FLUFFY GLUTEN-FREE PANCAKES
These fluffy gluten-free pancakes have a hint of cinnamon and vanilla for extra flavor. This recipe makes about 5 large pancakes or 8 smaller (2-inch) pancakes. Serve them with your favorite syrup and fresh fruit.

Steps:
- Combine gluten-free flour, baking powder, salt, and cinnamon in a large bowl; mix well.
- Mix egg, vegetable oil, and vanilla extract together in a second bowl until well combined. Stir flour mixture into egg mixture with a wooden spoon until a lumpy batter forms. Pour in milk and mix until a smooth batter forms. Set batter aside to thicken, 5 to 10 minutes. Add more milk, 1 tablespoon at a time, if batter is too thick.
- Heat oil in a griddle over medium-low heat. Drop 1 to 2 heaped tablespoonfuls onto the griddle for each pancake. Cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

- Mix the Flour Mixture and set aside.
- Mix baking soda, baking powder, salt, and sugar with just 1 cup of the Flour Mixture.
- Pour the TBS of vinegar in a measuring cup and add enough milk to make 1 cup of liquid. Add the egg white and whisk to combine.
- In a separate dish, melt the butter and add the yolk and vanilla, and whisk to combine.
- Add all liquid ingredients to the dry and mix until combined.
- Use approximately 1/4 cup batter per pancake and fry up in your favorite hot pan or griddle.
- We like these with Maple Syrup & butter. Mmmm!

GLUTEN-FREE BANANAS FOSTER PANCAKES
Get ready for pancakes that are light, delicious and gluten free. These are made with gluten-free flour, bananas and a bit of brown sugar, all topped with a decadent rum-butter bananas foster topping.

- For the pancakes: Combine the banana, flour, 2 teaspoons of the oil, the baking powder, vanilla, cinnamon, salt and egg in a medium bowl and mix until smooth.
- Heat the remaining 1/2 teaspoon oil in a large nonstick skillet set over medium heat. Pour out the batter, 1/4 cup at a time, onto the pan, making 4 pancakes. Cook for 1 to 2 minutes per side. The pancakes are ready to be flipped when numerous bubbles appear on the surface. Place two pancakes on two plates.
- For the topping: Combine the butter, rum and brown sugar in a medium skillet set over high heat. Stir constantly until the butter melts and the sugar dissolves, about 1 minute. Add the bananas and cook for 1 minute, stirring constantly. Remove from the heat, sprinkle in the vanilla and cinnamon, and baste if the cinnamon clumps. Top the pancakes with the cooked bananas and sauce, and serve.

- In a bowl, whisk together milk and lemon juice. Set aside for 10 minutes, this will become sour and turn into our buttermilk. Just before adding to batter, stir thoroughly.
- In a large bowl, stir together gluten free all-purpose flour, xanthan gum, baking powder, baking soda and salt. Mix in egg, canola oil, vanilla extract, prepared buttermilk and sugar.
- Heat a skillet or cast iron cook top over medium heat. Spray with cooking spray or grease lightly with canola oil. Add ¼ cups of batter about 2-inches apart on the cooking surface. Cook pancakes until bubbles appear on the surface, flip and continue to cook for an additional 2-3 minutes until browned and cooked through.
- Enjoy pancakes immediately or keep warm in an oven preheated to 250ºF.

- Put the flour in a bowl and make a well in the centre. Crack the egg in the middle and pour in a quarter of the milk. Use an electric or balloon whisk to thoroughly combine the mixture. Once you have a paste, mix in another quarter and once lump free, mix in the remaining milk. Leave to rest for 20 mins. Stir again before using.
- Heat a small non-stick frying pan with a knob of butter. When the butter starts to foam, pour a small amount of the mixture into the pan and swirl around to coat the base - you want a thin layer. Cook for a few mins until golden brown on the bottom, then turn over and cook until golden on the the other side. Repeat until you have used all the mixture, stirring the mixture between pancakes and adding more butter for frying as necessary.
- Serve with agave syrup and a squeeze of orange juice or your pancake filling of choice.
