Roasted Pepper and Goat Cheese Bruschetta image

1 baguette, sliced on the bias about 1/2-inch thick
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 1/2 tablespoons red wine vinegar
1 tablespoon honey
2 teaspoons chopped fresh thyme
Pinch red pepper flakes
One 16-ounce jar roasted red peppers (or a mix of red and yellow), drained and thinly sliced
1 shallot, minced
2 tablespoons chopped fresh Italian parsley
One 6-ounce log fresh goat cheese, at room temperature
Microgreens, for garnish

Steps:

  • Preheat the oven to 400 degrees F. Brush the baguette slices lightly with olive oil on both sides and season with salt and pepper. Place the slices on a baking sheet and toast in the oven until crisp and golden, about 8 minutes.
  • Meanwhile, whisk together 3 tablespoons olive oil, the vinegar and honey in a bowl. Stir in the thyme and red pepper flakes. Add the roasted peppers and shallots to the dressing, and season with salt and pepper. Gently toss to combine, then fold in the parsley. Set aside or place in the refrigerator to marinate.
  • Spread each toast with a small spoonful of goat cheese. Top with a spoonful of the pepper mixture, followed by a pinch of microgreens. Arrange on a platter and serve.

Baked goat cheese, sundried tomato & basil appetizer image

This easy and festive appetizer made with goat cheese, sun dried tomatoes and basil is beautiful around Christmas and New Year's, but delicious any time of the year.

Number Of Ingredients 7

2 heads of garlic (optional)
10.5 ounce log of fresh goat cheese
8 ounce jar of sun dried tomatoes packed in oil
1 cup of basil chiffonade
2 pinches red pepper flakes, to taste
1/2 cup toasted pine nuts
1 baguette, thinly sliced or crackers

Steps:

  • Heat the oven to 350 degrees. Slice the pointed tip of a garlic head off and place on a sheet of foil. Drizzle the cut garlic with olive oil, replace the tip and wrap the entire head in foil. Bake for 45 minutes to an hour, until the cloves are soft and creamy. Set aside and let cool. Garlic can be roasted ahead of time and stored in the fridge for a week or two.
  • Place the log of goat cheese in a small oval baking dish with no more than a couple inches of space around the log. Drizzle some of the oil from the sun dried tomatoes on top of the cheese and put in the oven to bake for about 20 minutes, until the cheese is hot and lightly browned on the top. The cheese will spread as it bakes.
  • While the cheese is baking, remove the sun dried tomatoes from the oil and chop into 1/4" pieces. Place in a small bowl. Chiffonade the basil and add it to the sundried tomatoes with a couple pinches of red pepper flakes. Mix the three ingredients together.
  • When the cheese is hot and slightly browned, remove it from the oven and spoon the tomato/basil mixture around the edge of the baking pan, like a wreath. Squeeze the roasted garlic over the top of the cheese. Sprinkle with toasted pine nuts and drizzle a little more of the sun dried tomatoes on top of the cheese.
  • Serve warm with baguette slices and if you are feeling festive add some chilled champagne.

Steps:

  • Preheat the broiler to high heat, and lay the bread slices flat on a baking sheet.
  • Brown both sides of the bread until light golden brown, then brush one side of each slice with olive oil.
  • Spread each slice with the goat cheese.
  • Slice the roasted peppers into thin strips, and then arrange two or three strips on each slice of bread.
  • Season with salt and pepper and lightly drizzle with olive oil.
  • Roll the basil leaves up lengthwise, and using a sharp knife, cut into thin strips.
  • Sprinkle the fresh basil over the bruschetta, then arrange them on a platter and serve.

2 teaspoons olive oil
1 pinch salt
1 pinch black pepper
8 ounces goat cheese
3 tablespoons whipped chive cream cheese

zest of one lemon

Steps:

  • Preheat the oven to 400 degrees.
  • Cut the peppers in half lengthwise and remove the seeds. Add the peppers to a bowl and toss lightly with oil, salt, and pepper.
  • Spread the peppers on a baking sheet and roast for 15 minutes until slightly softened and caramelized. Let cool to room temperature.
  • Meanwhile, add the goat cheese and cream cheese to the bowl of a food processor. Process until smooth and spreadable, scraping the bowl down as necessary.

1 pound strawberries, hulled and cut into bite-size pieces
2 tablespoons honey
2 tablespoons extra-virgin olive oil
1 whole-grain baguette or small loaf of crusty whole-grain bread (about 14 ounces), cut into 1/2-inch slices
Small handful of fresh basil leaves, torn into little pieces
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F with racks in the middle and upper third of the oven. Line two large rimmed baking sheets with parchment paper for easier cleanup. Set the goat cheese on the counter to soften up a bit.
  • On one baking sheet, toss the strawberries with the honey, then spread the strawberries into a single layer. Bake on the upper rack until the fruit is tender, juicy, and collapses on itself, 20 to 25 minutes, tossing halfway. Watch the fruit on the edges of the pan, as the honey can burn quickly.

4 large red or yellow peppers (roasted (see below) peeled, slit open, seeded, and sliced into three inch strips)

1/4-1/2 pound mild soft goat cheese
6 basil leaves (4 leaves chopped, 2 leaves reserved or garnish)
1/4 cup pine nuts (toasted)
1/4 cup golden raisins
bread crumbs (optional)
2 tablespoons olive oil
pinch of cayenne

Steps:

  • Roast the peppers using either a barbecue grill, gas cook top or broiler in your oven. Complete tutorials here.
  • Position a rack in the upper third of oven and preheat to 475 degrees.
  • Place the peppers peeled side down on a cutting board and slightly flatten. Sprinkle with sea salt and pepper. Spread with about a tablespoon of goat cheese down the center of each pepper strip. 2 heaping tablespoons prepared pesto (I love using Kirklands from Costco)
1 tablespoon olive oil
2 tablespoons balsamic vinegar
3 ounces goat cheese
fresh oregano (optional)

Steps:

  • Preheat oven to 4oo degrees.
  • Slice mini bell peppers in half and remove stem and seeds. Place in a large bowl (or large ziplock bag) and toss with pesto, olive oil and balsamic vinegar until peppers are completely covered.
  • Line up peppers on a baking sheet and place into oven. Bake for 15 minutes.
  • Take peppers out and carefully add crumbled goat cheese to insides of pepper halves.

Vegetable oil for brushing pan
1/4 cup finely chopped rinsed drained bottled roasted red peppers
20 oz soft mild goat cheese, softened at room temperature (2 cups)

a 2 1/4-cup loaf pan (5 3/4 by 3 1/2 by 2 1/4 inches)

Steps:

  • Drain pesto in a small fine-mesh sieve set over a bowl 15 minutes, then discard excess oil.
  • Lightly oil loaf pan and line with a sheet of plastic wrap large enough to allow a generous overhang on all 4 sides.
  • Blot peppers well between paper towels to remove excess liquid.
  • Spread about one fourth (1/2 cup) of cheese evenly over bottom of loaf pan and top with all of pesto, spreading evenly. Drop 1/2 cup cheese by tablespoons over pesto and spread gently to cover pesto.
  • Top with chopped peppers, spreading evenly. Drop another 1/2 cup cheese by tablespoons over peppers and spread gently to cover peppers.
  • Spread olive paste evenly on top, then drop remaining cheese by tablespoons over olive paste, spreading gently to cover olive paste. Cover pan with another sheet of plastic wrap and chill at least 8 hours.
  • Remove plastic wrap from top of pan and invert torta onto a serving plate, then peel off remaining plastic wrap. Let torta stand at room temperature 20 minutes before serving.
