CREAM CHEESE WONTONS

- For the dipping sauce: Mix together the honey, soy sauce, Sriracha, vinegar and sesame oil in a small bowl and set aside.
- For the wontons: In the bowl of a mixer (or you can do it by hand), mix together the cream cheese, Sriracha and green onions until totally combined (scrape the mixer bowl if necessary). In a separate bowl, mix together the egg and 1/2 cup water.
- One at a time, assemble the wontons: Place approximately 1/2 teaspoon of the cream cheese mixture on one corner of a wonton wrapper. Use your finger to "paint" the egg wash all around the edges of the wrapper. Roll the wrapper on a diagonal, starting with the cream cheese corner and stopping when half the wrapper is rolled and the cream cheese mixture is inside. Bring up the 2 ends and use the egg wash to stick them together. Allow the remaining pointed end to naturally tuck backward. (The wontons should resemble tortellini.) As you work, place the assembled wontons under plastic wrap or a light towel to keep them from drying out.
- Heat 2 to 3 inches of vegetable oil in a large saucepan or medium skillet until a deep-fry thermometer inserted in the oil registers just under 350 degrees F. (You don't want the oil too hot or it will burn the wontons! Experiment with a spare sheet of wonton wrappers to check.)
- In batches of 4 or 5 at a time, fry the wontons for 45 seconds to 1 minute, flipping carefully midway through to make sure they brown evenly. Remove them when you think they still could stand to slightly brown a teeny bit more (because they will slightly brown in the seconds after you remove them from the pan!). Drain the wontons on a paper towel. Repeat with the remaining batches.
- It's best to wait 5 to 10 minutes before serving the wontons, as the cream cheese filling can be quite hot. Serve with the dipping sauce.
NONNO'S PIZZA

- Combine the tomato puree, basil, kosher salt and 2 tablespoons of the olive oil in a small bowl. Allow to sit for 1 hour to let the flavors marry. Remove the pizza dough from the refrigerator and bring to room temperature for an hour as well.
- Preheat the oven to 400 degrees F.
- Drizzle the remaining 2 tablespoons olive oil on a 9-by-13-inch rimmed baking sheet. Stretch the dough in the oil, flipping it back and forth and stretching it to fit the baking sheet. Use your fingers to make a few dimples in the dough. Spread the sauce evenly over the top all the way to the edges. Bake until bubbly and golden brown, 20 to 25 minutes.
- Allow to cool for 5 minutes on the baking sheet, then remove to a wire rack to cool completely. Drizzle with 1 tablespoon olive oil and sprinkle with the ricotta salata, oregano and flake salt. Cut into squares and serve warm or at room temperature.

Steps:
- Grind ham or chop very fine.
- Mix together ham, pineapple, and cheese.
- Add just enough spaghetti sauce to let the ingredients stick together.
- Place a wonton wrapper on the table with one corner facing you.
- Place 1-2 teaspoons filling on wrapper, just above the corner.
- Wet edges of wonton slightly.
- Fold corner facing you over filling, then overlap right and left corners over the top.
- Roll up and press slightly to seal.
- Deep fry in hot oil just until golden. This only takes about 30 seconds. If you leave them too long they will burst.
- Drain on paper towels.
- Freeze on a cookie sheet and transfer to a plastic bag or container.
- Re-heat in oven or microwave.

PIZZA WONTONS
This recipe is great to make ahead and freeze for later use! I created this by taking the parts of several pizza roll recipes I liked on this site. My husband does not like many veggies so feel free to add any to your taste.

Steps:
- Mix all ingredients except wonton wrappers in a large bowl.
- Place one well rounded tsp of filling in center of each wonton wrapper.
- Fold the dough over forming a triangle.
- Seal, with water if needed.
- Place finished wontons on a baking sheet.
- Optional: spray wontons with cooking oil on each side.
- Bake in a 400 degree oven for 8-12 minutes.
- If freezing, place wontons on baking sheets and freeze until solid. Then place in a freezer bag.
- When ready to use, bake as above (no need to preheat).

WONTON PEPPERONI PIZZA BITES

- Preheat oven to 375 degrees F.
- Carefully fit wonton wrappers into mini muffin tins; no need to grease the pan. Bake for 6 to 7 minutes; remove from oven to cool. Can be done ahead.
- If serving immediately, lower oven temperature to 350 degrees F.
- Fold each turkey pepperoni slice into fourths, place one in bottom of baked wonton cups. Cut tomatoes in half, use your index finger to remove as many seeds as possible then finely chop tomatoes, place in a small bowl with the scallion and black pepper. Add a small amount of salt, do not use too much, the meat is spicy; mix well and spoon on top the pepperoni. Add the grated Fontina cheese and sprinkle with dried Thyme. Place in 350 degree oven for 2 to 3 minutes or until cheese is melted and serve.
