Steps:

  • Preheat oven to 475 degrees.
  • In shallow baking dish, toss carrots with oil and salt to coat.
  • Roast in oven for 10 minutes.
  • Heat butter in small saucepan until golden brown (dont burn!), remove from heat and add maple syrup.
  • Drizzle over carrots and shake pan to coat.
  • Return to oven and continue to roast for another 8 minutes, or until brown and tender.
  • Serve immediately.

1/2 cup maple syrup
2 tablespoons salted butter, melted
Zest of 1 lemon plus 2 tablespoons fresh lemon juice
1/2 teaspoon red chile flakes
Kosher salt
2 tablespoons olive oil
1 1/2 pounds rainbow carrots, scrubbed, stems trimmed and halved lengthwise
Kosher salt and freshly cracked black pepper
Flakey salt, for garnish
Chopped fresh Italian parsley or chopped carrot greens, for garnish

Steps:

  • For the glaze: In a medium bowl, whisk the maple syrup, butter, lemon zest and juice, chile flakes and a pinch of kosher salt.
  • For the carrots: In a large saute pan on medium to medium-high heat, add the olive oil and when it begins to swirl, add the carrots cut-side down and season with kosher salt and pepper. Cook to sear and caramelize, 5 to 10 minutes, then flip. On the flip, add the glaze and allow it to bubble and reduce, about 2 minutes. Pour everything onto a serving platter. Top with a sprinkle of flakey salt and chopped parsley or carrot greens.

1 1/4 pounds carrots, peeled and trimmed, sliced on the bias 1/3-inch thick
2 tablespoons unsalted butter
1 small shallot, finely chopped
1/2 teaspoon freshly grated lime zest
1/4 cup grade A medium amber or dark amber maple syrup
1 tablespoon lime juice
Coarse sea salt
Freshly ground black pepper

Steps:

  • Pour cold tap water into a large pot fitted with a steamer basket to a depth of 1 inch. Bring to a boil over medium-high heat, add the carrots, cover and cook just until the carrots have lightened in color and are barely tender, about 4 minutes.
  • Preheat the broiler with a rack set about 4 inches from the heat. In a large ovenproof skillet, melt the butter until frothy and add the shallot and lime zest. Sauté, stirring occasionally, over medium heat until the shallot is translucent, but not browned, about 4 minutes. Add the carrots, maple syrup, lime juice and a pinch of salt and stir to coat. When the mixture begins to bubble, continue to simmer 6 to 8 minutes, or until the liquid is reduced by half and is syrupy.
  • Transfer the skillet to the broiler and cook until the edges of the carrots have just begun to brown, about 5 minutes. Finish the dish with a sprinkling of salt and a few coarse grinds of black pepper.

  • Peel and cut the carrots into batons. (You can do this up to 24 hours ahead and keep them in a polythene bag in the fridge.) Wanting a quick carrot dish last night, I turned to one of my favourite books, "Linda McCartneys World Of Vegetarian Cooking". As usual she didn't let me down, this was an easy and deliciously tasty offering of carrots in a sweet glaze. The original recipe calls for honey or Maple syrup, I chose to use Maple Syrup, I had NO leftovers! I used the butter option.

1 lb carrot, peeled and cut into batons
50 g butter or 50 g margarine
2 tablespoons honey or 2 tablespoons maple syrup, for vegans
1 pinch salt
300 ml water
1 tablespoon sesame seeds

Steps:

  • Put the carrots into a medium pan with half the butter or margarine (25 gr), and half the honey or maple syrup(1 tbsp), and a pinch of salt, then add the water.
  • Bring to the boil, uncovered, and cook rapidly until the water has all but evaporated, and the carrots are tender, about 8 minutes.
  • Add the remaining butter or margarine, and the rest of the honey or maple syrup, and cook until a thick syrup forms to coat the carrots, 3 - 4 minutes longer.

4 tablespoons unsalted butter, divided
¼ cup chicken broth
2 tablespoons maple syrup
1 tablespoon lime juice
6 sprigs fresh thyme
⅛ teaspoon cayenne pepper
Maldon® sea salt flakes (optional)

Steps:

  • Prepare a water bath with an immersion circulator set to 185 degrees F (85 degrees C).
  • Cut carrots in half lengthwise and slice into 1/2-inch thick pieces on the bias/diagonal.
  • Place carrots, 2 tablespoons of butter, chicken broth, maple syrup, lime juice, thyme sprigs, and cayenne pepper into a resealable freezer bag or a vacuum seal bag. Seal the bag, and press out as much air as possible, then place into another freezer bag, press out all the air, and seal.
  • Lower the bag into the water bath until bag is completely submerged, then clip the bag to the side of the container. Be prepared to weigh the bag down if you see it starting to float. Cover the water bath container with aluminum foil to retain heat and minimize evaporation, and cook until carrots are tender, about 70 minutes.
  • Drain carrots through a fine mesh strainer set over a medium skillet; transfer carrots to a bowl and set aside.
  • Place the skillet over medium heat and bring the liquid to a simmer. Cook until it is reduced to about 3 tablespoons, 3 to 5 minutes. Remove the skillet from the heat and whisk in remaining 2 tablespoons butter, stirring until sauce is smooth and shiny.
  • Add carrots to the skillet, tossing gently to combine, and season with a sprinkle of salt flakes. Serve warm.
