Very good, flavorful patties. You could also use ground pork instead of the turkey. We like these by themselves, but they are very good on a bun with some grilled pineapple.

Steps:
- Whisk together the soy sauce, sesame oil, scallion, garlic and ginger.
- Place ground turkey in a medium bowl, mix in sauce and gently combine using your hands.
- Cover bowl and place in fridge for 20-30 minutes.
- Form into 4 patties, and grill turning once, 4-5 minutes per side.

ABBA'S GINGER TURKEY BURGERS
In my voyage to healthier eating, I have started using ground turkey instead of beef. In doing so... I had to make it tasty too. I do not use salt. For those that choose to season, well, that's on you.

Steps:
- In a bowl, combine ground turkey, scallions, bread crumbs, 1 TB of the soy sauce, ginger, and garlic. Season to taste with salt and pepper. Mix well.
- Divide turkey mixture into 8 equal portion . Shape into patties.
- Heat oil in a skillet over medium heat until hot.
- For the sauce, in a small saucepan combine orange juice, lemon juice, and the remaining 1 TB soy sauce. Let bubble until reduced by half.
- Add 4 of the patties and cook for 7 to 8 minutes. Turn patties over and cook another 8 minutes or until done (165 degrees F). Repeat with remaining 4 patties. Keep the first batch warm in a warm oven.
- Whisk in the margarine & lemon basil to sauce. Pour over burgers.
- Serve with rice.

TURKEY BURGERS
Steps:
- For the burgers: Coat a large saute pan with olive oil. Add the onions, season with salt and bring to a medium-high heat. Cook the onions, stirring occasionally, until they are soft and very aromatic, 7 to 8 minutes. Add the scallions, garlic and ginger and cook until fragrant, 1 to 2 minutes. Turn off the heat and let cool.
- In a large bowl, combine the turkey, water chestnuts, cilantro, soy sauce, 1 tablespoon of the sambal oelek and the onion mixture. (Reserve the onion pan to cook the burgers in later.) Using your hands, squish everything together until really well combined.
- Make and cook a little tester patty to be sure that the turkey is really well seasoned. Re-season if needed. If the burger is missing salt add more soy or just give a little sprinkey dink of salt.
- When the burger mix is seasoned appropriately, shape it into 4 equal patties.
- Coat the saute pan with olive oil and heat over medium-high heat. Place the burgers in the pan. Be sure not to crowd the pan, if you need to work in batches go ahead! Cook the burgers for 5 to 6 minutes on each side.
- Preheat the oven to high broil.
- Transfer the burgers to a baking sheet lined with a wire rack. Place the buns, cut side up, on the same rack. Transfer to a low rack in the oven and broil until the burgers are cooked through and the buns are toasted, 2 to 3 minutes. Remove the buns from the rack and top the burgers with cheese. Return to the oven and broil until the cheese melts, about 1 minute.
- Stir to combine the mayonnaise and remaining 1 tablespoon sambal oelek in a small bowl. Schmear each side of the bun lightly with the sambaal mayo. Put a burger on each of the bottom buns and top each burger with a slice of tomato and onion and a piece of lettuce. Close up each burger, give each one a little squish and eat em' up!
TERIYAKI PINEAPPLE TURKEY BURGERS

- Drain pineapple; reserve 1/2 cup juice. Reserve 2 pineapple slices for snack or other use.
- Stir together teriyaki sauce and reserved pineapple juice in small bowl.
- Mix together turkey, ginger, bread crumbs and 1/4 cup teriyaki mixture. Shape into 8 patties.
- Grill patties, brushing with remaining teriyaki mixture, until brown and cooked through. Place pineapple slices on grill and cook until lightly golden brown.

- Heat a gas grill to medium-high or prepare a charcoal fire.
- In a large bowl, whisk together the miso, soy sauce and ginger. Add the ground turkey, scallions, breadcrumbs and black pepper. Gently but thoroughly mix together. Shape into 4 patties, each about 3/4 inch thick.
- To oil the grill grates, dampen a folded paper towel with vegetable oil, hold it with tongs and rub it over the grates.
- Grill the burgers until well browned on the underside, about 4 to 5 minutes. With a metal spatula, turn the burgers over carefully. Grill for another 4 to 6 minutes, or until the burgers reach 165 F at the thickest part.

- Preheat the oven to 200 degrees F to keep the first batch of burgers warm.

- To make the crispy kale, put the kale into a large bowl and toss with the lemon zest, olive oil, and a little sea salt. Arrange in a single layer on 1 or 2 baking sheets.
- Place in a preheated oven, at 400°F, for 15-20 minutes, turning halfway through cooking time, until crunchy and crisp. Sprinkle with a little more salt or some sesame seeds, if desired.
- Meanwhile, put the turkey into a large bowl with the onions, ginger, garlic, lemongrass, chile, and cilantro. Mix well, then season to taste and stir in the egg.
