GINGER & SCALLION SCALLOPS WITH PASTA

GINGER & SCALLION SCALLOPS WITH PASTA image

Categories     Pasta     Shellfish     Sauté     Low Fat

Yield Makes 4 very generous or 6 reasonable servings

Number Of Ingredients 12

2 lb Dry Sea Scallops, cut in quarters vertically (not sliced horizontally)
1/4 cup First Cold Pressed Extra Virgin Olive Oil
5 large Garlic cloves, coarsely chopped
3 oz fresh Ginger, peeled and cut into 1-inch julienne strips
2 bunches (approx 10 stalks) Scallions, rinsed, trimmed and cut into 1-inch lengths
1/2 tsp cayenne pepper
1 pinch fresh-ground Nutmeg
Juice of 1 fresh Lime
Fresh-ground Black Pepper to taste
Sea Salt to taste
1 lb imported Italian Pasta, any variety
Freshly-grated imported Romano cheese (optional)

Steps:

  • Heat half the olive oil over moderate heat in a 12-14 inch heavy skillet until aromatic, then add garlic and ginger and saute until garlic is light golden and ginger is fragrant, stirring all the time, about 1-2 minutes. Add cayenne and nutmeg, stirring for about 15 seconds, then add scallops and saute (stirring, duh)until no longer translucent, maybe five minutes or so. Add black pepper. Add scallions and stir for about one minute. Add half the lime juice and stir about one minute. Add salt, if desired. Remove from heat. While preparing scallops, cook pasta in six quarts of salted boiling water until al dente - about seven to ten minutes. Drain thoroughly in colander, return to pot and coat pasta with remaining olive oil and the rest of the lime juice. The pasta and the scallops should be ready for each other at about the same time. Plate the Pasta, dividing appropriately among the 4-6 plates and top with the Scallops and company. Serve, allowing the consumers to top off their plates with the Romano cheese, if they want. Please note that nothing in this preparation is critical. Don't get wacky about timing. You can over-cook or under-cook and it will still work, as long as you don't seriously burn the garlic and ginger. You can leave out the nutmeg and/or the lime juice. It's all up to you. Just don't start a fire! And don't share this treat with any children. If you do, I will hunt you down and confiscate all your condiments. Enjoy the process and enjoy the meal.

GINGER CUCUMBER SALAD WITH SCALLOPS

Ginger Cucumber Salad With Scallops image

This 2004 recipe draws its inspiration from Thailand, where Mark Bittman first sampled it. The original was topped with shrimp, but his version uses scallops, "a slightly more unusual and elegant combination," but don't feel tied to just scallops: any grilled meat, poultry or fish work just as well here.

Provided by Mark Bittman

Categories     salads and dressings

Time 1h30m

Yield 4 servings

Number Of Ingredients 10

1 1/4 to 1 1/2 pounds cucumber, preferably thin Asian or English variety
1/2 cup rice vinegar or 1/2 cup white vinegar diluted with 1/4 cup water
2-inch piece of fresh ginger, peeled and minced or grated
2 tablespoons sugar
1 teaspoon salt
3 tablespoons grapeseed or other neutral oil
1 pound sea scallops (cut in half through their equators if very large) or shrimp, peeled
1 medium to large onion, sliced
1/2 teaspoon ground turmeric (optional)
2 tablespoons sesame seeds

Steps:

  • With Asian or English cucumbers (or small garden cucumbers), slice thinly, preferably with a mandoline. With thick cucumbers, peel, halve lengthwise, and scoop out seeds before slicing.
  • Mix vinegar, ginger, sugar and salt, and toss with cucumbers. Let stand for 30 to 60 minutes. (Refrigerate if marinating for more than an hour in warm weather.)
  • Just before serving, drain excess liquid. Put 2 tablespoons oil in a skillet, preferably nonstick, over medium-high heat. Wait a minute, then add scallops or shrimp. Sear for about 2 minutes to a side, then remove to a plate. Turn heat to medium, add remaining oil, onions and turmeric, if you are using it. Cook until onion softens, about 5 minutes.
  • Meanwhile, toast sesame seeds in a dry skillet over medium heat until browned and fragrant, 3 to 5 minutes. Stir onions into cucumbers, top with scallops or shrimp, garnish with sesame seeds, and serve.

SWEET CORN AND SCALLOP PASTA

Sweet Corn and Scallop Pasta image

Scallops have a mildly briny, delicately nutty flavor that pairs extremely well with sweet corn. The key to properly cooked scallops is making sure they're very dry, then allowing them to cook, undisturbed, to caramelize. Chopping the seared scallops into tender morsels helps to infuse the pasta with rich seafood flavor, while fresh corn adds texture to complement them. The emulsification of pasta water, butter and cheese creates a silky sauce for a satisfying pasta meal that still feels light.

Provided by Kay Chun

Categories     weeknight, pastas, main course

Time 20m

Yield 4 servings

Number Of Ingredients 11

Kosher salt and black pepper
1 pound large or medium shell pasta
3 tablespoons extra-virgin olive oil, plus more for drizzling
1 pound sea scallops, patted dry
2 cups fresh corn kernels (from 2 ears of corn)
1/4 cup thinly sliced scallions
2 garlic cloves, thinly sliced
2 tablespoons fresh lemon juice
2 tablespoons unsalted butter
1/2 cup finely grated Parmigiano-Reggiano
1/4 cup chopped basil, plus more for garnish

Steps:

  • Bring a large pot of salted water to a boil over high. Cook pasta until al dente. Reserve 1 cup of the pasta cooking water, then drain pasta.
  • Meanwhile, in a large skillet, heat 2 tablespoons of the oil over medium-high. Season scallops with salt and pepper and add to skillet in a single layer. Cook, undisturbed, until golden underneath, about 2 minutes. Flip scallops and cook until golden on second side, 2 minutes longer. Transfer to a cutting board to cool.
  • Add remaining 1 tablespoon oil, corn and scallions to the skillet; season with salt and pepper. Cook over medium, stirring occasionally, until lightly golden, about 5 minutes. Stir in garlic until fragrant, about 1 minute. Add lemon juice and stir to lift up any browned bits on bottom of pan.
  • While the corn cooks, chop the cooled scallops into 1/2-inch pieces. Return pasta, 1/2 cup of the pasta water, corn mixture, scallops and butter to the large pot and heat over medium. Cook, stirring vigorously, until most of the liquid is absorbed and the sauce thickens, about 2 minutes. Remove from heat, stir in cheese and basil, and season with salt and pepper. (Add more pasta water if a thinner sauce is desired.)
  • Divide pasta among bowls and garnish with more basil. Drizzle with olive oil, if desired.

GRILLED SCALLOPS WITH NORI, GINGER, AND LIME

Grilled Scallops with Nori, Ginger, and Lime image

To make scallops easier to grill, we thread them onto sets of two skewers, not one, so they don't spin around willy-nilly when you pick them up.

Provided by Andy Baraghani

Categories     Bon Appétit     Dinner     Seafood     Shellfish     Scallop     Green Onion/Scallion     Lime Juice     Mayonnaise     Soy Free     Dairy Free     Tree Nut Free     Peanut Free     Wheat/Gluten-Free

Yield 4 servings

Number Of Ingredients 13

1/3 cup mayonnaise
2 tsp. fresh lime juice
Kosher salt
1 toasted nori sheet
1 tsp. ground coriander
1/2 tsp. ground ginger
2 Tbsp. vegetable oil, plus more for grill
12 large dry sea scallops, side muscles removed, patted dry
1/2 lime
3 scallions, dark green parts only, very thinly sliced
1 tsp. Aleppo-style or other mild red pepper flakes or gochugaru (coarse Korean red pepper powder)
Special Equipment:
A spice mill; eight 8" wooden skewers, soaked at least 1 hour

Steps:

  • Prepare a grill for medium-high heat. Mix mayonnaise, lime juice, a pinch of salt, and 1 Tbsp. water in a small bowl; set lime mayo aside.
  • Finely grind nori in spice mill. Transfer half to a small bowl; set aside for serving. Transfer remaining nori to a large bowl and mix in coriander, ginger, and 2 Tbsp. oil. Add scallops and toss to coat.
  • Thread 3 scallops onto 2 skewers. (This will keep scallops in place and make them easy to turn. You can also use this method for shrimp and small peppers like shishito and Padrón.) Repeat with remaining scallops and skewers. Season both sides with salt.
  • Clean and oil grate, then immediately place scallops on the outside edge of the grill so that the skewers are hanging off the side. Grill, turning scallops with handles of skewers, until grill marks appear and scallops are just cooked through, about 3 minutes per side, depending on their size.
  • Spread lime mayo on a platter and place skewers with scallops on top. Finely grate zest from lime half over, then squeeze juice over. Top with scallions and sprinkle with Aleppo-style pepper and reserved nori.

SAVORY SEA SCALLOPS AND ANGEL HAIR PASTA

Savory Sea Scallops and Angel Hair Pasta image

This is a very simple, easy to prepare meal that you will most likely be asked to prepare again. The taste, if carefully prepared and not overcooked, is incredible. ENJOY!

Provided by JIM F.

Categories     Seafood     Shellfish     Scallops

Time 30m

Yield 6

Number Of Ingredients 10

1 (16 ounce) package angel hair pasta
¼ cup butter
2 cloves garlic, minced
2 pounds sea scallops, rinsed and patted dry
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons fresh lemon juice
salt and freshly ground black pepper to taste
½ cup heavy cream
1 tablespoon grated Parmesan cheese to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Melt butter in a skillet over medium heat. Stir in the garlic and cook just until fragrant and softened, about 1 minute. Slice any scallops over 3/4-inch thick in half so they'll cook evenly; stir scallops, basil, and parsley into the skillet. Cook and gently stir just until scallops feel slightly firm when pressed with a finger, 2 to 3 minutes. Scallops will become tough and chewy if overcooked. Stir in lemon juice, and season with salt and black pepper. Pour in cream if you like a thicker sauce. Bring the mixture just to a bare simmer.
  • Serve over hot angel hair pasta; sprinkle to taste with Parmesan cheese.
