot pepper sauce. Spoon into a deep-dish 10-in. pie plate or serving bowl. Layer with sour cream, olives, salsa, tomatoes and cheese. Cover and refrigerate for at least 1 hour. Serve with chips.

1 large tomato, seeded and chopped

Steps:

  • Spread refried beans in the bottom of a (1-quart) shallow edged serving dish (you can use a transparent dish if you'd like). Sprinkle the seasoning packet over the beans. 1 (6 ounce) container guacamole
12 ounces sour cream
1 (1 ounce) package taco seasoning mix

Steps:

  • In a clear pie pan, or similar dish, spread a layer of bean dip. Top the bean dip with a layer of guacamole. Allow the layers to thicken in the refrigerator for approximately 20 minutes.
  • In a mixing bowl, while the bean dip and guacamole chill, combine the sour cream and taco seasoning. Remember the layered taco dip everybody loves? Well, here's a Mediterranean version for you! Very, very tasty! Prep time includes chilling. This dip took a bit of work... I first posted it at Gail's way back in the 90s, I think.

8 ounces prepared hummus
1 1/4 cups plain yogurt, divided
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
1 teaspoon lemons or 1 teaspoon lime juice
1 cup seeded and chopped tomato
1 ripe avocado, seeded and chopped
1/2 cup peeled and chopped cucumber
salt & fresh ground pepper, to taste
4 -6 ounces crumbled feta cheese
2 tablespoons minced kalamata olives

Steps:

  • First, strain the yogurt by putting cheesecloth or a paper coffee filter in the bottom of a strainer and pour in all the yogurt but 1/4 cup (reserve for later); let it strain for a couple of hours to thicken it up, or overnight (in the fridge) to make thicker "yogurt cheese" (I prefer it just for a couple of hours; you could also substitute sour cream for the yogurt, if you like).
  • Combine the reserved 1/4 cup of un-strained yogurt with the prepared hummus, then spread mixture on the bottom of a 9 inch pie dish.
  • Combine remaining strained yogurt and cumin and spread over the hummus layer.
  • Toss together the garlic powder, salt, lemon/lime juice, chopped tomatoes, and avocado, then spread over the yogurt layer.
  • Add a layer of the cucumbers and sprinkle with a bit of salt and pepper.
  • Add a layer of feta, then finish it all off with olives.
  • Let chill for an hour before serving with pita chips (artichoke hearts are a good addition to this recipe, as well.).

1 cans chicken
1 units bell taco seasonings
1 cans tomatoes
1 units sour cream
1 units shredded cheese
1 pinches red pepper
1 bags mission nachos

Steps:

  • Preheat the oven at 400 degrees F. Use a square Pyrex and spread refried beans on the bottom. Add a layer of diced onions on top of the beans.
  • In a bowl, mix the chicken with some Taco Bell Taco Seasonings. Evenly layer the chicken on top of the diced onions. Drain the Ro*Tel tomatoes and layer on top of the chicken. Add sour cream evenly and top off with the shredded cheese.
  • For color, add a pinch of crushed red pepper evenly spread out. Cover with foil to avoid the cheese from browning. Place in the oven for 10-15 minutes. Serve with nachos.

Steps:

  • In a mixing bowl, beat cream cheese, 1 cup of feta, milk and basil until well-blended. Spread in bottom of 9" pie plate.

  • Cover and refrigerate about 1 hour before serving.
