This is more of a technique than a recipe. If you have trouble finding fresh ginger, if it goes bad before you use it all or if you just fancy having a lovely ginger-flavoured sherry to cook with then this is for you. For this recipe you want a fino sherry, not any of the sweeter or aged kinds.

Yield 1 cup ginger in sherry

Number Of Ingredients 2

1 cup dry sherry
1 large gingerroot

Steps:

  • Cut the ginger into 2-3 pieces of a few inches each.
  • Use a spoon to scrape the peel off the ginger.
  • You can also do this as you pull out pieces of ginger to cook with but I find it easier to do beforehand.
  • Put the ginger and sherry in a non-metallic container with a tight cover.
  • Store in the fridge for up to three months.
  • You can use the sherry for cooking and top it up as required.

2 to 3 maraschino cherries plus 1 1/2 ounces (3 tablespoons) cherry juice
2 to 3 ounces (4 to 6 tablespoons) ginger beer
1 lime wedge

Steps:

  • Fill a Collins glass with ice, pour in the limeade and cherry juice and top with the ginger beer. Garnish with the maraschino cherries and a lime wedge.

Sherried Sweet Potatoes image

Sort of a pudding-like side dish. It takes about 5 medium sweet potatoes to equal 4 cups. If you use cooking sherry, omit the salt. If you want to get fancy, you can sprinkle the top with sliced almonds or finely chopped pecans during the last 5 minutes of baking. The preparation time does not include the time to initially cook the sweet potatoes--I do this in batches in the microwave, but have found the time to vary quite a bit depending on the microwave (my current one works much faster than my former one). I microwave them just until they're soft enough to mash.

1/2 cup sugar
1/4 cup butter
1/2 teaspoon salt
1/2 teaspoon ginger

  • Combine all ingredients and beat with a mixer until fluffy.
  • Turn into a buttered 1½ quart casserole and bake at 375° 45 minutes.
  • Serve hot.

Came up with this after searching for a similar sauce. Can be used on just about any white fish (cod, sole, orange roughy, flounder) or even salmon. Try to use fresh ginger as it will really make a difference. If you don't have fresh then ground ginger will suffice.

1/4 cup dry sherry
2 tablespoons soy sauce (regular or low sodium)
2 teaspoons toasted sesame oil
1 teaspoon fresh lime juice
1 tablespoon spring onion, finely chopped
1 teaspoon gingerroot, freshly grated
1 garlic clove, finely minced
1 teaspoon hot chili pepper, finely chopped (optional)
2 (6 -8 ounce) fish fillets

Steps:

  • In a small bowl, mix together the first seven ingredients (sherry through garlic).
  • Add the chillies, if using.
  • NOTE: I made the sauce early in the day to allow the flavors to mix, but it is not necessary to do so.
  • Preheat the oven to 205C/400°F.
  • Place the fish fillets in a baking dish.
  • Drizzle the marinade over the fish.
  • Bake for 10-12 minutes or until the fish flakes easily with a fork.
  • Plate the fish and spoon the sauce over it.
  • Serve with rice.
