18 fresh strawberries, stemmed
1 bunch fresh mint leaves
2 cups freshly squeezed lemon juice
6 cups water, divided, or more as needed
¼ cup white sugar
2 tablespoons minced fresh ginger root, or more to taste

Steps:

  • Place strawberries, mint, lemon juice, 1 cup water, sugar, and ginger into an electric blender and blend well.
  • Pour into a pitcher, add 5 cups water, and stir well. Refrigerate or serve immediately over crushed ice.

An easy Fresh Mint and Ginger Lemonade ercipe. This distinctive fat-free drink is a great change of pace from coffee or tea.

1/2 cup (packed) chopped fresh mint leaves
1/3 cup chopped fresh ginger
1/3 cup honey
2 cups boiling water
1/3 cup fresh lemon juice
1 1/2 cups (about) cold water
Ice cubes
Fresh mint leaves
Lemon slices

Steps:

  • Combine chopped mint, ginger, and honey in medium bowl. Add boiling water. Let steep 30 minutes. Strain into 4-cup glass measuring cup, pressing on solids to extract liquid. Add lemon juice and enough cold water to measure 4 cups total. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Fill glasses with ice cubes. Add lemonade. Garnish with mint leaves and lemon slices and serve.

3 cups white sugar
4 quarts water
14 slices fresh ginger root
4 cups fresh lemon juice
2 lemons, sliced

Steps:

  • In an 8-quart saucepan combine sugar, water and ginger root. Heat to boiling, stirring occasionally. Remove from heat.
  • Stir in lemon juice. Cool 15 minutes. Remove ginger. Refrigerate lemonade at least 1 hour, or until chilled.
  • Serve over ice, and garnish with lemon slices.

2 ounces lemon-flavored vodka
1 1/2 ounces fresh lemon juice
1 1/2 ounces ginger syrup
5 leaves of fresh mint
1 cup water
1/2 lb gingerroot, peeled and 1/4-inch cubed
1 cup sugar

Steps:

  • In a cocktail shaker, muddle the mint and ginger syrup.
  • Add Vodka, juice and ice. Shake.
  • Sugar the rim of a highball glass, add ice and strain in mix.
  • Garnish with lemon and mint.
  • Syrup:.
  • Cook the ginger and water in med saucepan for 15 minutes then add sugar and stir until dissolved. Turn off heat and cool completely. Strain.

  • Note: If you like to 'tipple' (I know I do:-)), spike this with some vodka!!!

  • Wash and pat dry lemons and ginger. I do not peel ginger, it has a lot of flavors and nutrition. Just make sure to rinse thoroughly and wipe it with paper towels. Cut each lemon into half and juice using a lemon squeezer. Four large lemons will yield approximately ½ cup of lemon juice. Grate the ginger, 3 inch ginger should yield about 3 tablespoons of grated ginger.
  • In a small jar add ginger, sugar, salt and lemon juice. Add 1 cup of water and stir well until the sugar dissolves.
  • Take a large pitcher (ideally the one from which you will be serving) and place a strainer over it. Pour the lemon juice mixture and gently press with the back of a spatula to get all the juices out. Add 4 cups of chilled water, mix well. Serve over ice, top with mint leaves (optional) for a pop of color.

  • Bring to a low simmer, and stir until the sugar has dissolved completely. Boil and simmer the syrup for an additional 1-2 minutes. Remove and place in a heatproof bowl.
