10 slices peeled ginger
1 cup sugar
ice
4 ounces spiced rum, divided (recommended -- Sailor Jerry)
1 lime, quartered
1/4 cup apple juice, divided
2 cups wheat beer, divided (recommended -- Hoegaarden)
thinly sliced apple, for garnish
freshly grated ginger, for garnish

Steps:

  • In a small saucepan, combine the ginger, sugar and 1 cup water over medium-high heat. Let boil, and then reduce to medium until the liquid becomes syrupy, 15 to 20 minutes. Remove, strain and cool.
  • Using a martini shaker to mix each drink, add ice, 1 ounce rum, 1 tablespoon ginger syrup, the juice of 1 lime quarter and 1 tablespoon apple juice. Shake well, pour into a rock glass, top with 1/2 cup beer and garnish with a thin slice of apple and freshly grated ginger.

Steps:

  • For the grapefruit shandy: Add the beer and grapefruit soda to a pint glass.
  • Squeeze in the juice of 1/2 the lime, and float a lime wheel on top.
  • For the ginger shandy: Add the beer and ginger beer to a pint glass.
  • Squeeze in the juice of 1/3 the lemon, and float a lemon wheel on top.

1/2 cup sugar
One 2-inch piece ginger, peeled and coarsely grated
2 tablespoons fresh lemon juice
4 ounces chilled club soda
One 12-ounce bottle chilled India pale ale, such as Brooklyn East
2 lemon slices, for garnish

Steps:

  • Heat the sugar, ginger and 1/2 cup water in a small sauce pan over medium-high heat. Bring to a boil, and stir to melt the sugar. Remove from the heat and allow to steep and cool for 15 minutes, then strain (should make about 3/4 cup). Reserve the unused ginger syrup for another use.
  • Mix 1/4 cup of the syrup with the lemon juice in a large liquid measuring cup. Add the club soda. Divide between two chilled beer chalices. Pour half of the beer into each glass. Garnish each with a lemon slice and serve.

GINGER, PECAN AND RUM CHOCOLATE BROWNIES

2 1/2 cups plain (70 percent cocoa) chocolate, coarsely chopped
1 1/4 cups butter
5 free-range eggs
1 1/2 cups brown sugar or molasses sugar
1 to 2 tablespoons rum, optional
1 1/2 cups all-purpose flour, sifted
1 1/4 cups pecans, coarsely chopped
4 preserved stem ginger knobs, cut into small pieces (see Cook's Note)
Confectioners' sugar, sifted, for garnish, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a 12 by 8-inch brownie or cake pan 1 1/2 to 2-inches deep with parchment paper.
  • Melt the chocolate and butter together in a pan over simmering water, also known as a double boiler. Do not let the bottom of the pan touch the simmering water as the chocolate may scorch. Set aside the melted chocolate to cool slightly.
  • In a separate bowl, beat together the eggs and sugar, using either a whisk or an electric hand mixer, for around 5 minutes, or until the ingredients are nice and thick. Whisk in the chocolate and butter mixture, and then the rum, if using. Fold in the flour, and then the pecans, and preserved ginger. Stir just to incorporate the ingredients.
  • Pour the batter into the lined brownie pan. Bake the brownies for 20 to 25 minutes. They should be mostly cooked while still leaving a slightly gooey trace on a knife that you insert into the center of the brownie pan. Leave the brownies out to cool slightly, and then cut them into triangles or small squares. Decorate the brownies by dusting a little confectioners' sugar on top, if using.

This is my boss' favorite cake. Somehow, it makes even boring meetings more "palatable." I even gave the recipe to the vice president of one of my law firm's biggest clients! I like to make it in loaf pans rather than a tube pan because it still tastes great but is much easier to transport.

3 cups sifted all-purpose flour
2 teaspoons double-acting baking powder
1/2 teaspoon salt
1/2 pound (1 cup) butter
2 cups sugar
4 eggs
2/3 cup milk
1/3 cup ginger-flavored rum (see Note)
1-3 tablespoons (to your taste) finely grated fresh ginger (preferably from your rum jar)

Steps:

  • Adjust rack one-third up from bottom of oven. Preheat oven to 350 degrees. Butter a 9 x 3?-inch tube pan (or two loaf pans). Sift together flour, baking powder, and salt and set aside. Combine milk and rum and set aside. In large bowl of electric mixer cream the butter. Add the sugar and beat for 2 to 3 minutes. Beat in the eggs individually, scraping the bowl as necessary with a rubber spatula to keep mixture smooth. On lowest speed alternately add the dry ingredients in three additions and the milk/rum in two additions, scraping the bowl with the rubber spatula as necessary and beating only until smooth after each addition. Stir in grated ginger. Turn the batter into prepared pan(s). Level top by gently shaking pan back and forth.
  • Bake for about 65 minutes until a cake tester comes out dry. Let cake stand in the pan for about 3 minutes and then cover with a rack and invert. Remove pan, leaving the cake upside down. Place over a large piece of aluminum foil or wax paper and prepare glaze.
  • GLAZE: 1/3 cup rum, 1-2 tablespoons sugar
  • Stir the rum and sugar together and brush all over the hot cake until absorbed. If using loaf pans, turn the cakes over and brush the tops too.
  • Do not cut cake for at least several hours.
