These quick and easy, vegetarian, Ginger Mashed Potatoes are a perfect side dish for fall and lovely for Thanksgiving! They're creamy, rich and packed with warm flavors.

3 pounds sweet potatoes
6 tablespoons unsalted butter
2 tablespoons plus 2 teaspoons ginger pulp, (freshly grated (see notes))
2 teaspoons brown sugar
½ teaspoon ground cinnamon
6 tablespoons heavy cream
salt and freshly ground black pepper to taste

Steps:

  • Peel the sweet potatoes, and then cut them into bite-sized pieces, about 2-inch cubes.
  • Put a large steamer into a large pot with the water level just below it. Over high heat, bring the water to a boil and then add sweet potatoes to the rack. Turn the heat to low, cover, and steam until the sweet potatoes are very tender, about 15 minutes. (You can stick a fork into one of the pieces to see how tender they are -- it should easily slide right out when they're done.)
  • Add the sweet potatoes -- along with the butter, ginger, brown sugar, and cinnamon -- to a large mixing bowl and use a very large fork or potato masher to mash them. They can be as smooth or as chunky as you'd like -- mine are mostly smooth with a few chunks. (This must be done while they're still hot, so that the butter melts in nicely.)
  • Now mix in the cream and season to taste with salt and pepper. (Here's How.)

2 lbs yams (or sweet potatoes) sliced into ½ inch thick disks, skin on
water
2 tablespoons coconut oil, butter, ghee, or olive oil
1 shallot, finely diced
2 teaspoons fresh ginger, grated or paste
2 garlic cloves, minced
1 teaspoon salt
pepper to taste

Steps:

  • Slice sweet potatoes into disks and place them in a pot, cover with water, bring to a boil, cover with lid and simmer 12-15 minutes.
  • When the sweet potatoes are fork tender, drain, saving the water. In the same pot, heat olive oil, butter or coconut oil over medium heat and add shallots, ginger and garlic, stirring until fragrant and golden about 2-3 minutes.
  • At this point, you could add the sweet potatoes back into the pot and mash ( using a potato masher) adding some of the reserved sweet potato water to loosen it, or place it all in a food processor to whip until silky smooth.
  • I usually add about ½ cup liquid for a looser, almost saucy consistency. Season with the salt, pepper.
  • Top with maple pecans for a crunchy texture.

For the soup:
2 medium sweet potatoes
2 tablespoons extra-virgin olive oil
1 medium yellow onion, cut into small dice
2 tablespoons minced fresh ginger
1 jalapeño pepper, seeded and minced

1/2 teaspoon ground nutmeg
4 cups low-sodium chicken stock or water
Salt
For the garnish:
2 green onions, root ends removed, finely chopped

Steps:

  • Preheat the oven to 450°F. Poke the sweet potatoes with a fork, wrap in aluminum foil, and bake in the oven for 1 hour. Remove from the oven and let cool to room temperature.
  • Cut the sweet potatoes in half and scrape out the flesh. Heat the oil over medium heat in a large Dutch oven or heavy soup pot.
  • Add the onions and ginger, and cook over medium heat, stirring occasionally, for 5 minutes or until the onions are translucent.
  • Add the jalapeño, coriander, and nutmeg and cook for 3 minutes or until fragrant.
  • Add the roasted sweet potato flesh and stock to the pot. Simmer for 10 minutes. Remove from the heat and purée with a handheld immersion blender or food processor until smooth. Season with salt.
  • Divide the soup among 6 serving bowls and sprinkle with the green onions.

This is my version of a traditional Thanksgiving favorite. I love sweet potatoes, but find I don't need any sweetener, so I substituted orange juice. You'll find yourself serving this casserole quite often! You can cut the prep time on serving day by cooking the sweet potatoes up to two days in advance; simply remove their skins and store in the fridge in an airtight container until needed.

4 sweet potatoes, scrubbed
1 tablespoon orange zest
2 teaspoons finely minced fresh ginger root
2 egg yolks
salt and ground black pepper to taste
¼ cup orange juice, or to taste
½ cup 2% low-fat milk
⅓ cup chopped pecans

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Place oven rack in middle position. Lightly grease a 1 1/2 quart baking dish, and set aside.
  • Line a rimmed baking sheet with foil. Pierce each sweet potato several times with a fork, and place on the prepared baking sheet.
  • Roast the sweet potatoes in preheated oven until easily pierced with a fork, 1 to 1 1/2 hours.
  • Remove sweet potatoes from the oven, and cool about 15 minutes. Lower oven temperature to 375 degrees F (190 degrees C).
  • When sweet potatoes are cool enough to handle, cut in half, and scoop flesh into the bowl of a food processor. Discard potato skins. Add the orange zest, ginger; and egg yolks; process to make a smooth mixture. Season to taste with salt and pepper. Pour in the orange juice and milk; if desired, add more orange juice to taste. Spoon sweet potato mixture into prepared baking dish. Sprinkle top with pecans.
  • Bake in preheated oven until heated through and pecans are toasted, about 30 minutes.

1 garlic clove (minced)

1 pinch dry chili peppers or 1/4 fresh mild chili
1 1/2 teaspoons dried lemon grass
1 large sweet potato (peeled)
200 g coconut cream
2 tablespoons fresh plain yogurt
1/2 liter vegetable stock (cube based)

Steps:

  • Sauté garlic and ginger in oil for 1min in large sauce pan, to release flavours.
  • Add vegetable stock. Simmer for 2 minutes.
  • Add diced potato, reduce heat and simmer for 10mins, add lemon grass and chili, and continue to simmer until potato is soft, approximately 5mins.
  • Liquidise.
  • Return to heat; add coconut and yogurt. Do not boil!
  • Serve (garnish with olive oil, and serve with crusty bread).

1-2 tsp curry paste (use what you have or buy a Madras or red curry paste)

  • Heat oven to 200C/180C fan/gas 6. Prick the potato and bake it for 40-45 mins or until soft when you squeeze the sides.
  • Meanwhile, heat the oil in a small frying pan and fry the onion until softened, add the garlic and cook for 1 min, then add the ginger and curry paste and cook for another min. Stir in the butter and spinach, and continue stirring until the spinach wilts. Season well.
  • Cut open the top of the sweet potato, scoop out some of the flesh, add it to the mix in the pan and stir through, then spoon the mixture back into the potato.

6 medium sized sweet potatoes
1 tablespoon vegetable oil
1/4 head garlic (about 5 unpeeled cloves)
1 teaspoon ginger
6 cups low sodium chicken broth
1 -2 cup water

Steps:

  • Preheat oven to 350.
  • Slice potatoes in half lengthwise.
  • Brush cut surfaces with vegetable oil and place cut side down on a baking sheet.
  • Scatter garlic cloves in center of pan (you may need two pans).
  • Bake until potatoes are very soft, about 25-60 minutes depending on the size of your potatoes.
  • Scoop out potato pulp from skins and place in a blender (you may need to do this in several batches depending on the size of your blender and the size of the sweet potato).
  • Squeeze garlic cloves from their skin (use to taste, I used about 2), and place in blender with ginger.
  • Whirl potatoes, adding broth slowly as needed to produce a puree.
  • Transfer puree to a large pot and stir in remaining broth and water until desired thickness (as you heat the soup it will thicken so you may need to add more water as it heats).
  • Heat over medium low, stirring frequently to prevent scorching, until hot.
  • Soup keeps well frozen or in the refrigerator.

  • Heat a large, heavy-bottomed soup pot over medium heat. Add the coconut oil to the pot and let it melt. Add the onions to the pot and stir. Saute the onions, stirring occasionally, until translucent and quite soft, about 5 minutes. Add the chili flakes, coriander, cumin, and turmeric. Saute spices until very fragrant, about 1 minute.
