Who can resist a good gingerbread cookie. They are so yummy. These cookies can be ate as is or decorated with icings. I include mine in a small basket along with a few cookie cutters and frosting tubes. - 1. Mix 2 cups of the flour with the baking soda and baking powder. Mix the remaining 1 1/2 cups flour with the spices. In a one-quart, wide-mouth canning jar layer the ingredients starting with the flour baking powder mixture, then the brown sugar, and finally the flour and spice mixture.
- 2. Attach a card to the jar with the following instructions: Gingerbread Cookies: Empty contents of jar into a large mixing bowl. Blend together well. Add 1/2 cup softened butter or margarine, 3/4 cup molasses and 1 slightly beaten egg. Mix until completely blended. Dough will be very stiff so you may need to use your hands. Cover and refrigerate for 1 hour. Heat oven to 350 degrees F. Roll dough to 1/4-inch thick on a lightly floured surface. Cut into shapes with a cookie cutter. Place cookies on a lightly greased cookie sheet about 2 inches apart. Bake for 10 to 12 minutes. Decorate as desired.

- Mix 2 cups of the flour with the baking powder and baking soda. Mix the remaining 1 1/2 cups flour with the ginger, cloves, cinnamon and allspice. In a 1 quart wide mouth canning jar, layer the ingredients starting with the flour and baking powder/soda mixture, then the brown sugar and finally the flour and spice mixture. Pack firmly between layers.
- Attach a card to the jar with the following directions: Gingerbread Cookies.
- 1. Empty contents of jar into a large mixing bowl. Stir to blend together. Mix in 1/2 cup softened butter or margarine, 3/4 cup molasses and 1 slightly beaten egg. Dough will be very stiff, so you may need to use your hands. Cover, and refrigerate for 1 hour.
- 2. Preheat oven to 350 degrees.
- 3. Roll out dough to 1/4 inch thick on a lightly floured surface. Cut into shapes with a cookie cutter. Place cookies on a lightly greased cookie sheet about 2 inches apart.
- 4. Bake for 10-12 minutes Decorate as desired.

- Layer your ingredients in the jar as follows: First, put in the wholemeal flour mixed with baking powder. Then, the dried cranberries followed by the rolled oats with cinnamon. Your fourth layer is the soft brown sugar seasoned with flaky sea salt and finally, the white chocolate chunks and Horlicks. If giving the jar as a present, simply download our gift tag with the recipe method and print it off, stick it on the jar and tie a ribbon around the top.
- If you want to make the biscuits yourself, or would rather handwrite the label, the method is as follows: Butter two baking sheets and pre-heat the oven (180C/160C fan/gas 4). Whisk an egg, the soft butter and vanilla extract in a bowl using an electric whisk until the mixture is smooth and creamy, so about 5 mins.
- Add the contents of the jar and mix together gently to form a dough. Put 12 golf-ball-sized spoonfuls of the dough onto each baking sheet, then bake for 11 mins. Remove the cookies from the oven and leave to cool a bit on the baking sheets. Eat them while they're still warm.

GINGERBREAD GIFT JARS

- Mix sugar with ginger, allspice and cinnamon. Spoon into a jar and pack down tightly. Add a layer of crystallised ginger. Mix flour with baking powder and bicarbonate of soda and spoon on top of the ginger. Put on the lid, decorate with ribbons and a cookie cutter.
- Label with cooking instructions: Mix 150g melted butter with 1 tbsp golden syrup and 1 egg yolk. Add to the dry ingredients, mix well, then knead to a dough. Chill for 15 mins then roll out. Cut into biscuits and bake at 200C/180C fan/gas 6 for 8-10 mins. Cool on a wire rack.

- Beat together the butter, treacle, brown sugar and salt in a large mixing bowl. Add the egg, then beat through all of the remaining dry ingredients apart from the caster sugar. Chill the mixture in the fridge for 1 hr.
- Heat the oven to 200C/180C fan/gas 4. Line two baking sheets with baking parchment. Roll the mixture into 20 even-sized balls (weighing for accuracy, if you like). Tip the caster sugar onto a small plate, then add each ball and roll around to coat. Space each ball out on the baking sheets. Bake for 9-10 mins until golden brown. Leave to cool completely on a wire rack.
