"When making traditional lasagna, my mother would always have leftover noodles, so she experimented and came up with this tasty way to use them up," writes Renee Buck from Greenville, South Carolina. "You can substitute chicken for the ground turkey and use spinach instead of broccoli in the filling for these roll-ups," she suggests.

- Cook the noodles according to package directions; rinse and drain. In a nonstick skillet, cook turkey and onion over medium heat until turkey is no longer pink. , Meanwhile, in a small saucepan, bring broccoli and water to a boil. Reduce heat; cover and simmer for 5 minutes or until crisp-tender; drain., Add the broccoli, ricotta, egg, milk, thyme and salt to the turkey mixture. Spread over each noodle; drizzle each with 1/4 cup spaghetti sauce. Carefully roll up jelly-roll style. , Place seam side down in an 8-in. square baking dish coated with cooking spray. Drizzle with remaining spaghetti sauce. , Cover and bake at 375° for 45-50 minutes or until a thermometer reads 160°. Sprinkle with Parmesan cheese.

HEALTHY TURKEY LASAGNA ROLL UPS
Steps:
- In a large sauce pan, heat oil over medium heat.
- Add onions and garlic and cook for 4-5 minutes.
- Next, add ground turkey. Stir until cook thoroughly. Drain and return to pan.
- Add oregano and basil, stir.
- Pour tomato sauce, water and tomato paste into sauce pan. Stir.
- Bring to a boil, reduce heat, cover and let simmer for 30 minutes.
- Cook lasagna noodles according to package directions for al dente (cooked but still firm).
- Rinse pasta and set aside.
- In a 9 x 13 baking dish, add a couple spoonfuls of sauce to the bottom of dish.
- Take one noodle at a time and lay in baking dish.
- Spoon a thin layer of turkey mixture along the length of the noodles.
- Add cottage cheese, mozzarella cheese and lightly sprinkle with Parmesan cheese.
- Roll up and continue making until all 12 noodles are rolled up (you can use more if you have room in your baking dish).
- Once everything is rolled up, spoon the remaining turkey mixture over the top.
- Sprinkle with additional mozzarella cheese.
- Cover with foil and bake in a 350° oven for 45-50 minutes.
- Remove foil and cook for an additional 15 minutes.
MAKE-AHEAD CHEESY TURKEY SPINACH LASAGNA ROLL-UPS

- In 5-quart Dutch oven, cook lasagna noodles as directed on package. Drain; rinse with hot water. Drain well.
- Meanwhile, in 12-inch nonstick skillet, heat olive oil over medium-high heat. Add turkey, garlic and Italian seasoning; cook 5 to 6 minutes, stirring frequently, until turkey is no longer pink. Stir in 1 jar pasta sauce; heat to boiling. Reduce heat to low; cook 10 minutes, stirring occasionally. Transfer to medium bowl; cool 10 minutes.
- In medium bowl, mix spinach, carrot, ricotta cheese and eggs.
- Spread slightly less than 1/4 cup ricotta mixture evenly along center of each cooked lasagna noodle. Spread 1/4 cup turkey mixture over ricotta mixture, to within 1 inch of one short end. Roll up firmly toward unfilled end. Line 15x10x1-inch pan with foil. Place roll-ups seam side down in pan; cover loosely with foil. Freeze about 30 minutes or until firm.
- Place frozen rolls in two labeled 1-gallon airtight freezer bags. Freeze up to 3 months.
- To bake 16 lasagna roll-ups, spray two 13x9-inch (3-quart) glass baking dishes with cooking spray. Remove roll-ups from freezer bag; place 8 in each baking dish. Cover with foil; thaw in refrigerator at least 8 hours but no longer than 24 hours.
- Heat oven to 350°F. Divide remaining jar of pasta sauce between baking dishes, pouring over and down sides of roll-ups. Cover tightly with foil; bake 40 to 50 minutes or until hot and bubbly. Remove foil; sprinkle each dish with 1 cup mozzarella cheese; bake 3 to 5 minutes longer or until cheese is melted. Let stand 5 minutes before serving. Top with basil.

- Cook lasagna noodles according to package. When done rinse and separate. Best if on wax paper.
- In pan heat olive oil.
- Add onion and garlic, saute til brown, then carrot.
- Add tomatoe sauce and paste.
- Add all herbs, bring to boil.
- Simmer for 20 minutes.
- While sauce simmers brown turkey meat with beef broth. This will keep it nice and moist.
- Pre heat oven to 400 degrees.
- In a 9X14 pan put tin foil, and spray with cooking spray.
- Add half sauce.
- Take lasagna noodle and put one tbs of ricatta.
- On top of ricatta add tsb of mozzarella.
- Add 2-3 tbs turkey meat on top of cheeses.
- Add 1 tbs of sauce on top of everything.
- Fold noodle in half then over again.
- Place all roll ups in pan, then put rest of the sauce on top of noodles.
- Back at 400 for 20 minutes covered.
- Take out add rest of mozzarella cheese on top.
- Bake uncovered for 10 more minutes.
LASAGNA ROLL-UPS

- Cook the lasagna noodles in a large pot of salted boiling water until al dente. Drain, rinse with cold water to cool and lay flat on a sheet of foil. Set aside.
- Make the sauce: In a large pot, heat the olive oil over medium-high heat. Add the onion, mushrooms, green pepper and garlic and saute 4 to 5 minutes, until the vegetables are starting to soften. Remove the veggie mixture from the pan, then add the ground beef to the pan and cook, stirring occasionally, until it's totally browned. Drain the excess fat, then add 1/2 teaspoon each salt and pepper, the diced tomatoes, tomato paste, the veggie mixture and 1 tablespoon each parsley and basil and stir to combine. Let the mixture simmer over low heat, 30 minutes.
- Make the filling: Combine the ricotta, 1/2 cup mozzarella, 3/4 cup parmesan, the eggs, 1/2 teaspoon each salt and pepper and the remaining 3 tablespoons each parsley and basil. Stir to combine.
- Assemble the lasagna: Spoon a thin layer of sauce onto the bottom of a 9-by-13-inch pan or five 6-inch disposable foil loaf pans. Spread 2 to 3 tablespoons ricotta filling on each lasagna noodle, then roll them up so that the cheese is on the inside of the roll. Lay them sideways in the pan(s). (Four roll-ups will fit in each loaf pan, or you can fill a 9-by-13-inch pan.) Top with the remaining sauce and plenty of grated mozzarella and parmesan.
- If you're making the roll-ups right away, place the pan(s) on a baking sheet and bake at 375 degrees F for 20 minutes, until hot and bubbly.

TURKEY LASAGNA
Steps:
- Preheat the oven to 400 degrees F.
- Heat the olive oil in a large (10 to 12-inch) skillet. Add the onion and cook for 5 minutes over medium-low heat, until translucent. Add the garlic and cook for 1 more minute. Add the sausage and cook over medium-low heat, breaking it up with a fork, for 8 to 10 minutes, or until no longer pink. Add the tomatoes, tomato paste, 2 tablespoons of the parsley, the basil, 1 1/2 teaspoons of the salt, and 1/2 teaspoon pepper. Simmer, uncovered, over medium-low heat, for 15 to 20 minutes, until thickened.
- Meanwhile, fill a large bowl with the hottest tap water. Add the noodles and allow them to sit in the water for 20 minutes. Drain.
- In a medium bowl, combine the ricotta, goat cheese, 1 cup of Parmesan, the egg, the remaining 2 tablespoons of parsley, remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside.
- Ladle 1/3 of the sauce into a 9 by 12 by 2-inch rectangular baking dish, spreading the sauce over the bottom of the dish. Then add the layers as follows: half the pasta, half the mozzarella, half the ricotta, and one 1/3 of the sauce. Add the rest of the pasta, mozzarella, ricotta, and finally, sauce. Sprinkle with 1/4 cup of Parmesan. Bake for 30 minutes, until the sauce is bubbling.
BAB'S TURKEY MUSHROOM LASAGNA ROLLS
A short ingredient list makes this a weeknight possibility. It works great at potlucks, card parties or big family gatherings. What I love about it is that everyone has an individual serving and service is simple. Toss up a salad and dinner is done! Servings can vary depending on how hungry everyone is. - Preheat oven to 350 degrees F (175 degrees C).
- Spray a large baking dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain and reserve pasta in a bowl of cold water.
- Heat olive oil in a large skillet over medium-high heat. Cook and stir turkey, mushrooms, Italian seasoning, salt, and black pepper until turkey is evenly browned.
- Stir spinach and garlic into turkey mixture until heated through, about 1 minute more; remove from heat and allow to cool slightly.
- Spread about 1/2 cup marinara sauce on the bottom of the prepared baking dish.
- Drain lasagna noodles.
- Stir 1/2 cup mozzarella cheese, ricotta cheese and parmesan cheese into the turkey mixture until well mixed.
- Spread about 1/4 cup turkey and cheese mixture down the center of each lasagna noodle, leaving a space about 2 inches long at the end of the noodle.
- Roll the noodle up from the opposite end and arrange on prepared baking dish seam sides down. Repeat with remaining rolls.
- Pour remaining marinara sauce over lasagna rolls.
- Bake in the preheated oven until sauce is bubbly, 30 to 40 minutes. Sprinkle remaining 1 1/2 cups mozzarella cheese over the rolls and return to oven.
- Continue baking until cheese is melted, about 5 minutes more.

- Preheat oven to 350º.
- Brown ground beef in skillet on medium-high heat. Drain off any excess fat.
- Mix 1/2 of the jar of spaghetti sauce with the ground beef in skillet; stir to combine.
- In a small bowl mix the ricotta cheese, egg and 1/4 cup grated parmesan cheese.
- Working with one lasagna noodle at a time; lay one flat in front of you. Spread 2 heaping Tbs. of the ricotta mixture on the noodle.
- Top with a scant 1/4 cup of the meat mixture; spread leaving a little edge around the whole thing.
- Sprinkle 2 heaping Tbs. of shredded mozzarella cheese.

- Sprinkle with remaining parmesan and mozzarella cheeses.
- Bake 45 minutes or until hot and bubbly.
- Serve with a green salad and some breadsticks! Enjoy!
LIGHTER SIMPLE LASAGNA ROLL UPS
These delicious rolls use low-fat cheeses, egg whites, and whole wheat lasagna noodles to increase their nutrition. The noodles are rolled around a ball of filling, as opposed to spreading the filling over the noodle. The technique is quicker and not as messy and results with nice looking cannoli-type roll.

- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in the boiling water, stirring occasionally, until cooked through, about 8 minutes. Drain.
- Brown ground turkey with garlic in a nonstick skillet over medium heat, breaking the turkey up as it cooks, until no longer pink, about 10 minutes. Stir spinach, chives, oregano, parsley, and basil into ground turkey mixture, cook until heated through, and remove from heat.
- Lightly beat egg whites in a bowl and mix ricotta, feta, and Parmesan cheeses into beaten egg whites. Season with black pepper. Stir ground turkey mixture into cheese mixture.

- Preheat oven to 350°F. Boil lasagna noodles according to instructions. Drain the mushrooms and reserve the liquid. Mix together cubed turkey, onion salt, 1/2 cup mozzarella, 3/4 cup gravy, mayonnaise and mushrooms. Put the reserved mushroom liquid in with remaining gravy.
- Once noodles are done rinse in cool water. Put the turkey mixture onto the lasagna noodles and roll up. Then mix the remaining gravy with the remaining ingredients of 1/2 cup mozzarella, 3/4 cup gravy (with juice from mushrooms) and pour gravy over top.
- Let bake in oven 30-45 minutes when you see it is golden brown on top and bubbly.
