Number Of Ingredients 13

3 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon freshly grated nutmeg, eyeball it
1/2 teaspoon salt
4 large eggs
2/3 cup packed dark brown sugar
1 cup canned pumpkin puree
1 1/4 cups milk
1/2 cup molasses
1/2 cup (1 stick) melted butter, plus some to butter the iron
Syrup, whipped cream or fresh fruits for topping, to pass at table

Steps:

  • Preheat waffle iron.
  • In a large bowl combine flour, baking powder, cinnamon, ginger, nutmeg and salt. In a medium bowl, beat eggs and brown sugar until fluffy, then beat in pumpkin, milk, molasses and melted butter. Stir the wet into dry until just moist. Do not overstir the waffle batter. Brush the iron with a little melted butter and cook 4 waffles, 4 sections each. Serve with toppings of choice.

This is a recipe that was invented as a result of my husband making waffles out of a cookie mix and now it is our favorite waffle recipe! Whole Wheat Flour can be substituted for the spelt flour and brown sugar for the fructose if desired.

2 cups spelt flour
1/4 cup fructose
1/4 cup ground flax seeds
2 teaspoons baking powder
1/2 teaspoon sea salt
1 teaspoon ginger
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon clove
1 egg
2 cups milk
1/4 cup coconut oil, melted
1 cup maple syrup

Steps:

  • Combine all the dry ingredients.
  • Whisk together Egg, Milk, and melted Coconut Oil.
  • Add wet ingredients to dry ingredients and combine well but do not over mix.
  • Pour about 1/3 cup onto hot waffle iron and cook to desired brownness.
  • Enjoy with maple syrup poured on top.

Plus the spelt offers a wondrously nutty essence, that you just don't get with plain old flour. The beauty is, these are my families favorite waffles. They don't miss the white-processed flour. They don't miss the handful of white sugar; and they don't miss the additional 1/4 cup of oil that I took out! So you can eat your waffles on Saturday morning, without an ounce of guilt, and still have dessert Saturday night!

2 1/4 cups spelt flour
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1 cup milk
3/4 cup seltzer water
1/4 cup oil

Steps:

  • Preheat your waffle iron.
  • Mix the dry ingredients on a large bowl. Then whisk in all the wet ingredient-until smooth.
  • Scoop the batter onto the waffle iron and close. Cook for 2-5 minutes, then repeat.
  • Make 12- 4 inch waffles.

2 ounces cream cheese, softened
1/2 teaspoon vanilla extract

WAFFLES:
2 cups all-purpose flour
1/4 cup packed brown sugar
3 teaspoons baking powder
1-1/2 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
4 large eggs, separated
2 cups buttermilk
1/2 cup butter, melted
1/2 cup molasses
2 teaspoons vanilla extract

Steps:

  • Beat first four ingredients until smooth; gradually beat in confectioners' sugar, then milk. Cover and set aside., Preheat Belgian waffle maker. Whisk together first eight waffle ingredients. In another bowl, whisk together egg yolks, buttermilk, melted butter, molasses and vanilla. Add to dry ingredients; stir just until moistened., In a clean bowl, beat egg whites until stiff but not dry. Gently fold into batter. Bake waffles according to manufacturers' directions. Drizzle with icing.

1 cup all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon ground ginger

1 large egg, separated, room temperature
3/4 cup buttermilk
1/4 cup molasses

Confectioners' sugar, optional

Steps:

  • In a large bowl, combine the first 7 ingredients. In a small bowl, beat the brown sugar and egg yolk until fluffy; add the buttermilk, molasses and butter. Stir into dry ingredients just until combined. , In another small bowl, beat the egg white and cream of tartar until stiff peaks form. Gently fold into batter. Quickly spoon onto a preheated waffle maker. Bake according to manufacturer's directions until golden brown. Sprinkle with confectioners' sugar if desired. Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in a resealable freezer container. To use, reheat waffles in a toaster on medium setting. Or, microwave each waffle on high for 30-60 seconds or until heated through.

1 (12 ounce) can evaporated milk
1/2 cup light molasses

1 can apple pie filling
1 container whipped topping
1/2 teaspoon ground cinnamon

Steps:

  • Preheat waffle maker.
  • Place waffle mix in large bowl and stir in eggs, evaporated milk, molasses, brown sugar, cinnamon and ginger.
  • Pour batter into waffle maker and cook until deep golden, being careful not to overcook.
  • Continue preparing waffle until batter is gone.
