PEPPERMINT PATTY BROWNIES

Steps:
- Mix butter, sugar, and vanilla. Beat in eggs till well blended. Stir in flour, cocoa, baking powder, and salt. Blend well.
- Reserve 2 cups of batter, set aside
- Grease 13x9x2 inch pan. Spread remaining batter in prepared pan. Arrange peppermint patties in a single layer over batter about 1/2 inch apart.
- Spread reserved 2 cups batter over patties. Bake 350 degrees F (175 degrees C) for 50-55 minutes till brownies begin to pull away from sides of pan. Cool completely in pan on wire rack. Enjoy!!!

- Preheat oven to 375°.
- Grease 13x9 pan.
- In a large bowl whisk together butter, sugar and vanilla.
- Add eggs and whisk until well blended.
- Stir in flour, cocoa, baking powder and salt.
- Mix well and reserve 2 cups.
- Spread batter in greased pan.
- Arrange the patties in a single layer.
- Spread reserved batter on top.
- Bake for 50-55 minutes.

- Preheat oven to 350ºF. Line an 8” square baking pan with parchment paper or foil. If using foil, coat with nonstick cooking spray.
- Combine butter and chopped baking chocolate in a small saucepan. Warm over medium-low heat, stirring often, just until smoothly melted. Set aside to cool while prepping dry ingredients.
- In a medium mixing bowl, whisk together the gluten-free all-purpose flour, cocoa powder, cornstarch, salt, and baking soda.
- In the bowl of a stand mixer fitted with the wire whip attachment, start beating the eggs on medium speed. While beating, slowly pour in the granulated sugar. Increase speed to medium-high and beat until the mixture is pale in color and ribbons down from the beater when lifted. Scrape down the bowl and beater as needed to make sure all of the sugar gets incorporated.
