Steps:
- Heat oven to 425°F. In medium bowl, mix brown sugar, butter, vinegar, salt, garlic powder and pepper. Reserve 2 tablespoons of the butter mixture. Add apples, sweet potatoes and onion to remaining butter mixture; toss to coat. Arrange apple mixture in roasting pan or 13x9-inch (3-quart) glass baking dish. Cover tightly with foil and bake 20 minutes.
- Meanwhile, brush pork with reserved butter mixture. Heat 10-inch nonstick skillet over medium-high heat until hot. Cook pork in skillet about 3 minutes, turning to brown all sides evenly.
- Place pork on apple mixture. Bake uncovered 30 to 40 minutes or until pork has slight blush of pink in center and meat thermometer inserted in center reads 160°F.

- Preheat oven to 450 degrees.
- Rub oil onto pork roast. In a small bowl, stir together salt, pepper, garlic powder, onion powder, and paprika. Sprinkle seasoning mixture onto pork roast. Place fatty side up in a roasting pan or large cast iron dutch oven.
- Roast, uncovered, in the 450 degree oven for 30 to 45 minutes. Reduce the oven temperature to 350 degrees and continue cooking an additional 1 hour.
- Remove roast from oven and place the onion chunks, carrots, and potatoes around the meat. Pour apple juice on vegetables. Season vegetables with salt and pepper. Place rosemary sprig on top.
- Cook an additional 1 to 1 1/2 hours, or until vegetables are tender and meat shreds easily with a fork. Season vegetables with additional salt and pepper to taste and serve hot.

- Position a rack in the upper third of the oven; preheat to 450 degrees F. Pierce the pork all over with a fork. Combine the brown sugar, sage, garlic, 3/4 teaspoon salt and a few grinds of black pepper in a bowl; rub all over the pork.
- Toss the sweet potatoes and onion with 2 tablespoons olive oil and the cayenne on a baking sheet; season with salt and black pepper. Roast, tossing once, until golden, 20 minutes; set aside.
- Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the pork and cook, turning, until golden, 5 minutes; transfer to the baking sheet with the vegetables (reserve the skillet). Roast until the sweet potatoes are tender and a thermometer inserted into the center of the pork registers 145 degrees F, 11 to 13 minutes.
- Meanwhile, add the broth to the skillet; bring to a simmer over medium heat, scraping up any browned bits with a wooden spoon. Stir in the mustard, chives and a few grinds of black pepper. Slice the pork; drizzle with the pan sauce. Serve with the roasted vegetables.

ROAST PORK LOIN WITH SWEET POTATOES AND APPLES

- Gather the ingredients.
- Preheat the oven to 375 F. Place a large ovenproof Dutch oven over medium-high heat and add the vegetable oil.
- When very hot, add the pork roast. Cook, turning the roast, until all sides are browned, about 6 minutes.
- Remove from the heat.
- In a medium bowl, combine the honey, orange juice, apple juice concentrate, pepper, and brown sugar.
- Spoon over the pork roast.
- Place the sweet potatoes around the pork.
- Cover and bake for 2 hours. Pork should register at least 145 F on an instant-read thermometer, the minimum safe temperature for pork.
- Place the apple quarters around the pork.
- Bake, uncovered, basting frequently, for 20 minutes, or until the apples are just tender.
- Let the pork stand for 10 minutes. Slice the pork roast and serve with the sweet potatoes and apples.

- Preheat oven to 375 degrees. Season pork with salt and pepper. Heat a large ovenproof skillet over medium-high heat; swirl in oil. Cook chops until golden brown, turning once, about 8 minutes. Transfer to a plate. Remove all but 2 tablespoons fat from skillet.
- Reduce heat to medium. Add potatoes and onion; season with salt. Cook until golden in spots, about 10 minutes. Add vinegar and cider. Cover and simmer, stirring a few times, until potatoes are tender, about 5 minutes. Sprinkle with caraway seeds. Return pork and juices to skillet; tuck apple slices between chops. Roast until a thermometer inserted into thickest part of chops (without touching bone) registers 138 degrees, about 10 minutes. Serve pork, vegetables, and apples with pan juices.
CROCK POT SWEET POTATO APPLE PORK ROAST
This is an old recipe that I got from my mother, she never made it when I was younger because she doesn't like sweet potatoes. I have made this recipe now quite a few times and it always turns out moist and delicious. The mustard is optional, and I leave that out as my family doesn't like mustard, although I think it still tastes good with it. The sauce at the end is also optional, I have eaten it before without the sauce and it is still wonderful. The sauce adds a little extra touch though, but use it sparingly, or it will really overpower the great taste of the pork.

- Pour the apple juice into the crock pot. layer the sweet potatoes, onions, and apples in crock pot.
- In a nonstick skillet brown the pork on all sides place pork on top of the potato and apple slices.
- Brush the mustard over the roast (optional) and sprinkle the roast with the pepper (to taste) and sage
- Cover and cook on low until the roast is done. 7-9 hours.
- Transfer the roast to a platter and keep it warm, using a slotted spoon transfer the apple/sweet potato mixture to a bowl and keep warm.
- Sauce (Optional): Combine water, sugar, and cornstarch in a measuring cup. Stir the cornstarch mixture into the juices in the crock pot and cook, stirring often until they thinken. 1-2 minutes. Serve it over the apple/potato mixture and the roast.

- 1. Remove the pork from the refrigerator and let stand at room temperature while the oven preheats. Preheat the oven to 450°F. Place a large rimmed baking sheet in the oven and heat until very hot.
- 2. To cook the vegetables and apples: In a large bowl, toss the sweet potatoes, apples, fennel, and rosemary with the olive oil to coat. Season with salt and pepper. Carefully remove the baking sheet from the oven and spread the vegetables and apples on it. - Add the ice water and stir well.
