PUFF PASTRY GLAZED APRICOT TWISTS

These are best served warm out of the oven. This is a double recipe for 16 pastries, you can cut the recipe in half and use just one puff pastry sheet for 8 pastries if desired.

1 (17 ounce) package frozen puff pastry (thawed according to package directions)
1 cup apricot jam, melted (melt just enough to make spreading easy)
1/2 cup confectioners' sugar
2 tablespoons whipping cream (unwhipped)
1 tablespoon fresh lemon juice

Steps:

  • Set oven to 400 degrees.
  • Line a baking sheet with parchment paper (you will most likely need two baking sheets for 16 pastries).
  • Roll out one puff pastry sheet onto a lightly floured surface into a 12x10-inch rectangle, then cut in half lengthwise (I use a pizza cutter for this).
  • Cut each half crosswise into four 5x3-inch strips (for a total of 8 strips).
  • Spread each strip with about 1/2 tablespoon apricot jam, then fold the strips in half lengthwise to form 1-1/2-inch wide strips.
  • Twist each strip 3 times, then place on the parchment-lined baking sheet.
  • Repeat with the remaining puff pastry (you should have 16 pastries when done, you might have to use two baking sheets.
  • Bake for about 15-20 minutes.
  • Transfer the twists to a rack.
  • In a small bowl whisk together confectioners sugar, whipping cream and lemon juice; brush over the warm pastries.

2 tablespoons shortening
2 tablespoons butter or margarine, softened
1/2 teaspoon vanilla
1 egg yolk
1 1/2 cups Original Bisquick™ mix
1/3 cup Cascadian Farm® organic apricot fruit spread
1/2 cup powdered sugar
1 to 2 teaspoons milk

Steps:

  • Heat oven to 350°F. In medium bowl, stir brown sugar, shortening, butter, vanilla and egg yolk until blended. Stir in Bisquick mix until well blended.
  • Divide dough into 4 equal parts. Shape each part into 8x1-inch strip crosswise on ungreased cookie sheet. With handle of wooden spoon, make slight indentation lengthwise in each strip. Fill each indentation with about 1 1/2 tablespoons fruit spread.
  • Bake 12 to 14 minutes or until edges are light brown. Cool slightly on cookie sheet. In small bowl, mix glaze ingredients until smooth and thin enough to drizzle. Drizzle glaze over tops. Cut diagonally into 1-inch strips.

Making jam is one of the best ways to harness the flavor of apricots during their short season, to enjoy during the colder months. In this recipe, we give the fruit's natural pectin a jump-start by macerating the apricots with sugar and lemon before cooking; the acid in the lemons activates the apricot's pectin, reducing the cooking time and preserving more flavor and color. We also added a touch of vanilla to coax out the mellow notes of the fruit and balance the mixture's tartness. Apricot jam tastes great with scones or slathered on rustic bread--or swirled into vanilla ice cream. It's also the classic choice for melting and brushing over pastries and fruit tarts.

2 pounds pitted, quartered apricots
1 3/4 cups sugar
Zest of 1 lemon plus 1 tablespoon lemon juice
1 teaspoon vanilla bean paste or 1/2 vanilla bean, split lengthwise and seeds scraped (see Cook's Note)

Steps:

  • Toss the apricots, sugar, lemon zest and juice and vanilla in a large saucepan to combine, then mash slightly to release some of the apricot juice. Set aside for 10 minutes to allow the apricots to macerate and the sugar to dissolve. Meanwhile, place a small plate in the freezer to chill; this will be used to test the doneness of the jam.
  • Place the saucepan over medium-high heat. (See Cook's Note for suggested add-in.) Bring the mixture to a boil and then reduce the heat to medium, stirring frequently. Continue to cook until the jam becomes thick and syrupy, about 35 minutes. To test doneness, place a small amount of the jam onto the chilled plate and freeze for 2 minutes. Drag your finger or a spoon through the jam. If it holds its shape and thickness, the jam is done; remove from the heat. If it's runny, continue to cook and test again in 5-minute increments. Once the jam has reached the right consistency, transfer to jars and cool completely before storing, tightly covered. The jam will keep in the refrigerator for up to 6 months.

A gorgeous glazed ham calls for a celebration, but it can be a bit daunting to make one. It doesn't have to be that way. As long as you buy the right ham (that's what your butcher is for, friends!), it's a snap to put together a flavorful, fragrant glaze -- and that's really all you need to make this showstopper of a roast.

One 9- to 10-pound bone-in fully-smoked ham (butt or shank half)
2 tablespoons whole cloves
Zest and juice of 2 limes
8 thin slices fresh ginger
2 cups unsweetened pineapple juice
1 cup apricot preserves
1/4 cup Dijon mustard

Steps:

  • For the ham: Remove the ham from the refrigerator and bring to room temperature, about 30 minutes. Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Insert the cloves into the ham, placing them at the intersections of the cuts (you may have some cloves left over).
  • Put the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch water into the bottom of the pan. Transfer to the oven and roast until a thermometer inserted into the thickest part of the ham registers 130 degrees F, about 2 hours and 30 minutes (about 15 minutes per pound).
  • Meanwhile make the glaze: Squeeze the lime juice into a small saucepan. Add the ginger and pineapple juice. Bring to a boil, reduce the heat and simmer until reduced to 1/2 cup, 8 to 10 minutes. Strain, then stir in the lime zest, apricot preserves and Dijon.
  • Increase the oven temperature to 425 degrees F. Pour half the pineapple glaze over the ham and brush to coat. If the water in the bottom of the pan has evaporated, add more. Return the ham to the oven and roast, basting every 10 minutes with the remaining glaze, until glossy and well browned, about 45 minutes more.
  • Let the ham rest for 15 minutes before carving. Carve the ham into slices and serve.

One 4- to 5-pound spiral-cut ham

Steps:

  • Whisk together the jam, mustard, sugar and 1/4 teaspoon black pepper in a small pot. Bring the mixture to a boil to melt the sugar, whisking occasionally. Reduce the heat to a simmer until the mixture thickens, about 2 minutes. Remove from the heat, and reserve.
  • Add 3/4 cup water to the insert of a 6-quart slow cooker. Place the ham in the insert on its side, and brush lightly with the glaze. Cover, and cook on low until the ham is hot throughout, 6 to 7 hours. Refrigerate the remaining glaze.
