- In a Dutch oven, bring 1 qt. of water to a boil. Add tea bags and mint. Cover and steep for 10 minutes. Strain; discard tea bags and mint. , In a large container, combine lemonade mix and remaining water. Stir in the tea and orange juice. Cool. Serve over ice.

HONEY CITRUS SOUTHERN ICED TEA
Steps:
- Bring 4 cups water to a simmer in a saucepan. Remove from the heat, add the tea bags and let steep for 8 minutes. Remove the tea bags and stir in the honey. Let cool.
- Add the sweetened tea to a pitcher along with 2 cups ice and another 4 cups water; stir. Add the sliced kumquats (if using), key limes and lemon. Pour into glasses over ice and garnish with mint.

CITRUS MINT ICED TEA

- Add water to kettle or pot and bring to a boil.
- Add tea, mint leaves, and citrus slices to a large teapot or measuring cup, and cover with boiling water.
- Let tea steep for 10 minutes (less if using green tea).
- Strain into a large pitcher, and add sugar or honey. Stir to dissolve.
- Serve over ice, and garnish with mint and citrus slices.
CITRUS ICED TEA
This recipe was posted in response for Russian Tea using "real" ingredients. I have not tried this yet but it sounds lovely. It came from the Iced Tea book by Fred Thompson. Since Russian tea has cinnamon in it you could add a cinnamon stick to the infusing process.

Steps:
- Combine the cloves with two cups of water in a small saucepan.
- Bring the mixture to a boil, remove from heat and let cloves steep for at least 45 minutes, preferably 1 hour.
- Bring two cups of the remaining water to a gentle boil in a small saucepan.
- Add the tea bags, cover and remove from heat.
- Let steep for 5 to 10 minutes.
- Remove tea bags with out squeezing them.
- Squeezing them will release more tannins into your tea and make it bitter.
- Strain the clove water into a 2 quart container.
- Add the steeped tea, orange juice, lemon juice, and sugar.
- Stir until the sugar dissolves.
- Add the remaining 4 cups of water and stir to combine.
- Let cool.
- then chill and serve over ice.

- Wash the mint leaves well, especially when freshly picked from an outdoor plant.
- Add the leaves and water to a saucepan and bring to a boil over medium-low heat, allowing it to boil for 2 minutes before turning off the heat.Alternatively, you can boil the water in a kettle and pour it directly over the leaves in your mug/teapot, leaving it to steep for several minutes. However, I don't find the flavor infuses as much this way.
- Allow it to steep for a further minute or two before transferring to a teapot or mug with a few slices of lemon and a drizzle of honey (best added after the tea cools slightly). Enjoy!The longer you steep the tea, the stronger it will become. I usually enjoy my first cup after the above. The second cup is then more robust, and the third is even more so (and usually requires a little extra drizzle of honey or can be diluted with some ice cubes/ water and turned into an iced version).

- Use a vegetable peeler to strip the top layer of zest, avoiding the white pith, from two of the oranges, the lemon and the lime. (this step is totally optional, using the zest as well as the juice adds extra citrus flavour but make sure you don't leave it to steep for too long or it can get bitter).
- Place the zest (if using), the teabags, mint and sugar in a large jug and pour over the boiling water. Give it a stir then leave to steep for 10-15 minutes. Remove the teabags, squeezing them out to extract as much flavour as you can. Leave the mixture to cool until it is lukewarm.
- Squeeze the juice from the oranges, lemon and lime and add it to the jug. Pour the tea through a fine mesh sieve into another jug, discarding the bits.
- Slice an orange, a lemon and a lime. Strip the leaves from a few sprigs of mint and add them to a large jug. Fill the jug with ice and add the tea then serve. Alternatively the tea can be stored in the fridge and you can simply pour a glass as and when is needed.

- Use enough tea bags. When foods are served cold, the flavours become dull. A stronger tea - such as Darjeeling, Jasmine or green teas - is necessary to have a well-flavoured tea served cold.
- Don't oversteep. If you prefer your tea stronger, use more tea bags rather than lengthening the steeping time. Allowing tea to overstep brings out the tannins in the tea and can make it bitter.
- Add sugar to hot water. If you sweeten your tea, add the sugar to the hot tea in order to dissolve the grains. If you prefer to sweeten your tea afterwards as per each persons taste, use a simple syrup rather than granulated sugar which will leave sugar grains in your glass.
- Cool before refrigerating. Putting hot tea into a cold fridge will make your tea cloudy. Allow your tea to cool before you refrigerate. If you do end up with cloudy tea, try adding a bit of boiling water to it – it will sometimes do the trick!
- Keep it real. Don't use artificial lemon juice. Only use real fresh squeezed lemon juice from fresh lemons for the very best flavour.
- Fresh is best. Iced tea taste best when it is freshly made. Make only what you will drink in two or three days. It's easy to make, so don't worry about having to mix up another batch!
