SLOW COOKER BAKED BEANS
These beans taste like Boston Baked Beans. Yummy!

- The night before, combine the Great Northern Beans and water in a large saucepan. Bring to a boil, and cook for 1 1/2 hours. Pour beans and their liquid into a bowl, cover and refrigerate overnight.
- In the morning, drain off liquid, reserving 1 cup. Pour beans and the reserved liquid into the crock of a slow cooker. Stir in the salt pork, onion, molasses, brown sugar, mustard and pepper. Cover, and cook on Low for 12 to 14 hours. Stir before serving.

This is the best baked bean recipe I've found so far! And it's done in the slow cooker so your stove and oven is open for other fixins'!

- In a large pot over high heat, combine the beans with water to cover and bring to a boil for 10 minutes. Remove from heat, but let sit for 1 hour.
- Drain beans and place them in a slow cooker. (If using ham hocks, add now.)
- Add the onion, brown sugar, maple syrup, salt and water.
- Mix well, cover and cook on high setting for 4-5 hours, stirring occasionally.
- During the final hour of cooking, add the ketchup and mustard (if you used ham hocks, remove the ham from the hocks and discard the hocks.).
- Mix well and serve.

- Drain the beans, cover with fresh water and bring to a boil. Simmer for about 1 hour.
- Drain and rinse the beans, then transfer them to a slow cooker insert. Add the tomato puree, brown sugar, molasses, dry mustard, bacon, onion and 1 1/2 cups water and stir to combine. Cook on low until the sauce is thick and syrupy, 8 to 10 hours.
- Before serving, stir in the cider vinegar and season to taste with salt.

- Place beans in a large pot and cover with plenty of water. Cover pot with a lid and soak beans for 8 hours or overnight. Drain and fill pot with fresh water.
- Cook beans over medium heat until tender, about 1 hour. Drain beans, reserving the water for later use.
- Place beans, ketchup, ham, 1 1/2 cup water, brown sugar, molasses, onion powder, mustard, salt, Worcestershire sauce, black pepper, and 1 cup reserved bean water in a slow cooker. Add more bean water as needed if beans get too dry.
- Cook on Low for 7 to 9 hours.

CROCK POT (SLOW COOKER) BAKED BEANS
I received this recipe from one of my great friends. I love to take these beans to a potluck. You can also use Sweet Baby Ray's BBQ sauce instead of ketchup for a different taste.

Steps:
- Cook ground pork sausage on medium heat until done in a deep sauce pan.
- Once fully cooked add raw bacon pieces and onion into pork.
- Saute together over medium heat until bacon is cooked and onion is soft (about 15-20 minutes).
- Add to crock pot.
- Add the rest of the ingredients to the crock pot and mix well.
- Simmer on high for 2 hours and then low for 2 hours or you can cook on low 6 hours.
- Corn starch may need to be added for thickening. Just take a few tablespoons of corn starch and mix with a little cold water (1/4 cup or so) until smooth. Gradually stir into bean mixture until blended.

BOSTON BAKED BEANS FOR A SLOW COOKER
This recipe comes from Cook's Country Magazine. They advise not to use dark or blackstrap molasses, as they will become bitter tasting in the slow cooker.

- 1. Set slow cooker to high to preheat. Drain beans and transfer to large Dutch oven. Add 8 cups water, baking soda, and bay leaves. Bring to boil over medium-high heat, then use wide spoon to skim off any foam that rises to top. Boil 15 minutes. Drain beans and transfer to slow cooker insert, discarding bay leaves.
- 2. While beans are cooking in Dutch oven, score fatty side of salt pork and cut into 2 pieces. Place scored side down in medium nonstick skillet over medium heat and cook until fat is rendered, 8 to 10 minutes. Turn salt pork over, add onion, and cook until lightly browned, about 5 minutes. Transfer to slow cooker insert. Stir 1/4 cup molasses, brown sugar, and boiling water into slow cooker insert.
- 3. Cover beans with piece of aluminum foil, then cover slow cooker with lid. Set slow cooker to low and cook until beans are tender and creamy, 10 to 12 hours. (Alternatively, cook on high for 5 to 6 hours.).
- 4. Turn off slow cooker and remove lid and aluminum foil. Stir in remaining 2 tablespoons molasses, mustard, and vinegar and season with salt and pepper to taste. Cover slow cooker with lid and let beans sit until sauce has slightly thickened, 15 to 20 minutes. Serve.

- sort and rinse beans. Soak beans overnight in cold water. Drain. Add 5 cups cold water, cover, heat to boiling, then simmer 30 minutes or until nearlu tender. Drain.
- Place onion slices on bottom of 6-cup flameproof bean crock.
- Mix together salt, vinegar, brown sugar, mustard, molasses, ketchup and pepper. Mix well. Add beans to mixture, and stir together. Pour this mixture over onions.
- Add enough water to cover mixture, then place sliced pork on top. Cover with lid and bake in oven at 250F for 7 hours.
- When beans are tender, remove 1 cup beans, mash, then stir back in pot carefully. Cover and continue to bake.
- Add water as needed to keep beans covered.
- One hour before serving, salt to taste.
