- Preheat the oven to 400 degrees F. Brush the baguette slices lightly with olive oil on both sides and season with salt and pepper. Place the slices on a baking sheet and toast in the oven until crisp and golden, about 8 minutes.
- Meanwhile, whisk together 3 tablespoons olive oil, the vinegar and honey in a bowl. Stir in the thyme and red pepper flakes. Add the roasted peppers and shallots to the dressing, and season with salt and pepper. Gently toss to combine, then fold in the parsley. Set aside or place in the refrigerator to marinate.
- Spread each toast with a small spoonful of goat cheese. Top with a spoonful of the pepper mixture, followed by a pinch of microgreens. Arrange on a platter and serve.

- Heat the oven to 350 degrees. Slice the pointed tip of a garlic head off and place on a sheet of foil. Drizzle the cut garlic with olive oil, replace the tip and wrap the entire head in foil. Bake for 45 minutes to an hour, until the cloves are soft and creamy. Set aside and let cool. Garlic can be roasted ahead of time and stored in the fridge for a week or two.
- Place the log of goat cheese in a small oval baking dish with no more than a couple inches of space around the log. Drizzle some of the oil from the sun dried tomatoes on top of the cheese and put in the oven to bake for about 20 minutes, until the cheese is hot and lightly browned on the top. The cheese will spread as it bakes.
- While the cheese is baking, remove the sun dried tomatoes from the oil and chop into 1/4" pieces. Place in a small bowl. Chiffonade the basil and add it to the sundried tomatoes with a couple pinches of red pepper flakes. Mix the three ingredients together.
- When the cheese is hot and slightly browned, remove it from the oven and spoon the tomato/basil mixture around the edge of the baking pan, like a wreath. Squeeze the roasted garlic over the top of the cheese. Sprinkle with toasted pine nuts and drizzle a little more of the sun dried tomatoes on top of the cheese.
- Serve warm with baguette slices and if you are feeling festive add some chilled champagne.

- Preheat the broiler to high heat, and lay the bread slices flat on a baking sheet.
- Brown both sides of the bread until light golden brown, then brush one side of each slice with olive oil.

- Preheat the oven to 350 degrees F with racks in the middle and upper third of the oven. Line two large rimmed baking sheets with parchment paper for easier cleanup. Set the goat cheese on the counter to soften up a bit.
- On one baking sheet, toss the strawberries with the honey, then spread the strawberries into a single layer. Bake on the upper rack until the fruit is tender, juicy, and collapses on itself, 20 to 25 minutes, tossing halfway. Watch the fruit on the edges of the pan, as the honey can burn quickly.
- Meanwhile, on the remaining baking sheet, brush the olive oil lightly over both sides of each slice of bread. Bake on the middle rack until the toasts are golden on top, 10 to 12 minutes.

- Slice a strip lengthwise from the zucchini to expose the inside of the vegetable. Discard or reserve for another use. Cut the 2 ends from the zucchini to make straight edges. Cut the zucchini lengthwise into ½-inch strips.

- Roast the peppers using either a barbecue grill, gas cook top or broiler in your oven. Complete tutorials here.
- Position a rack in the upper third of oven and preheat to 475 degrees.
- Place the peppers peeled side down on a cutting board and slightly flatten. Sprinkle with sea salt and pepper. Spread with about a tablespoon of goat cheese down the center of each pepper strip. Scatter the cut basil, pine nuts, and golden raisins on top of each pepper. Fold each pepper over to create a package (like a canoe on its side). Press down gently to flatten slightly
