Steps:
- Place strawberries, mint, lemon juice, 1 cup water, sugar, and ginger into an electric blender and blend well.
- Pour into a pitcher, add 5 cups water, and stir well. Refrigerate or serve immediately over crushed ice.

FRESH MINT AND GINGER LEMONADE
An easy Fresh Mint and Ginger Lemonade ercipe. This distinctive fat-free drink is a great change of pace from coffee or tea.

Steps:
- Combine chopped mint, ginger, and honey in medium bowl. Add boiling water. Let steep 30 minutes. Strain into 4-cup glass measuring cup, pressing on solids to extract liquid. Add lemon juice and enough cold water to measure 4 cups total. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Fill glasses with ice cubes. Add lemonade. Garnish with mint leaves and lemon slices and serve.

What a great twist on lemonade. Freeze some of this into ice cubes to use in the drinks, so it won't be diluted!

- In an 8-quart saucepan combine sugar, water and ginger root. Heat to boiling, stirring occasionally. Remove from heat.
- Stir in lemon juice. Cool 15 minutes. Remove ginger. Refrigerate lemonade at least 1 hour, or until chilled.
- Serve over ice, and garnish with lemon slices.

- In a cocktail shaker, muddle the mint and ginger syrup.
- Add Vodka, juice and ice. Shake.
- Sugar the rim of a highball glass, add ice and strain in mix.
- Garnish with lemon and mint.

- Wash and pat dry lemons and ginger. I do not peel ginger, it has a lot of flavors and nutrition. Just make sure to rinse thoroughly and wipe it with paper towels. Cut each lemon into half and juice using a lemon squeezer. Four large lemons will yield approximately ½ cup of lemon juice. Grate the ginger, 3 inch ginger should yield about 3 tablespoons of grated ginger.
- In a small jar add ginger, sugar, salt and lemon juice. Add 1 cup of water and stir well until the sugar dissolves.
- Take a large pitcher (ideally the one from which you will be serving) and place a strainer over it. Pour the lemon juice mixture and gently press with the back of a spatula to get all the juices out. Add 4 cups of chilled water, mix well. Serve over ice, top with mint leaves (optional) for a pop of color.

- Bring to a low simmer, and stir until the sugar has dissolved completely. Boil and simmer the syrup for an additional 1-2 minutes. Remove and place in a heatproof bowl. Allow to come temperature, or alternative cover and allow to infuse in the fridge for at least 30 to 45 minutes or overnight (for a more intensely flavored lemonade).
- Once chilled, strain simple syrup through a fine-mesh sieve. Discard the mint leaves and ginger pieces.
- Make Lemonade: In a large pitcher, combine the water, lemon juice, and a full batch of mint ginger simple syrup. Stir well. Add fresh mint and sliced lemon slices to the pitcher as desired. Chill.
