EASY GLUTEN FREE BANANA BARS RECIPE
Classic gluten free banana bread baked in a 9x9 pan for a portable, lunchbox friendly, or easy breakfast - gluten free banana bars.

Steps:
- Preheat oven to 350 degrees and spray a 9x9 inch square pan with non-stick spray and line with parchment paper.
- In a large bowl, whisk together the flour, xanthan gum, baking powder, baking soda, salt, and granulated sugar.
- In a separate bowl, whisk together the mashed banana, brown sugar, oil, eggs, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir to combine.
- Pour the batter into the prepared pan and bake at 350 degrees for 25-30 minutes or until a toothpick or cake tester comes out clean or with a few moist crumbs attached. Cooking time will vary depending on your oven - mine took 29 minutes.
- Cool the bread in the pan on a cooling rack. Cut into 16 pieces and serve slightly warm or room temperature.
- To store, wrap tightly in foil or store slices in an air-tight container. It will stay fresh up to 3 days. This bread also freezes well. To freeze, slice into individual pieces and freeze in a freezer bag.

- Mix the sugar, bananas, oil, and eggs.
- Blend in the flour, baking powder, baking soda, cinnamon, and salt.
- Spread in the greased pan.
- Bake for 25 - 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely before frosting.
- To make the frosting, combine cream cheese, butter, and vanilla with electric mixer on medium speed until well combined. Gradually blend in the powdered sugar, until smooth.

- Preheat oven to 350 degrees.
- Grease a 9 inch square pan with shortening or spray with vegetable oil spray.
- In a small bowl, whisk together the flour, xanthan gum, baking powder, and salt. Set aside.
- In the bowl of your mixer, beat together the mashed banana and both sugars until blended.
- Add the buttermilk, egg, oil, and vanilla. Beat well.
- Stir in the dry ingredients until just blended (do not beat!)Fold in the nuts.
- Spoon the batter into the prepared pan.
- Bake for 25-30 minutes or until a tester comes out clean. Remove from the oven and keep the cake in the pan.
- Stir together the icing sugar and liquid until just thick enough to drizzle well.
- Drizzle in a zigzag pattern over the cooling cake.
- When cold, cut the cake into 12 bars.

- Batter: In a mixing bowl, cream butter and sugar.
- Add eggs, sour cream and vanilla.
- In separate bowl combine flour, baking soda, and salt; gradually add to the creamed mixture.
- Stir in bananas (I squish mine in my hand as I put it in).
- Spread in a greased cookie sheet, 17 x 12 x 1 inch baking pan.
- Bake at 350 for 20- 25 minutes or until a tooth pick comes out clean from the middle.
- Cool before frosting. Store in fridge.
- Frosting: In mixing bowl beat cream cheese, butter and vanilla.
- Gradually beat in enough powder sugar to achieve desired consistency. After 2 cups of powdered sugar I start tasting to see when it seems balanced with sugar and cream cheese.

Very good and light recipe that comes from Taste of Home Mag. I have changed the ingredients to lower the fat in the recipe from the original. This is different from some of the other's posted as it has less sugar, less eggs and adds sour cream. We love this recipe.
