This is a really good salmon recipe from Woman's World magazine. Full of all wonderful Mediterranean ingredients.

2 tomatoes, seeded coarsely chopped
3 tablespoons olive oil, divided
1 tablespoon red wine vinegar
1/2 cup nicoise olive, pitted and coarsely chopped
1/4 cup red onion, chopped
2 tablespoons capers, drained
3/4 teaspoon salt, divided
1/2 teaspoon pepper, divided
4 (6 ounce) salmon fillets
1/3 cup fresh basil, loosely packed thinly sliced

Steps:

  • Combine tomatoes, 2 tablespoons olive oil, red wine vinegar, olives, onion, capers, 1/2 teaspoon salt, 1/2 teaspoon pepper.
  • Set aside.
  • Brush both sides of the salmon with the remaining olive oil.
  • Sprinkle with remaining salt and pepper.
  • Heat a large non-stick skillet over medium-high heat or postion broiler rack so that the top of the fish on rack will be 3 inches from heat source-preheat broiler.
  • Saute or broil salmon 3-4 minutes per side or until cooked through.
  • Add basil to reserved tomato mixture.
  • Serve with salmon.

½ cup olive oil
¼ cup balsamic vinegar
4 cloves garlic, pressed
4 (3 ounce) fillets salmon
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh basil
1 ½ teaspoons garlic salt

Steps:

  • Mix together the olive oil and balsamic vinegar in a small bowl. Arrange the salmon fillets in a shallow baking dish. Rub garlic onto the fillets, then pour the vinegar and oil over them, turning once to coat. Season with cilantro, basil, and garlic salt. Set aside to marinate for 10 minutes.
  • Preheat your oven's broiler.
  • Place the salmon about 6 inches from the heat source, and broil for 15 minutes, turning once, or until browned on both sides and easily flaked with a fork. Brush occasionally with the sauce from the pan.

BRAISED SALMON MEDITERRANEAN STYLE

1 medium carrot
2 small celery branches
2 seedless clementines
1 medium tomato
1 small onion
1 cup water
2 clementines, juiced
1 cup dry white wine
1 tablespoon red wine vinegar
1 tablespoon olive oil
Salt and pepper
4 (5-ounce) salmon fillets
4 large lettuce leaves
1/2 lemon, juiced
12 pitted black olives, sliced
1 scallion, sliced
4 small bouquets celery leaves
1 tablespoon olive oil

Steps:

  • Prepare the fruit and vegetable garnish. Peel the carrot and slice in thin half moons. Slice the celery branches and peel the clementines and remove as much as the white filaments as possible. Cube the tomato, and peel and thinly slice the onion.
  • In a medium size pot, add the water, clementine juice, white wine, red wine vinegar and olive oil and bring to a boil. Add the carrots, onions, celery and tomato and salt and pepper (it should taste under-seasoned, as it will go through reduction). Then cover, lower the heat and let cook for 10 to 15 minutes while you prepare the fish.
  • Remove any dark flesh from the fish if present. Wash the lettuce leaves, remove the hard white part and blanch the lettuce by plunging them in boiling water for 5 to 10 seconds, until it becomes limp and dark green. Remove and refresh immediately in cold water. When cold, drain and squeeze out the excess water.
  • Then season each piece of salmon individually on both sides, and wrap them neatly in the lettuce leaves so that you get nice small bundles. Place the fish in the braising liquid, on top of the vegetables. The liquid should reach halfway up the sides of the salmon. Lower the heat to very low, cover and cook for 5 to 10 minutes. (The cooking time depends on your preferences. Some people like their fish slightly underdone in the middle, others like it cooked through. Check the inside of one fish by gently pulling the lettuce aside and separate the flakes of the salmon. The inside color will tell you how done it is. The best is when it is slightly orange inside and pink on the outside)
  • When the fish is cooked, remove from the pot and reduce the cooking liquid by 1/3 to 1/2, until full-flavored. Add the clementine segments to warm them. Do not allow them to overcook and fall apart. Check the seasoning and add the lemon juice.
  • Place each piece of fish in a small soup plate. Surround the fish with a nice mix of garnish and cover it with the cooking juice. Decorate with pieces of black olives, sliced scallion, and little celery leaves bouquets. Finally, brush the fish with some olive oil to make it shiny, and serve immediately.

1 small bulb fennel, trimmed, cored, and very thinly sliced crosswise, reserving 1 tablespoon fronds
Coarse salt and freshly ground black pepper
4 boneless skinless salmon fillets (4 ounces each), about 1/2 inch thick
Extra-virgin olive oil
1 thin slice lemon, halved
1 thin slice navel orange, halved
Finely chopped flat-leaf parsley, for garnish (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Cut 4 sheets parchment paper each measuring 12 by 16 inches. Working with 1 sheet at a time, lay 1/4 of the fennel in the center; season with salt and pepper. Place 1 salmon fillet on top; drizzle with olive oil and season well with salt and pepper. Top fish with 1 piece of lemon, 1 piece of orange, and sprinkle with 1/4 of the fronds.
  • Hold long ends of paper together. Make a 1/2-inch fold and crease. Continue making 1/2-inch folds in the same direction until you reach the surface of the salmon. Make a 1-inch fold on each end of the 2 short ends and crease; fold short ends under fish and place on a baking sheet. Repeat process until all parchment has been filled. Bake until fish is just cooked through, 15 to 18 minutes.
  • Transfer packet to a plate and carefully cut open parchment. Serve salmon immediately in parchment packet sprinkled with parsley, if desired.

4 small skinless salmon fillets (1 lb.)
1 red pepper, chopped
6 oz. (3/4 of 8 oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
1/2 cup fat-free reduced-sodium chicken broth, divided
1 Tbsp. lemon juice
1 tsp. lemon zest
1/2 tsp. garlic powder
1/4 tsp. black pepper
1 pkg. (6 oz.) baby spinach leaves
1/4 cup crumbled reduced fat feta cheese

Steps:

  • Cook pasta as directed on package, omitting salt. Meanwhile, cook salmon in large nonstick skillet on medium heat 3 to 4 min. on each side or until done. Transfer salmon to plate; cover to keep warm.
  • Add red peppers to skillet; cook and stir 2 min.
  • Whisk Neufchatel, 2 Tbsp. broth, lemon juice, lemon zest, garlic powder and black pepper until smooth. Add to skillet with spinach; cook and stir 3 min. or until heated through.

Really quick and easy tea for everyone! Would be equally as good if salmon was replaced with chicken wrapped in parma ham.

Steps:

  • Preheat the oven at gas mark 6. In a high sided baking tray place the potatoes, half the oil, the juice of half a lemon, the herbs, half the lemon zest, garlic cloves- stir and season well with salt and pepper. Cook for 15/ 20 until becoming soft, add the courgettes after 10 minutes. Lift the salmon out of the fridge so it can come to room temperature.
  • When the potatoes are becoming soft, stir again and add the peppers. Cook for 5 mins.
  • Lift out stir, add the rest of the oil, zest, lemon juice and the squeezed lemons (for extra flavour). Add the vine tomatoes. Place the salmon on top of the vegetables, skin up- season the skin well with salt and pepper. Cook for a further 10 minutes in gas mark 6/7 until salmon is just cooked and soft in the middle.
  • Serve- discarding the garlic gloves and lemon.
