SUN-DRIED TOMATO AND GOAT CHEESE SKEWERS



Sun-Dried Tomato and Goat Cheese Skewers image

Number Of Ingredients 4

1 (8-ounce) log fresh goat cheese, chilled
1 cup pistachio nuts, finely chopped
20 sun-dried tomatoes packed in oil
1/2 bunch fresh basil leaves

Steps:

  • Special equipment: 20 small skewers or cocktail toothpicks
  • Fill a pitcher with hot water. Dip a knife into the hot water and slice the goat cheese log in half lengthwise. Slice each half into 10 pieces making sure to dip the knife into the hot water in between slicing to ensure a nice clean cut. Roll each piece of goat cheese into balls approximately 1/2-inch in diameter and put onto a cookie sheet lined with waxed paper.
  • Add the chopped pistachio nuts to a shallow bowl. Roll a goat cheese ball into the pistachio nuts and coat 1/2 of the ball. Return to the sheet pan and repeat with the remaining goat cheese balls.
  • Drain the oil from the tomatoes and put onto a plate lined with a paper towel.
  • Skewer a goat cheese ball onto the skewer. Lay a basil leaf on top a sun-dried tomato. Fold the tomato in half around the basil leaf and add to the skewer with the goat cheese. Repeat with remaining skewers. Arrange on a serving platter, cover and keep refrigerated until ready to serve.

Steps:

  • Drain tomatoes, reserving 3 tablespoons of oil., In a small skillet, heat reserved oil, tomatoes and garlic over medium-high heat. Cook and stir 5 minutes or until garlic is golden and tomatoes are heated through. To serve, place cheese on a serving plate. Pour tomato mixture over cheese. If desired, sprinkle with parsley. Serve with crackers.

1 shallot (chopped)
1 teaspoon sugar
2 cloves garlic (chopped)
1 tablespoon balsamic vinegar
1/3 cup sun-dried tomatoes, packed in oil (chopped)
1/2 cup goat cheese (crumbled)
2 tablespoons basil (chopped)
salt and pepper to taste
2 (6 ounce) chicken breasts (butterflied and pounded)
1 teaspoon olive oil
1 tablespoon unsalted butter
1 tablespoon flour
3/4 cup chicken broth
1 shallot (chopped)
2 tablespoons balsamic vinegar
1/4 teaspoon dried thyme
salt and pepper to taste

Steps:

  • Heat the oil in a pan.
  • Add the shallot, sugar and garlic and saute until the shallots are tender, about 3-5 minutes
  • Place shallots in a bowl and mix in the balsamic vinegar.
  • Add the sun dried tomatoes, goats cheese and basil and mix.
  • Season the chicken with salt and pepper.
  • Place the mixture onto the chicken breasts and roll them up.
  • Heat the oil in the same pan.
  • Place the chicken into the pan and fry until cooked, about 6 minutes per side.
  • Set the chicken aside and cover to keep warm.
  • Melt the butter in the same pan.
  • Add the flour and stir to mix.
  • Add the chicken broth, shallots, balsamic vinegar, thyme, salt and pepper and simmer until the sauce thickens, about 2-3 minutes.

  • In a large skillet, heat oil over medium heat. Add onion; cook and stir until softened, 4-5 minutes. Reduce heat to medium-low; cook, stirring occasionally, until deep golden brown, 30-40 minutes. Remove from heat. Let cool slightly. Gently stir in goat cheese and tomatoes., Preheat oven to 400°. 4 chicken breasts (boneless and skinless)

4 oz sundried tomatoes

Optional: balsamic glaze

Steps:

  • Whisk together balsamic vinegar, soy sauce, and brown sugar.
  • Place chicken in a gallon size plastic bag. Pour balsamic marinade into the bag and massage it to coat the chicken evenly. Marinate at least 1 hour or overnight.
  • When chicken has marinated grill over medium high heat for 5 minutes per side.
  • Top each chicken breast with goat cheese, sundried tomatoes, fresh basil, and balsamic glaze (if desired)

4 ounces cream cheese, at room temperature
1/4 cup grated parmesan cheese
1/4 cup extra-virgin olive oil, plus more for brushing

8 small cocktail tomatoes (about 10 ounces), quartered
2 tablespoons chopped fresh chives
2 teaspoons balsamic vinegar
1 clove garlic, finely chopped

Toasted baguette slices, for serving

Steps:

  • Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.

Steps:

  • Preheat oven to 350°F.
  • Brush 1 side of baguette slices with 2 tablespoons oil and arrange, oiled sides up, on a baking sheet. Toast bread in middle of oven until golden on top, about 7 minutes, then transfer to a rack to cool. Leave oven on.
  • Stir together fresh and dried tomatoes, basil, vinegar, and 1/2 tablespoon oil.

  • Place oil and tomatoes in a skillet over medium heat. Keep over heat, shaking the pan every couple of minutes until tomatoes are beginning to soften. Just as tomatoes start to soften, stir in garlic, Italian seasoning, salt and pepper. Cook 1 minute more. Remove from heat.
