5 medium carrots, thinly sliced
2 cups frozen corn, thawed
1 medium onion, diced
1 cup quick-cooking barley
1/2 cup bulgur
1/3 cup minced fresh parsley
1 teaspoon salt
1/2 teaspoon pepper
3 cups vegetable broth
1 can (15 ounces) black beans, rinsed and drained
1-1/2 cups shredded reduced-fat cheddar cheese

Steps:

  • Preheat oven to 350°. In a large bowl, combine carrots, corn, onion, barley, bulgur, parsley, salt and pepper. Stir in broth and beans. Transfer to a 13x9-in. baking dish coated with cooking spray., Cover and bake 50-55 minutes or until grains are tender, stirring once. Sprinkle with cheese. Bake, uncovered, 3-5 minutes longer or until cheese is melted.

3 large sweet potatoes
1/4 cup unsalted butter, melted
1/4 teaspoon nutmeg
1/2 teaspoon kosher salt
1/4 teasoon black pepper
3 Tablespoons unsalted butter, melted
1/4 cup granulated monk fruit
1 1/2 cups pecan halves
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F. Cover each sweet potato with foil and bake them until fork-tender. This will take 40-45 minutes, depending on the size of the sweet potato. When sweet potatoes are done cooking, reduce oven temperature to 350 degrees F.
  • Once tender, scoop the sweet potato out of the skin with a spoon. Place it all in a large bowl and mash until desired consistency. Add melted butter, nutmeg, salt, and ground black pepper. Mix to combine.
  • Place the sweet potato puree into a baking dish. Set aside.
  • Mix pecans with melted butter, cinnamon, and monk fruit. Add this mixture on top of the sweet potato puree.
  • Bake at 350 F uncovered for 20 minutes or until pecans are lightly toasted.

¼ cup sliced black olives
¼ cup sliced green olives
1 cup whole kernel corn
1 cup chopped stewed tomatoes
½ cup sliced fresh mushrooms
1 cup cubed Cheddar cheese
1 cup cooked white rice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 2 quart casserole dish, combine the sausage, black olives, green olives, corn, tomatoes, mushrooms, cheese and rice. Mix all together well.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes.

First time I made this I cut the recipe in half, thinking my family wouldn't be interested. I was trying to incorporate more wheat into our diet. I wished I had made the whole thing. I think it's yummy. I've adapted this from a recipe in "Marlene's Magic with Food Storage". Unsure of yield. Update: Recently made this and my 2 wheat salads as part of a booth at a preparedness fair. They were all a hit. The men especially liked this wheat casserole as it is similar to chili. The women generally liked the salads better - figures!

2 cups wheat berries
4 cups water
2 lbs ground beef
1/4 cup dried onion, reconstituted
1/2 cup green pepper, chopped
2 teaspoons chili powder
2 teaspoons garlic powder
2 garlic cloves, minced
2 teaspoons oregano
2 (14 1/2 ounce) cans tomatoes
2 (8 ounce) cans tomato sauce
1 (5 3/4 ounce) can black olives, drained, chopped
1 1/2 cups monterey jack cheese, grated

Steps:

  • Cook wheat in water for 1 1/2 hours or until tender. You may need to add more water during cooking time. Drain.
  • Brown ground beef with onions and peppers. Add to the wheat along with all the spices. Add tomatoes, sauce, and olives. Simmer for 30 minutes. Place in a 9x13 casserole dish and top with cheese.
  • Bake at 350 degrees for 25 minutes.
