This is a classic recipe for macaroni and cheese. The kids will love this!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Prepare the elbow macaroni according to package directions.
- Meanwhile, melt the butter in a small saucepan over medium high heat. Stir in the flour until a cream colored paste forms. Then pour in the milk and stir constantly until this comes to a hard boil, then stir for 1 more minute. Remove from heat and set aside.
- When the macaroni is cooked, spread 1/2 of it into the bottom of a lightly greased 9x13-inch baking dish. Then layer 1/2 of the grated onion, 1/2 of the salt and pepper and 1/2 of each of the cheeses. Repeat this one more time: macaroni, onion, salt and pepper and cheeses, and then pour the reserved white sauce over all. Top off with small pats of butter to taste.
- Cover and bake at 350 degrees F (175 degrees C) for 45 minutes.

OLD FASHIONED ELBOW MAC & CHEESE
I've not seen any recipe like this here. Mom used to make it, and it is divine comfort food; chunks of cheddar and a basic Béchamel sauce, topped with buttery bread crumbs, make for an amazing dish! **Béchamel sauce technique updated, thanks Noo for pointing out the error.**

Steps:
- Cook macaroni, drain.
- Melt butter over medium heat, add flour and cook briefly while stirring, until slightly golden in colour. Meanwhile, heat milk in microwave or on stove in separate pot until warm.
- Slowly add milk to flour and butter mixture; cook while whisking until sauce thickens. Add salt and pepper.
- Put half the cooked macaroni in a 9x13 pan; layer half the cheese, and half the sauce. Repeat.
- Top with breadcrumbs.
- Sprinkle top with melted butter.
- Bake at 375 degrees Fahrenheit for 30 to 40 minutes, until bubbling in middle.

- 1 Preheat oven to 350u02daF.
- 2 Cook pasta for 3 minutes and drain well.
- 3 In medium saucepan, melt butter. Stir in flour, mustard, salt, and pepper.
- 4 Gradually add milk and cook until mixture is smooth and bubbly, stirring constantly.
- 5 Cook over medium heat until mixture boils, stirring constantly.
- 6 Turn heat to low and simmer 1 minute, stirring constantly.
- 7 Gradually mix in cheese and stir until cheese is melted.
- 8 Add pasta; mix lightly. Pour into 2-quart casserole.
- 9 Top with croutons. Bake uncovered for 25 minutes or until internal temperature reaches 165-175 degrees.

- Cook elbow macaroni as per instructions. * I add some olive oil to prevent it from sticking, but that's optional. Drain macaroni through colander.
- Return to pot or casserole dish and add tomatoes.
- Mix tomatoes into macaroni.
- Heat oven to broil (500 degrees F) and top with shredded cheese.
- Bake macaroni and cheese with tomatoes on middle rack under the broiler for 3-5 minutes or until bubbly and lightly browned (to your preference). * I put a cookie sheet underneath to prevent spills from dripping down. * Keep a close eye on it to prevent burning.
- Serve hot.

- Preheat oven to 350 degrees, butter large casserole dish.
- In a saucepan on stove melt butter then add flour to make roux. Add dry mustard and salt, stir well. Add milk and water. Stir until thickened being sure to beat out any lumps with a whisk. Remove from heat and mix in cheddar cheese, cottage cheese and sour cream.
- Mix in macaroni.
- Place mixture in baking dish, top with grated cheese and paprika.

SUPER DELUXE OLD FASHIONED MACARONI AND CHEESE

- Preheat oven to 350 degrees F. Meanwhile, melt 4 tablespoons of the butter in a non-reactive saucepan. When bubbly whisk in flour and cook for a couple of minutes, stirring every now and then. Slowly whisk in the milk and bring to a boil. Reduce heat to low and simmer, whisking on occasion for 3 to 4 minutes. Remove pan from heat and whisk in grated cheese. - Cook macaroni according to package directions.
- Drain.
- Immediately place cooked macaroni into large bowl.
- While still hot, stir in the butter, the cubed cheddar, and the handful of grated cheddar.
- Mix well for one minute.
- Add the eggs and the can of cheddar soup.
- Mix through.
- Season liberally with Lawry's salt and pepper.
- Mix through.
- At this point, I like to give it a taste (I know, I know, raw eggs, but I live dangerously), to test for seasoning.
- Adjust seasoning as needed.
- Add the milk and mix again.
- Place mixture into a mid-size casserole.
- I use an 11x8x3 or so.
- Don't use a dish too deep or browning will be a pain.
- Spread evenly.
- Bake at 375 for 35-45 minutes, until golden brown and bubbly.
- Let sit for 10-15 minutes before serving.
- This is a very old family recipe from a woman I work with.
- I am kind of a mac&cheese junkie and have tried many over the years.
- This one is tops, bar none.

- PS If you have trouble finding Lawry's seasoned pepper, you can substitute McCormick's, not as good, but will do.

- On a LOW heat to avoid burning the flour, start by melting the butter and when it begins to sizzle and bubble then you can add the FLOUR slowly, stirring constantly to avoid burning. Watch to make sure the FLOUR is becoming a light brown color, still continuing to stir constantly. This may take 5 minutes or more. If this is not done properly you will either have undercooked flour or you will burn it.
- Once the butter and flour has retched a light brown color, and your sauce has cooled for 5 minutes slowly add in your "COLD" milk and stir till combined. Next, turn down the burner to low heat and add in your thyme, paprika, nutmeg along with white pepper into the white sauce and whisk it all together for 2 minutes or until fragrant. Then your Worcestershire sauce, salt and continue stirring for 5 minutes.
- Time to add in your "Old Shredded Cheddar Cheese" a bit at a time while stirring it over a low heat until the cheese melts into the white sauce. Now add a tsp of your Dijon Mustard and let it sit to combine. Enjoy!
- Pour into a baking dish and sprinkle the panko bread crumbs over the top. Bake 350 f for 30 minutes. Enjoy!
