This is a dish that I am asked to make for potlucks, reunions, family get-togethers. There are never any leftovers except when I make it for myself. It is even better the next day. If I make it for myself, my next door neighbor always comes over and takes half of it home with her.

4 (15 ounce) cans black-eyed peas, rinsed and drained
1 large red onion, finely diced
1 large green bell pepper, seeded and finely diced
1 large tomato, seeded and finely diced
1 cup mayonnaise
2 tablespoons canola oil
2 tablespoons white vinegar
1 pinch white sugar, or to taste
salt and ground black pepper to taste
½ head cabbage, coarsely chopped

Steps:

  • Place black-eyed peas, onion, green bell pepper, tomato, mayonnaise, canola oil, white vinegar, sugar, salt, and black pepper in a large bowl; stir to evenly distribute mayonnaise.
  • Cover and refrigerate for at least 1 hour, preferably overnight.
  • Toss cabbage into black-eyed pea mixture just before serving.

1 large tomato, diced
1/2 medium red onion, finely chopped
1 small red bell pepper, finely chopped
1 jalapeno, finely chopped
2 tablespoons chopped green onions
2 tablespoons chopped fresh parsley leaves
1/4 cup unseasoned rice wine vinegar
1/4 cup canola oil
1/2 teaspoon sugar
Salt and freshly ground black pepper
Two 15-ounce cans black-eyed peas, drained

Steps:

  • Combine the first 6 ingredients in a bowl.
  • In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.
  • Toss all together with the black-eyed peas and let marinate for at up to 8 hours in the refrigerator before serving.

This recipe is an adaption of one that I found awhile back. It has quickly become one of DH's favorites. It can be made several hours in advance and kept in the refrigerator. Please note that the cooking time is the minimum recommended time to chill the salad before serving.

1 (15 1/2 ounce) can black-eyed peas, rinsed and drained
1 celery rib, chopped
1/4 finely chopped red onion
1 jalapeno pepper, seeded and finely chopped
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon mayonnaise
1/4 teaspoon salt
2 -3 dashes Tabasco sauce
1 medium roma tomato, diced

Steps:

  • In a medium size bowl, combine the peas, celery, onion and jalapeno pepper.
  • In a small dish, whish together the oil, vinegar, mayonnaise, salt and Tabasco sauce.
  • Pour the dressing over the peas and mix well; cover and refrigerate until serving time.
  • Just before serving, add the diced tomato and stir to combine.

3/4 cup orzo
1 (15-ounce) can black-eyed peas, drained and rinsed
1 large tomato, diced (1 cup)
2 tablespoons chopped flat-leaf parsley
2 tablespoons red-wine vinegar
2 tablespoons extra-virgin olive oil, divided
1/2 seedless cucumber, halved lengthwise, cored, and diced (1 cup)
1/2 cup pitted Kalamata olives, slivered
1/3 cup thinly sliced red onion
1 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
1 tablespoon finely chopped oregano
2 to 3 cups coarsely chopped romaine
1/2 pound feta, crumbled (1 cup)
4 to 8 peperoncini
Equipment: 4 (16-ounce) wide jars or containers with lids
Accompaniment: pita chips

Steps:

  • Cook orzo according to package instructions. Drain in a sieve and rinse under cold water until cool. Drain well.
  • Toss black-eyed peas, tomato, and parsley with vinegar, 1 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Marinate, stirring occasionally, 15 minutes.
  • Meanwhile, toss together orzo, remaining tablespoon oil, cucumber, olives, onion, lemon zest and juice, oregano, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl.
  • Divide black-eyed-pea mixture (with juices) among jars and layer orzo salad, romaine, and feta on top. Add 1 or 2 peperoncini to each jar.

1 tsp lime zest (i got this from 1 large lime)
1/2 c fresh lime juice (i used 2 large limes, 4 small will work if you don't have large)
1/4 c olive oil, extra virgin
1/2 tsp sea salt
1 tsp chili powder
1/2 tsp cumin
1 tsp brown sugar (can use splenda brown sugar if desired)
1 (15-ounce) can black-eyed peas, rinsed and drained
1 (15.5-ounde) can black bean, rinsed and drained
1 1/2 c fresh yellow corn (or frozen)
1 medium green bell pepper, diced
1 medium jalapeno pepper, seeded and diced (always wear gloves when working with hot peppers)
2 to 3 green onions, sliced (both green and white parts)
1/4 c fresh cilantro, chopped
sliced avocado and lime for garnish
additional cilantro for ganish

Steps:

  • 1. Whisk together first 7 ingredients; set aside.
  • 2. Combine peas, beans, corn, both peppers, onions and cilantro in bowl; pour liquid mixture over bean mixture. Toss to combine.
  • 3. Refrigerate several hours or over night before serving.
  • 4. Serve on lettice leaves and garnish with slices of avocado, limes and sprigs of cilantro. Or as a side dish with blacken fish, chicken, steak or pork. Or serve with corn chips as a nice snack or appetizer. Enjoy

This easy black-eyed-pea salad (salatu niebe) is a riot of colors on the plate- cooked peas (native to Africa), diced tomato, cucumber,bell pepper, scallions anmd parsley. Dressed with lime juice and olive oil- and a minced habanero chile- the salad is a perfect side to grilled kebabs or simply spooned into a lettuce cup. From the food section of the December 17,2008 Houston Chronicle that featured recipes from "Yolele! Recipes from the Heart of Senegal", the debut cookbook from chef-restauranteur Pierre Thiam. Prep time does not include soaking time for beans or marinating time for the salad.

1/2 lb black-eyed peas, soaked in water to cover for 1 hour
1 teaspoon salt (divided use)
1 tomatoes, peeled, seeded and diced
1 cucumber, seeded and diced
1 red bell pepper, seeded and diced
1 bunch green onion, chopped
1/2 bunch flat leaf parsley, roughly chopped
2 limes, juice of
1 habanero pepper, seeded and finely diced
1/8 teaspoon fresh ground black pepper (to taste)
2/3 cup best-quality olive oil
8 lettuce leaves, for serving

Steps:

  • In medium saucepan, gently boil peas in 1 quart water until tender, about 30 minutes.
  • Season with 1/2 teaspoon salt near the end of the cooking time. Strain and set aside.
  • In a large bowl, mix the tomato,cucumber,bell pepper,green onions,parsley, lime juice, habanero, remaining 1/2 teaspoon salt and black pepper.
  • Gradually pour in the olive oil while whisking the mixture together.
  • Gently fold in the black-eyed-peas.
  • Cover and allow to sit for 1 hour so that flavors can blend; serve in the lettuce cups.

Place black-eyed peas, onion, green bell pepper, tomato, mayonnaise, canola oil, white vinegar, sugar, salt, and black pepper in a large bowl; stir to evenly distribute mayonnaise. Cover and refrigerate for at least 1 hour, preferably overnight. Toss cabbage into black-eyed pea mixture just before serving. Nutrition. Calories: 340 kcal
