ROMERI'S GNOCCHI & SAUCE
Living in St. Louis, I am blessed to have our "Hill" area - which is predominantly Italian folks. They share their heritage, and their cooking, with the rest of St. Louis. The following recipe appeared in the St. Louis Cathedral Cookbook (which I love.)

Steps:
- mix all gnocchi ingredients in a food processor. Mix until a dough ball is formed.
- Place on a floury cutting board and knead into a firm consistency.
- Cut a small hunk off and hand roll out to a long thin strip.
- Cut the strip into small bite size pieces and place on a tray covered with waxed paper and flour.
- When the tray is full you can add another layer of waxed paper and flour and continue. (No more than 3 layers are recommended).
- They can then be frozen right on the trays covered with foil or cooked right away.
- Fresh or Frozen, place them in boiling salted water like any pasta. Cook until tender (by taste) - do not overcook.
- To make the sauce, cook chopped garlic in olive oil.
- Add tomatoes and basil. Cook until tomatoes are thick and sauce like. This needs to simmer only 30-45 minutes at the most.
- Rinse pasta, cover with sauce and Parmesan cheese and enjoy.

Steps:
- Gnocchi: Place the cottage cheese in a large bowl.
- Stir in the egg yolk, Parmesan cheese and flour.
- Mix to form a slightly sticky dough.
- Bring the saucepan of water to the boil.
- Roll teaspoons of the mixture into balls and drop into the water.
- When the gnocchi rises to the surface, remove with a slotted spoon.
- Arrange the gnocchi onto serving plates. Top with the seafood sauce.
- Seafood Sauce: Cook the shallots in a pan for about 2 minutes Stir in the prawns and cook, stirring until they turn pink.
- Stir in the seafood sauce and sour cream. Heat gently.

Steps:
- Step 1: Bake potatoes at 375 F in oven about 90 minutes or until done.
- Step 2: In a medium bowl, use potato masher to mash potatoes well.
- Step 3: Add 2 egg yolks to bowl.
- Step 4: Add 3/4 cup of flour and salt to bowl.
- Step 5: Mix everything well, knead dough and roll the dough into a foot-long tube shape. Use remaining flour to knead the dough. Now, using a knife, cut small, inch-sized pieces from the roll of dough.
- Step 6: Drop the inch-size pieces of gnocchi into rapidly boiling water and remove when the pasta floats atop the water.
- Step 7: Serve hot with white sauce.
