GOAT'S CHEESE & CRANBERRY TARTLETS
These vegetarian tartlets make great finger food for a festive drinks party

Steps:
- Preheat oven to fan 200C/conventional 220C/gas 7. Lay pastry on a floured work surface. Using a round 7.5cm round pastry cutter, cut out as many circles as possible.
- Sit them on oiled baking sheets and score a circle about 2.5cm in from the edge of each disc by pressing gently with a 5cm cutter. Pierce the middle of each with a fork, brush with egg and top with a little cranberry sauce or chutney.
- Slice the cheese 5mm thick so you have a slice per disc (discard end rinds). Lay a slice on each tartlet, then top with thyme leaves, a drizzle of oil and a twist of black pepper.
- Bake for 10-15 minutes until the cheese is golden and the pastry crispy. Cool for 5 minutes and serve warm, garnished with rocket leaves.

WARM GOAT CHEESE IN PHYLLO
Steps:
- Preheat the oven to 375 degrees F.
- Unroll the sheets of phyllo dough on a flat surface and cover them with a slightly damp towel. (If the towel is too wet, the dough will get sticky.) Working quickly so the dough doesn't dry out, place one sheet of phyllo on a board, brush lightly with melted butter, and sprinkle lightly with bread crumbs. Place a second sheet of phyllo on top, brush with melted butter, and sprinkle with bread crumbs. Continue until you have 4 sheets stacked up. Cut the sheets in half crosswise to make 2 almost-squares.
- Cut one of the goat cheeses in half horizontally, making 2 thin discs. Place each disc in the center of one phyllo square. Starting at one corner, fold the phyllo up over the cheese and continue folding and pleating the phyllo around the cheese, as though you're wrapping a round gift that's tied on top. You will end with extra phyllo dough on top; twist the excess into a topknot. Brush the discs all over with melted butter and place on a sheet pan lined with parchment paper. Continue with the remaining phyllo dough and 2 goat cheese discs to make 4 additional packages.
- Bake for 20 minutes, until the phyllo is lightly browned. Allow to cool for 5 minutes.
- While the cheese packages bake, place the salad greens in a large bowl. Whisk the vinegar, mustard, garlic, salt, and pepper together in a small bowl. Still whisking, slowly add the olive oil, making an emulsion. Toss the salad greens with enough vinaigrette to moisten.
- Distribute the salad among 6 plates and place one warm goat cheese package in the center of each plate. Sprinkle with salt and pepper and serve.
SUNNY'S EASY CRANBERRY AND GOAT CHEESE CROSTINI
Steps:
- In a medium saucepan over medium-high heat, add the cranberries, stock, honey, rosemary, a pinch of salt and a few grinds of pepper and bring to a boil. Simmer for 1 minute, then remove from the heat and let cool in the pan.
- Smear the crostini with the goat cheese, then top with the cooked cranberries.

Steps:
- Put the packages of goat cheese in the freezer to harden slightly, about 15 minutes.
- Spread the dill out on a cutting board to dry for a few minutes. Mix together the cranberries and pistachios on another part of the cutting board.
- Remove the cheese logs from the freezer and take them out of the package. Gently roll one log over the dill, coating it almost completely. Do the same with the second log, rolling it in the cranberries and pistachios. Wrap the logs in plastic wrap and chill until time to serve.
- Serve with crackers.
GRILLED GOAT'S CHEESE WITH CRANBERRY DRESSING

- Quarter, core, then thinly slice the apple into a bowl with the lemon juice and 1 tbsp water. Toss well, as this stops the apples going brown.
- Heat grill to high, then line your grill rack with foil. Put the cheeses rind-side down on the foil, then set aside for a moment.
- Drain 2 tbsp of the juice from the apple bowl into another small bowl and discard the rest. Add the cranberry sauce, oil and honey with some seasoning, and whisk to form a dressing. Grill the cheeses for 4 mins, then scatter the nuts on and around the cheeses and return to the grill to cook for a few mins more - but take care that the nuts don't burn.
- Arrange the apple, chicory and radish sprouts or watercress on 6 plates, then carefully top with the hot melted cheese. Scatter over the nuts, spoon over the dressing and serve straight away.

- Preheat the oven to 400°F Place 2 slices of ham on a board, overlapping them slightly.
- Cut the goat cheese in half and place one portion in the centre of the ham slices. Scatter over 5-6 raspberries.

BRIE & CRANBERRY FILO PARCELS
Make these moreish brie and cranberry filo parcels to serve as canapés at a Christmas party. (Be sure to choose vegetarian brie for veggie guests)

- Heat the oven to 200C/180C fan/gas 6 and line two baking trays with baking parchment. Unravel a sheet of filo pastry onto a chopping board, covering the rest of the filo with a damp tea towel so it doesn't dry out. Brush the filo sheet liberally with some of the melted butter, then cut into three strips lengthways.
- Spoon ½ tsp cranberry sauce over the top right-hand corner of each pastry strip and place a piece of brie on top. Fold the pastry over the filling to create a triangle, then continue to fold the pastry over itself down the length of the strip. Brush with more butter to seal, then sprinkle over the poppy seeds and place on the lined baking tray. Repeat with the remaining ingredients. The parcels can be covered and chilled in the fridge for up to a day or frozen for up to three months.
- Bake for 15-20 mins (or 20-25 mins from frozen) until deep golden brown. Leave to stand for 5 mins before serving with some extra cranberry sauce.

GOAT CHEESE AND CRANBERRY PARCELS
Cranberry sauce is not just for winter / Christmas / Thanksgiving! I think an endive and watercress salad goes well as the bitterness contrasts with the sweet cranberry sauce. Alternatively, if you have the time to prepare them, some creamy mashed potatoes and fine green beans go well with the parcels.

- Cut each piece of phyllo into 4 quarters. Cut the cheeses in half width ways.
- To make a parcel, put one of the pieces of phyllo on a work surface and brush with olive oil.
- Put another piece over it at right angles to make a cross and brush with olive oil again. Lay a third piece diagonally, as if you were making a star shape, brush with oil, then top with the final piece, diagonally, to complete the 'star', and brush with oil.
- Place one of the pieces of cheese, cut-side up, in the centre of the pastry and put a heaped teaspoon of cranberry sauce on top of it.
- Fold up the sides of the phyllo and scrunch them at the top so they hold together. Brush all over with olive oil. Make three more parcels in the same way.
- Place all the parcels on a lightly oiled baking sheet and bake in a preheated oven, 400F, for 15-20 minutes, or until crisp and lightly browned.
- Serve at once with a leafy salad dressed with vinaigrette.

- Combine the chopped pecans, rosemary leaves and chopped dried cranberries in a small bowl. Set aside.
- Set the goat cheese log on a plate. Drizzle with 2 Tbsp honey, using the back of a spoon or clean fingers to spread the honey all over. (It will act as the glue)
- Sprinkle the chopped pecan mixture on all sides of the goat cheese log, pressing the ingredients into the cheese to adhere. Don't forget the bottom and the ends!
- Drizzle remaining tablespoon of honey on your serving plate or tray. It will keep the goat cheese from moving around. Plate the coated goat cheese directly on top of the honey. Garnish with any remaining pecan/cranberry mixture. Serve with crackers, fruit slices or veggies.
